CUCUMBER AND ONION SALAD
This is a very easy side salad for a picnic or covered dish event. My mom kept this going in our frig all summer. I think she got the cucumbers from an aunt and uncle that had a farm nearby.

Steps:
- You will need a 2 quart jar with lid or other 2 quart container.
- Cut the ends off the cucumbers and peel along the long edge in 3-4 strips to leave a sort of stripped cucumber.
- Slice the cucumber in thin rounds.
- Peel and slice the onion in thin slices and separate.
- Put the cucumber and onion alternately in your jar/container.
- Add the rest of the ingredients and cover your jar/container tightly and gently turn so the ingredients are mixed together.
- Refrigerate overnight and serve cold.

Steps:
- If using English or regular cucumbers, they need to be peeled, cut lengthwise, seeded and sliced into thin half moons.
- In a large bowl, combine cucumbers, salt and pepper, mix well.
- Add sugar(or honey), soy sauce, rice wine vinegar and sesame oil and mix well.
- Sprinkle with sesame seeds and mix.
- Let marinate for 20 minutes before serving.
- Adjust seasonings before serving.
JAPANESE CUCUMBER-ONION PORK SALAD
This is a Japanese family recipe. Any fresh cucumber that you would put in a salad can substitute for Japanese cucumbers. If the onions are bitter, soak the thin slices in water for about 15 minutes or until bitterness is gone and drain them thoroughly. Less oil can be used in non-stick pans. Serve with rice.

- Cut bumps off of cucumber. Thinly slice cucumber and onion.
- Whisk together equal parts mayonnaise and soy sauce to make dressing.
- Pan fry pork in vegetable oil until done. Lightly season with salt and pepper to taste.
- Remove pork to serving plate(s), and arrange sliced cucumber and onion on top.
- Pour over dressing.

Steps:
- Cook the noodles in boiling water until barely tender.
- Rince immediately with cold water until cool, drain thoroughly and put in a medium bowl.
- Mix vinegar, sugar, soy sauce, and salt and pour over the noodles.
- Stir well.
- Cover bowl with plastic wrap and chill noodles in refrigerator until cold.
- Peel and seed the cucumber.
- Cut into quarters lengthwise, then into thin sticks.
- Divide the noodles on four salad plates, sprinkle evenly with cucumber pieces, green onion and sesame seeds.

- Combine vinegar and next 4 ingredients in a small bowl; stir until well blended.

Steps:
- Place cucumbers, radishes, onion, tomatoes, salt, pepper, garlic clove, 1-bay leaf in a salad bowl and toss salad.
- In a small saucepan add rice vinegar, bay leaf and bring boil. Wisk in sugar until completely disolved. Pour warm dressing over salad. Season salad with sea salt and black pepper. Toss salad until completely coated.
- Chill salad for 15-minutes before service.
- Remove garlic clove and bay leaves. Add 2 tablespoons chives. Season with salt and pepper to taste. Serve salad on a chilled plates.
- Garnish salads with fresh chopped chives.
