YAKI UDON WITH SHRIMP

A quick, delicious Japanese noodles stir fry with shrimp and veggies.

Number Of Ingredients 17

1 pack (200g) udon noodles (preferably vacuum-packed)
2 tbsp neutral oil
8-10 shrimp (approx 100g)
1 garlic (minced)
1 yellow onion (sliced)
8 white mushrooms (sliced, approx 120g)
1 carrot (cut matchstick-style)
1 spring onion (green & white separately chopped)
1 tbsp regular soy sauce
pinch salt and pepper
1 tbsp oyster sauce
1 tsp dark soy sauce (NOT regular one)
1 tsp rice vinegar
1 tsp brown sugar
1/3 tsp freshly crushed black pepper
1 tbsp toasted sesame oil
pinch salt

Steps:

  • Boil the udon noodles according to the package instructions. Drain and rinse with cold water. Drizzle some oil and set aside.
  • Heat 1 tbsp oil in a pan, toast the minced garlic for 1 minute then add the mushrooms. On high heat stir around until cooked. Then add the onions, white part of spring onions and carrots. Stir for 2-3 minutes. Sprinkle a pinch of salt and pepper and take the veggies out.
  • In the same pan add additional 2 tbsp oil and fry the shrimp. Add soy sauce and pinch of salt. Cook till the shrimp are no longer pink.
  • Then add the udon noodles. Fry on high heat, stirring continuously so the noodles slightly crisp up evenly.
  • Pour the sauce. Stir.
  • Then toss in the veggies.
  • Turn off heat and sprinkle spring onion.
  • Take out in a plate and enjoy!

Yaki Udon (焼きうどん) is a Japanese undon noodles stir-fried with your choice of protein and vegetables. Your protein can be thinly sliced meat or any seafood suitable for stir-frying. This is a very quick and simple udon recipe and so delicious.The recipe is written to make either Pork Yaki Udon or Prawn Yaki Udon. The only differences are the choice of protein, i.e. pork slices or prawns, and the way the prawns are stir-fried with other ingredients.Don't forget to see the section 'MEAL IDEAS' below the recipe card! It gives you a list of dishes that I have already posted and this recipe that can make up a complete meal. I hope it is of help to you.

2 servings udon noodles ((360g/0.8lb, note 1))
200g/7oz pork (, thinly sliced into bite size pieces (note 2))
200g/7oz fresh prawns (small to medium size) (, peeled and deveined)
100g/3.5oz cabbage (, cut into large bite size pieces)
60g/2.1oz carrot (, thinly sliced diagonally (note 3))
25g/0.9oz each shiitake and king oyster mushrooms (, thinly sliced (note 4))
2 stalks shallots/scallions (, cut to 5cm/2" long)
1 tbsp oil
½ tbsp sesame oil
2.5 tbsp soy sauce
2.5 tbsp cooking sake
1 tsp mirin
1 tbsp sesame oil
6g/0.2oz bonito flakes ((note 5))
1 tbsp benishōga (pickled red ginger) ((optional))

Steps:

  • Add all the Flavouring Sauce ingredients into a measuring cup or a small bowl and mix well. Set aside until required.
  • Transfer the udon noodles to a sieve and untangle noodles quickly under running water. Drain.
  • Heat oil and sesame oil in a wok or a large frying pan over medium high heat.
  • If making Pork Yaki Udon, add the pork slices to the frying pan and sauté until the pork is almost cooked through (less than a minute if very thin, about 1-2 minutes if thicker).
  • If making Prawn Yaki Udon, add the prawns to the frying pan and sauté until the prawns curl up to form a 'C' shape and the surface starts browning a little bit (about a minute). Put the prawns aside on a plate. Add a bit more ooil to the frying pan if too dry.
  • Add the carrots to the frying pan and stir-fry for 30 seconds, then add the cabbage and the mushrooms. Stir-fry for about 1 minute until the cabbage is half cooked, then add the shallots.
  • After mixing the shallots with the meat and vegetables, add the noodles and prawns, including the juice (if making Prawn Yaki Udon). Stir-fry, mixing all the ingredients well until some noodles start browning a little bit.
  • Add the Flavouring Sauce mixture and mix quickly to ensure that all the noodles are coated with the sauce and the sauce has almost evaporated. Turn the heat off.
  • Transfer the noodles onto serving plates, pile it into a mound, and topped with bonito flakes. Put the benishōga on the top or the side of the noodles, if using.
  • Serve immediately.

