1 cup sugar
1 cup medium cornmeal
2 tablespoons baking powder
1 1/2 teaspoons salt
1 1/2 cups whole milk
1/2 pound unsalted butter, melted and cooled
2 extra-large eggs

Steps:

  • Preheat the oven to 350 degrees F.
  • Line 12 muffin cups with paper liners. In the bowl of an electric mixer fitted with a paddle attachment, mix the flour, sugar, cornmeal, baking powder, and salt. In a separate bowl, combine the milk, melted butter, and eggs. With the mixer on the lowest speed, pour the wet ingredients into the dry ones and stir until they are just blended. Spoon the batter into the paper liners, filling each one to the top. Bake for 30 minutes, until the tops are crisp and a toothpick comes out clean. Cool slightly and remove from the pan.

2/3 cup stone ground corn meal
1 2/3 cups all-purpose flour
1 1/2 tbsps. baking powder
1/4 tsp. kosher salt
1/2 cup granulated sugar
1/4 cup butter ( softened )
1/4 cup honey

1 cup whole milk
2 tbsps. vegetable oil

Steps:

  • Preheat your oven to 350 degrees Fahrenheit. Make sure your oven rack is in the center position.
  • Prepare your jumbo muffin tin with 6 jumbo liners. I always prefer to use jumbo cupcake liners with my muffins to prevent sticking.
  • Whisk together the flour, corn meal, baking powder, and salt.
  • In your medium bow, add softened butter (which you can soften in the microwave about 10-15 seconds medium power) and sugar. Add in the milk, oil, honey, and one egg at a time. You can use a hand mixer, or wooden spoon to combine.
  • Spoon in the wet batter into the dry batter, and combine until light and fluffy. Using a large ice cream scoop, fill each muffin tin 3/4 way with batter.
  • Bake for 18-20 minutes. A toothpick inserted into the center of the muffin should come out clean.

1 1/2 cups all-purpose flour
1/2 cup yellow cornmeal
1 tablespoon baking powder
1 teaspoon salt
1/2 cup unsalted butter, at room temperature
1/4 cup vegetable shortening
1/2 cup sugar
2 extra large eggs
1 tablespoon vanilla extract
1 cup whole milk

Steps:

  • Preheat oven to 400°F.
  • Line 6 jumbo or 12 regular muffin tins with paper liners or spay them with Pam.
  • Mix flour, cornmeal, baking powder, and salt together in medium-sized bowl and set aside.
  • Cream the butter and shortening in a large bowl (I use Kitchen Aid) with an electric mixer on high for 2 minutes.
  • Then, with mixer still running, gradually add sugar, then eggs, one at a time.
  • Continue beating until the batter is creamed and light yellow colored (may look slightly curdled) and add the vanilla.
  • Reduce mixer speed to low.
  • Beat in half of the flour mixture, then half of the milk, beating about 1 minutes after adding each.
  • Repeat, beating in the rest of the flour mixture, then the rest of the milk.
  • Beat the batter until well blended, about 1 minute more.
  • Spoon into muffin tins, almost up to the top.
  • Bake at 400°F for first 10 minutes.
  • Reduce temperature to 375°F for about 15 minutes or until golden and toothpick comes out clean.
  • Makes one dozen regular muffins or 6 jumbo.
