JODIE'S SOUTH WESTERN MEATLOAF
Meatloaf has been a family favorite around my house since I can remember. If we ever have any left over then we slice it and fry it and make sandwiches out of it...It goes great with baked potato and salad....

- Preheat oven to 400* You will need a cake pan 9" In a large bowl, place ground sirloin, eggs, oatmeal, both salsa's, salt, sage, garlic, and milk..
- Mix thoroughly with spoon or hand (prefer hand) Make a loaf and place in to cake pan...Pour fire roasted tomatoes over the top and place in the oven.
- Being it is 2 pounds of beef baking time is 1 hour and 15 minutes Depending on your altitude. Stick steak knife in center must come out clean is done...

- Preheat an oven to 350 degrees F (175 degrees C).
- Mix the ground beef, eggs, onion, bread crumbs, salsa, ketchup, barbeque sauce, salt, pepper, and celery salt together in a bowl; transfer to a loaf pan.

- Preheat the oven to 375 degrees F. Add the panko, milk, cilantro, ketchup, barbecue sauce, Dijon mustard, chili powder, cumin, cayenne, garlic, green onions, eggs, Spanish onion and red bell pepper to a large bowl and mix until thoroughly combined. Add the beef and mix until incorporated, being careful not to overwork. Put the meat mixture in a loaf pan set on a rimmed baking sheet and bake until it registers 165 degrees F on an instant-read thermometer, 60 to 75 minutes. Let stand 10 to 15 minutes before slicing. Serve with smashed red potatoes, green onions and sour cream.
JO'S BACON-WRAPPED MEATLOAF

- Preheat oven to 375 degrees F.
- Combine panko, milk, pecorino, Worcestershire sauce, pepper, salt, eggs, pasilla chiles and Italian parsley in a large mixing bowl and mix well. Add the ground beef and hand-mix until well blended. Set aside.
- To make the glaze, combine ketchup, brown sugar, dry mustard and hot sauce in a small mixing bowl. Stir well using a rubber spatula. Set aside.
- Lay bacon down slightly overlapping side-by-side in a half-sheet pan. Spray a 9-by-4-inch loaf pan that's 6 inches high with nonstick spray. Place the beef mixture in the pan and pat down to form a meatloaf. Turn pan over and tap out the meatloaf into your hand. Place the meatloaf over the center of the bacon slices. Working with one slice at a time, fold ends of each bacon slice over the top of the meatloaf. Turn loaf over and place on a rack set in a baking sheet to allow the fat to drain while baking.
- Using the rubber spatula, spread half the glaze over the meatloaf. Bake for 1 hour, then apply remaining glaze. Continue to bake until the internal temperature reaches 165 degrees F, about another 20 minutes.
AUNT LIBBY'S SOUTHERN MEATLOAF
This my 86-year-old Aunt Libby's home-made meatloaf recipe. I finally had her write it down for me last year. You can be sure no one will tell you this meatloaf is dry!

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x5-inch loaf pan.
- Mix beef, onion, 1 cup ketchup, bread crumbs, eggs, salt, and pepper together in a bowl. Press beef mixture into a loaf in the prepared loaf pan.
- Mix 1 1/2 cups ketchup, water, vinegar, brown sugar, mustard, and Worcestershire sauce together in a saucepan; cook and stir over medium heat until sauce is smooth and warm, about 10 minutes. Pour 1/3 the sauce over meatloaf.
- Bake in the preheated oven, basting every 25 minutes with more sauce, until meatloaf is cooked through, 1 to 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Cool in the pan for 10 minutes before slicing.

SOUTHWEST MEATLOAF
This is a unique meatloaf recipe. Very moist. My friend gave me this recipe and I know she got it out of a magazine but neither one of us know which one! It called for more cilantro and onions and I did cut these back. This is not a pretty meatloaf....just a great tasting one!

- Toss the sweet potato, bell pepper, jalapeño pepper, garlic, and onion with olive oil (2 tablespoons) and salt and pepper to taste on a rimmed baking sheet. Roast at 425 degrees for 30 minutes, or until vegetables are browned and sweet potatoes are fully cooked. Allow to cool for at least 10 minutes.

For best results, mix with your hands until fully combined. The mixture should hold together on its own- if it does not, it may need more cornmeal to absorb some of the liquid.
