Kohlsuppe: Slow Cooker German Cabbage Soup image

Perfect fall or winter soup to warm up with that is made with smoked sausage, green cabbage, leeks and carrots all slow cooked together for absolute perfection.

Provided by Jennifer

Categories     Appetizer     Entree     Main Course     Soup

Time 6h30m

Number Of Ingredients 10

1 package smoked sausage (diced...[$4.00])
4 tbsp butter (...[$0.50])
3 large leeks (sliced...[$1.50])
3 large carrots (sliced...[$0.15])
1 small cabbage (chopped...[$0.56])
2 cloves garlic (minced...[$0.10])
4 medium potatoes (peeled & diced...[$0.78])
8 cups chicken or vegetable broth (...[$2.80])
4 cups water (...[$0])
2 bay leaves (...[$0.36])

Steps:

  • Cut up all your ingredients. Put leeks into a bowl of cold water and set aside for 10 minutes. This will clean all the dirt off the layers.
  • Sauté leeks and carrots in a large skillet with butter until fragrant and soft or about 10-15 minutes.
  • Add sausage, sautéed veggies, and rest of the ingredients to slow cooker.
  • Cook for about 6 hours on low. Serve hot, salt to your tastes, and enjoy.

KOHLSUPPE - CABBAGE SOUP

Kohlsuppe - Cabbage Soup image

This afternoon I put some broth and cabbage into the crockpot, and when my husband came home he said, "That smells good, what is it?" I chuckled. "Just cabbage in broth. That's it." He hmmm'ed. "You need to come up with some German name for it, instead. Cabbage in broth just won't do." So I looked up what it would be in German, found some similar recipes online, fiddled with the contents of the crockpot a bit, and here's what we had for dinner! :) Really simple, and very tasty! This is a Pantry Challenge recipe, using ingredients that were already on hand at home.

Provided by Julesong

Categories     One Dish Meal

Time 3h15m

Yield 6-8 serving(s)

Number Of Ingredients 7

1 small cabbage, chopped
6 cups chicken broth
4 slices bacon
1/2 cup minced onion
1 1/2 cups diced potatoes (frozen are okay, as are O'Brien potatoes)
salt and pepper, to taste
sour cream, for garnish

Steps:

  • Put the chopped cabbage and the broth in the crockpot, on high; simmer for 1 1/2 hours.
  • In a sauté pan, cook the bacon slices until crisp; remove, chop roughly, and set aside.
  • Sauté the onion in the bacon drippings until soft.
  • Add the chopped bacon, onion, potato, and salt and pepper to the crockpot.
  • Cook on high for an additional 1 to 1 1/2 hours hours, until the cabbage reaches the texture you prefer.
  • Serve with a dollop of sour cream.
  • Notes: would also be good with some dill weed or caraway added, or even kielbasa slices, if you like; I also added a 1 once cube of concentrated frozen duck stock, but as most folks don't have it in their freezer I didn't include it in the ingredient list; you could simmer this in a heavy pot on the stove for an hour instead of the crockpot, too.
