TOMATO BASIL BRUSCHETTA (JULIE AND JULIA STYLE!)

1/2 baguette, sliced into 1/4 inch pieces
1 garlic clove
2 cups tomatoes, diced (I used a mixture of heirloom tomatoes, cherry tomatoes, and "on the vine" tomatoes - use your favorite!)
1 tablespoon basil, roughly chopped
1 tablespoon Parmesan, shaved and roughly chopped
1/4 teaspoon balsamic vinegar
1/4 cup extra virgin olive oil
Pinch of salt, fresh ground black pepper to taste

Steps:

  • In a medium bowl, combine tomatoes, basil, Parmesan, balsamic vinegar, 1 teaspoon of olive oil, pinch of salt, and ground black pepper to taste. Let sit about 10 minutes to let flavors marinate while toasting the bread.
  • Brush both sides of baguette slices with the remaining olive oil and rub with garlic clove.
  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the slices in the skillet until browned, gently pressing occasionally to help toast, about 3-4 minutes per side.
  • Sprinkle toasted slices with a pinch of salt. Evenly spoon tomato topping on each slice. Sprinkle with a little fresh ground black pepper. Serve immediately.

A simple, fresh and delicious recipe for tomato and basil bruschetta from the Movie Julie and Julia.

1 pound grape tomatoes (quartered)
1/3 cup fresh basil (chopped)
1/4 cup extra virgin olive oil
1 loaf French bread slices (sliced 1/2 inch thick)
2 garlic cloves (peeled and sliced)

Steps:

  • Cut the cherry or grape tomatoes in half and then cut each half in half. This will quarter the tomatoes. Chop the fresh basil. Mix together in a bowl, add 1/4 cup of olive oil and let rest 30 minutes.
  • 10 minutes before serving, add salt and pepper to taste. If you add the salt too early, it will draw too much liquid out of the tomatoes.
  • Heat a skillet over medium high heat. When the pan is hot, add two tablespoons of olive oil. When the oil is hot, add the baguette slices and fry the bread util golden brown on both sides. You'll need to cook the bread in batches.
  • Drain on a paper towel.
  • Rub both sides with a garlic clove.
  • Top with the tomato mixture.
  • Sprinkle the parmesan over the bruschetta and serve while the bread is still warm.

If you've watched the movie Julie & Julia you no doubt noticed the bruschetta love scene. I'm not sure anything in a movie has ever looked so delicious. This is that recipe.

3 medium tomatoes (heirloom and a variety of colours if you can get them.)
3 large stems basil
1/2 cup olive oil (good quality)
salt
4 slices bread (hearty, crusty bread is best.)

Steps:

  • Dice tomatoes.Shred basil leaves.Mix tomatoes and basil in bowl with 1/4 of olive oil, reserving other 1/4 cup for frying.Let this mixture sit for 30 minutes.When the 30 minutes is up, add a generous sprinkling of salt to the mixture and let it sit for another 10 minutes.Now is when you can heat up 1/4 cup of olive oil (your goal is to have 3mm of oil in the pan) over medium/low heat.Once hot, fry your slices of bread until golden.Remove bread from pan and top with tomato mixture.

1 lb ripe grape tomatoes, sliced
1/3 cup fresh basil, chopped
1 loaf crusty French bread, sliced 3/4 inch thick (or italian)
2 garlic cloves, peeled and sliced in half
1/4-1/3 cup extra virgin olive oil
4 ounces parmesan cheese, shaved

Steps:

  • Mix tomatoes and basil together and season with salt and pepper.
  • Set aside.
  • Fry Bread: Heat 2 tablespoons olive oil in frying pan and fry bread until golden brown on both side.
  • Remove and drain on paper towel.
  • Rub one side with garlic clove.
  • OR.
  • Toast Bread In Oven:.
  • Place bread on baking sheet and broil until golden brown on both sides; 12-15 minutes.
  • Rub one side with garlic clove and brush with olive oil.
  • Drain the tomato-basil mixture of excess liquid and spoon on to each slice of bread.
  • Top with parmesan cheese and serve immediately.
