SAVORY PARMESAN POPCORN

Number Of Ingredients 9

1/2 cup grated Parmesan
1/2 teaspoon garlic salt
1/2 teaspoon paprika
1/2 teaspoon freshly ground black pepper
1/2 teaspoon fine sea salt
1/4 teaspoon ground turmeric
1/2 cup popping corn
3 tablespoons unsalted butter, melted
1 tablespoon olive oil

Steps:

  • Combine the Parmesan, garlic salt, paprika, pepper, salt and turmeric in a small bowl. Combine the popping corn and melted butter in a large pot. Cover and cook over medium heat, shaking the pot with increasing frequency as the popping increases. Continue until the popping is reduced to a couple of seconds between pops, then remove from the heat and transfer the popcorn to a large brown bag. Drizzle the popcorn with the olive oil and sprinkle about 3 tablespoons of the seasoning into the bag. Shake up the popcorn. Sprinkle with additional seasoning to taste and serve warm.

This recipe came from Alan (my best friend in college). His parents are from Louisiana and this was his mom's recipe. We used to have poker parties all the time and this was one of our favorite things to serve. Popcorn is cheap, so we made a lot of different flavored popcorns.

3 quarts popped popcorn
1/4 cup butter, melted
1 teaspoon chili powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1/8 teaspoon lemon pepper

Steps:

  • In small bowl, place 1 quart hot popped corn; set aside.
  • In large bowl, pour butter over remaining popcorn.
  • Combine remaining ingredients. Sprinkle over buttered popped corn, tossing gently to coat.
  • Spread on 15x10-inch baking; sheet and bake at 300°F for 3 minutes, or until desired crispness.
  • Mix in reserved popcorn. Serve immediately or store in airtight container.

1 -2 teaspoon turmeric
4 teaspoons salted butter
1/2 cup yellow popcorn, Kroger brand

Steps:

  • Add salted butter and turmeric spice to small pan with pour spout.
  • Add yellow popcorn kernels to air popper.
  • Turn on burner with butter pan to medium (5) heat.
  • Turn on air popper immediately after turning on stove burner.
  • When butter is mostly melted, turn off burner. Popcorn should finish popping near the same time as well.
  • Drizzle butter over popcorn, toss and enjoy!

  • Stir together 1/4 tsp each of salt, ground turmeric, garlic powder, and dried dill in a small bowl. Set aside.
  • Add coconut oil and about 2-3 popcorn kernels to a large saucepan (that has a lid) set over medium-high heat. Keep a close eye as the coconut oil melts and watch to see when the first kernel pops.
  • Once the first kernel pops, add the spice mix, immediately add the rest of the kernels, and place the lid on the saucepan.
  • Put the lid on the saucepan, put on oven mitts, and grab the saucepan by the side handles. Shake the saucepan side to side on the stovetop (you'll hear lots of popping), until the popping begins to slow down to about 2-3 seconds between pops. Remove the saucepan from the heat and crack the lid so the steam can escape.
