1-1/4 cups fine graham cracker crumbs
1/4 cup sugar
6 tablespoons butter or margarine, melted
1-1/2 cups cream cheese, softened (12 ounces)
2 cups cold milk
2 tablespoons sugar
1/2 teaspoon vanilla
1 package (3-3/4 oz.) Jell-O Lemon or Vanilla Instant Pudding & Pie Filling

Steps:

  • Combine crumbs, 1/4 cup sugar, and butter; press firmly on bottom and sides of 8-inch square or 9-inch pie pan. Chill while preparing filling.
  • Beat cream cheese until very soft. Blend in 1/2 cup milk. Add remaining milk, 2 tablespoons sugar, the vanilla, and pie filling mix; beat as directed on package for pie.
  • Pour into crust. Chill until firm at least 2 hours; garnish with dollops of prepared whipped topping and strawberries, or 1 cup cherry or pineapple pie filling.
  • For ease in serving, dip pie pan in warm water for a few seconds; cut and serve.

5 Tbsp. margarine or butter, melted
2 Tbsp. sugar
1-1/2 cups cold milk

Steps:

  • Mix Crust Mix, margarine and sugar until blended. Spoon into 12 paper-lined muffin cups; press crust mixture firmly onto bottoms of cups.
  • Beat milk and Filling Mix with mixer on low speed just until blended, then beat on medium speed 3 min. (Filling will be thick.) Spoon into prepared cups.
  • Refrigerate 1 hour.

1 pkg. (3.9 oz.) JELL-O Chocolate Flavor Instant Pudding Pudding
1-1/4 cups cold milk
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1/4 cup sugar
1-1/2 cups thawed COOL WHIP Whipped Topping, divided
1 chocolate cookie crumb crust (6 oz.)
1 oz. BAKER'S Semi-Sweet Chocolate

Steps:

  • Beat pudding mix and milk in medium bowl with whisk 2 min.
  • Beat cream cheese and sugar in large bowl with mixer until blended. Gradually add pudding, beating well after each addition. Gently stir in 1 cup COOL WHIP. Spoon into crust.
  • Refrigerate 4 hours.
  • Meanwhile, melt semi-sweet chocolate as directed on package, then brush a 2-inch wide strip onto a piece of parchment paper. Refrigerate until firm.
  • Break chocolate into pieces. Top cheesecake with remaining COOL WHIP and chocolate pieces just before serving.

I was inspired by other recipes and decided to come up with a low-carb, lighter cheesecake which would be good for someone on Atkins Phase 1. I first made this using orange-flavored sugar-free Jell-O.

1 (1/3 ounce) package sugar-free jello
8 ounces cream cheese
2 (1 g) packets sugar substitute, preferably Splenda
2 eggs, beaten (Thanks Suzy for the suggestion) or 1/2 cup Egg Beaters egg substitute (Thanks Suzy for the suggestion)
2 tablespoons half-and-half
1/2 cup boiling water
2 tablespoons sugar-free syrup, any flavor

Steps:

  • Dissolve Jell-O in boiling water and set aside until cooled.
  • Mix together cream cream and Splenda, until smooth.
  • Add eggs, half-and-half and syrup. Blend well.
  • Slowly stir in Jell-O water mixture.
  • Pour mixture into 8x8 pan, cover with plastic, then place in refrigerator at least 4 hours or overnight.

I got this recipe in 1980 when I worked at University of Michigan hospital. The ward secretary on our unit always brought this to our potluck lunches. Everyone loves it because of its great cheesecake flavor without the heaviness of regular cheesecake. Easy to make, easier to eat!

2 cups graham cracker crumbs
2 tablespoons sugar
6 tablespoons butter, melted
6 ounces lemon Jell-O gelatin
2 cups boiling water
8 ounces cream cheese
12 ounces evaporated milk, chilled

Steps:

  • Mix Graham cracker crumbs, 1 tablespoon sugar, and melted butter or margarine.
  • Press Graham cracker crumb mixture into the bottom of a 9"x13" pan. (You do not need to grease the pan.).
  • Mix lemon Jello with 2 cups boiling water until Jello is dissolved.
  • Add cream cheese to Jello mixture, breaking cheese up with a potato masher or the beaters of an electric mixer.
  • In a chilled bowl (glass or metal work best) whip with electric mixer chilled evaporated milk with 1 tablespoon sugar until small peaks form. (Getting peaks to form is much easier if the bowl and milk are cold.).
  • Add Jello mixture to evaporated milk and continue to beat until well blended.
  • Pour over Graham cracker crust.
  • Chill until firm.

I decided to build upon my recipe for No Bake Cheesecake that I recently posted here. Thought I use lemon and coconut flavors, you can put together your own flavor combinations.

1/2 cup boiling water
1 (1/3 ounce) packet sugar-free lemon gelatin
8 ounces cream cheese, softened
1 (1 g) packet sugar substitute, preferrably Splenda
3 eggs
3/4 cup heavy cream
1/2 tablespoon sugar-free coconut syrup
1 teaspoon pure vanilla extract

Steps:

  • Mix and dissolve gelatin in the boiling water, set aside to cool.
  • In a mixer, beat the cream cheese and sugar substitute until smooth.
  • Beat in the eggs, then stir in cream.
  • Place mixture in saucepan to cook, then simmer for 5 minutes.
  • Remove from heat and pour into a medium bowl.
  • Stir in Jell-O mixture.
  • Pour mixture into either a 8x8 brownie pan or a 9" pie plate.
  • Cover with plastic and place in refrigerator to chill for at least 4 hours or overnight.