3 cups hot cooked udon noodles (Japanese wheat noodles)
12 ounces flank steaks, thinly sliced (optional)
cornstarch
2 tablespoons vegetable oil, divided
4 tablespoons teriyaki sauce
1/2 cup julienne-cut carrot (2 inch)
1 cup mushroom, sliced
2 cups broccoli florets
1 tablespoon minced peeled fresh ginger
2 large minced garlic cloves
1 teaspoon red chili pepper flakes
2 -3 drops toasted sesame oil
2 tablespoons rice wine vinegar
1 cup asian mixed sprouts
1 tablespoon black sesame seed
1 cup freshly chopped cilantro leaf

Steps:

  • In a mixing bowl, add the beef strips and dust with a little cornstarch.
  • Heat about 1 tablespoon vegetable oil in a large nonstick skillet or wok over medium-high heat. Flash fry the beef strips and remove quickly.
  • To the wok, add the carrots, mushrooms and then broccoli. Stir fry 2-3 minutes and then remove.
  • Add a little more oil, then saute the ginger and garlic. After a minute or so, add the well drained noodles and let caramelize.
  • Add the red chili flakes. Add the sesame oil, teriyaki sauce and rice wine vinegar. Add all of the other ingredients and toss to coat well. Serve.

1 cup broccoli, cut into florets
1 cup carrot, julienned
1/2 cup scallion, cut on the bias
1/2 cup red pepper, julienned
1/2 cup fresh shiitake mushroom, de-stemmed
1 tablespoon fresh ginger, peeled and chopped
1/4 cup mirin
1 tablespoon pure sesame oil
1 tablespoon canola oil
1 cup ketjap manis (sweet soy sauce ~ recipes on food.com)
2 tablespoons sriracha garlic sauce
1 teaspoon black sesame seed
24 shrimp (16-20 peeled & de-veined)

Steps:

  • Cook noodles in boiling water until al dente, drain and cool in ice water.
  • Drain, let rest and toss with sesame oil.
  • Blanch broccoli and carrots in boiling water for 1 minute. Drain, cool down in ice water, drain and set aside.
  • Place large sauté pan over high heat. Add canola oil and sauté mushrooms until lightly golden.
  • Add shrimp, carrots, broccoli, peppers, scallions, ginger, Chile garlic sauce, sweet soy, and noodles to pan in that order. Cook until noodles are caramelized or golden.
  • Place on platter and sprinkle with black sesame seeds.

1 (10 ounce) package fresh udon noodles
½ teaspoon sesame oil, divided, or to taste
2 cups chopped broccoli
½ green bell pepper, cut into matchsticks
2 small carrots, cut into matchsticks, or to taste
½ zucchini, thinly sliced
2 tablespoons soy sauce
2 tablespoons mirin (Japanese sweet wine)
1 tablespoon chili-garlic sauce
¾ teaspoon minced ginger

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook udon in boiling water, stirring occasionally, until noodles are tender yet firm to the bite, 10 to 12 minutes. Drain and rinse with cold water. Stir in a few drops of sesame oil.
  • Heat the remaining sesame oil in a large skillet over medium heat. Cook broccoli until bright green and still crunchy, about 5 minutes. Add green bell pepper and carrots; cook and stir until slightly softened, about 2 minutes. Add zucchini; cook until slightly softened, about 2 minutes more.
