FRUITY JELLO-COOL WHIP
My mom makes this every summer! It's low fat and very refreshing. You can make so many different flavors, people never get sick of it. It is one of the most requested desserts that I make. Combination examples:. Orange jello & Mandarine oranges. Cherry jello & Maracino cherries. Strawberry jello & Chopped strawberries. Blueberry jello & Blueberries. (You get the picture! Endless possibilities.).

Steps:
- Add softened cream cheese to a large bowl and beat until fluffy. Pour in heavy cream and continuing beating until stiff peaks form. Set aside.
- To a 2 cup measuring cup or small bowl, add the contents of one flavored jello packet. Pour in cold water and let bloom for 1-2 minutes. Stir in boiling water and mix until dissolved.
- Slowly stir in liquid jello mixture into the whipped cream. Don't add in too fast as you want to keep the airiness of the whipped cream. Once added, mix an electric mixer until fluffy. Scoop or pipe into a serving dish if desired. Refrigerate for 3-4 hours or enjoy right away.

JELLO WHIP FROSTING
I'm a big fan of using Jello Instant Pudding and Cool Whip as a frosting for cupcakes, so I assumed there must be a typically-used fruity Instant Jello equivalent. Long story short, there was not. I put this together using some of the bits and pieces of recipes I could find, and some spur-of-the-moment thinking when I thought it was going to go all wrong. My first attempt was using raspberry flavour on chocolate cupcakes, but experiment with different flavours and see what you like best!
