OATMEAL DRIED FRUIT COOKIES
These are the best oatmeal cookies I've ever had! Very buttery and very hearty. Any dried fruit works well such as cherries, raisins, cranberries, blueberries, or chopped apricots. For a really decadent treat, use chocolate chips and nuts instead of fruit.

- Preheat oven to 375 degrees F (190 degrees C)
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, then stir in the vanilla. Sift together the flour, baking soda, salt, cinnamon and nutmeg, gradually stir into the creamed mixture. Finally, stir in the quick oats and dried fruit. Drop by rounded spoonfuls onto the unprepared cookie sheet.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

OATMEAL GRANOLA COOKIES
I was in the supermarket one day shopping for a muffin recipe from the Barefoot Contessa. I had picked up french vanilla granola in hopes of using it in the recipe, but when I got home and tasted it the first thing I thought of was oatmeal cookies. So, the kids and I came up with this one. We get around 3 dozen or so from this recipe.

Steps:
- Preheat oven to 350. In a bowl mix flour, salt, baking soda, baking powder and spices till well blended. Set aside.
- In another bowl, beat butter, shortening and sugars until light and creamy. Then add the eggs one at a time until they are blended. Add the vanilla beat until well blended, about a minute.
- Add the flour mixture to the butter and sugar mixture. When dough is well blended, fold in fruit, oats and granola. Break your granola into manageable pieces if needed.
- Drop by rounded teaspoon onto pan. We lined our pans with wax paper but whatever you choose to do to your pans is up to you. Bake for 10 - 12 minutes. Oven temps vary, so keep an eye on your cookies !

I have not tried this recipe. I'm posting this recipe for safe keeping. I got this recipe from Susan Powter Food cookbook. Double the recipe and freeze for later.

Steps:
- Preheat oven to 350.
- Mash bananas, leaving some chunks. Add egg whites and dates, and mix to make sure dates are separated and well coated.
- Mix in rolled oats and raisins. Set aside for 10 minutes. Wipe a cookie sheet with a little oil. Place teaspoonful of dough on cookie sheet, and flatten with the back of a spoon.
- Bake for 20-25 minutes, until the edges are lightly browned. Cool and remove from pan. Store well covered in refrigerator or freezer.

- In a large bowl, combine the oats, almonds, sunflower kernels and flax. In a small saucepan, combine the brown sugar, maple syrup, honey, oil, salt and cinnamon. Cook and stir over medium heat for 2-3 minutes or until brown sugar is dissolved and mixture is heated through. Remove from the heat; stir in vanilla. - Preheat oven to 350°F; in a medium bowl, mix together flour, baking soda and salt; set aside.
- With an electric mixer, cream butter and sugars until light and fluffy. Beat in eggs and vanilla, scraping down sides of bowl as needed. Add flour mixture; beat just until combined. Stir in oats,raisins and coconut, beat just until combined.

- Heat oven to 180C/160C fan/gas 4. Toss the jumbo oats with the cinnamon, mixed nuts and a pinch of salt in an oven tray. Stir through the melted unsalted butter or coconut oil and the maple syrup. Put in the oven for 35-40 mins or until golden brown, stirring halfway. Allow to cool down completely, then stir through the mixed dried fruit before storing (see tip, below). Serve with milk, yogurt or sprinkled on porridge.
