3 cups all-purpose flour
1/2 teaspoon salt
2 tablespoons curry powder
1 cup cold butter or shortening
3/4 cup iced water
1 tablespoon vinegar
2 egg yolks
Egg wash (1 egg beaten with 1/4 cup water)
2 tablespoons peanut oil
1 medium onion, diced
4 sprigs scallions, sliced
1 tablespoon fresh thyme
1/2 teaspoon Scotch Bonnet pepper, chopped
1 pound ground beef
1 teaspoon salt
Water
1 cup bread crumbs
Fresh ground pepper

Steps:

  • For the dough: Combine flour, salt, and curry powder in work bowl of food processor, pulse to combine. Add the butter or shortening and process until the mixture looks like fine crumbs. In a bowl combine water, vinegar, and egg yolks. Add wet mixture to work bowl and pulse until a ball forms. Cover dough in plastic wrap and let rest in refrigerator for 1/2 hour.
  • For the filling: Heat oil in saucepan over medium heat, add onions, scallions, thyme, and Scotch bonnet peppers. When onion begins to soften, add ground beef, salt, and enough water to barely cover meat, simmer over low heat for 20 minutes. Add bread crumbs and adjust with salt and pepper, allow to cool.
  • Preheat the oven to 375 degrees F. Roll the dough out to 1/8-inch thick. Cut the dough into 6-inch circles. Place 2 tablespoons of the meat filling onto half of each dough round. Brush the edges of the dough with the egg wash. Fold the dough over the filling to make a half moon shape and press to seal. Place the patties on a parchment lined cookie sheet and place in the oven for 25 to 35 minutes.

4 cups all-purpose flour
1 teaspoon ground turmeric, or curry powder
1 teaspoon salt
250 grams vegetable shortening, cold
1 cup water, ice-cold; plus more if needed
For the Filling:
1/2 teaspoon black pepper
1 teaspoon ground allspice
2 pounds ground beef
2 tablespoons vegetable oil
1 cup diced onions
Optional: minced hot pepper, to taste
2 teaspoons garlic, minced
1 tablespoon fresh thyme, minced
Salt, to taste
2 tablespoons ketchup
2 cups water
1/2 cup green onions, finely sliced; white and green parts
For Assembling:
Flour, for dusting the work surface
1/4 cup water, plus 1 tablespoon water
1 large egg

Steps:

  • Gather the ingredients.
  • In a large bowl, add the flour, turmeric , salt, and vegetable shortening. Rub the shortening into the flour using your fingers until there are tiny pieces of shortening completely covered with flour and it has a sandy texture.
  • Pour in 1/2 cup of the ice water and mix with your hands to bring the dough together. Keep adding ice water 1 or 2 tablespoons at a time until the mixture forms a smooth dough.
  • Cut the dough into 2 large pieces. Wrap each and refrigerate for 30 to 40 minutes. Alternatively, before refrigerating, divide the dough into 10 to 12 individual pieces-use a food scale if you want them to be the same size.
  • Gather the ingredients.
  • Place the beef in a large bowl. Add the pepper and allspice. Mix together and set aside.
  • Heat the vegetable oil in a large skillet over medium heat until it shimmers. Add the onions and sauté until translucent.
  • Add the chili, if using, thyme, and garlic. Continue to sauté for another minute. Season with salt to taste.
  • Add the ground beef to the pan and stir to mix, breaking up any large clumps. Let cook until the meat is no longer pink.
  • Add the ketchup. Adjust the seasoning, adding more salt if necessary. Pour in the water or broth, stirring to combine.
  • Bring the mixture to a boil, then reduce heat and let simmer until most of the liquid has evaporated and whatever is remaining has reduced to a thick sauce.
  • Fold in the green onions. Remove from the heat and let cool completely.
  • Position 2 racks in the upper and lower third of the oven and heat to 350 F. ​ Generously flour the work surface. Unwrap 1 of the pieces of dough and roll it out into a very large circle.
  • Cut out 3 circles with a bowl or dish of approximately 5 inches in diameter. If you divided the dough into 10 to 12 small balls, roll them all out into a circle of approximately 5 inches in diameter.
  • Place about 3 heaping tablespoons of the filling onto one half of each circle. Dip a finger into a bit of water and moisten the edges of the pastry.
  • Fold over the other half and press to seal. With a fork, crimp the edges to close. Cut off any extra to give the patties a uniform look.
  • Place the finished patties on two parchment-lined baking sheets and continue to work until you have rolled out all of the dough and used all of the beef. Place in the fridge until ready to bake.
  • Just before baking, beat the egg and the remaining 1 tablespoon of water together to make an egg wash . Brush the assembled patties with egg wash.
  • Bake patties until golden brown, 30 to 40 minutes, flipping baking sheets in the oven halfway through cooking. Cool on wire racks. Enjoy warm.

1 medium onion, chopped
1 teaspoon curry powder

¼ cup margarine
¼ cup shortening
⅓ cup water

I use a little gadget for making perogies that cuts the circle, folds the pastry in half once the meat is in and crimps the edges (great investment of two bucks!). They turn out smaller, but are a good size for an appetizer. I serve these with a commercial Jerk barbecue sauce.

4 cups flour
1/2 teaspoon baking powder
1 teaspoon ground turmeric
1 teaspoon curry powder
1 teaspoon salt
1 cup vegetable shortening
1 egg, beaten
3/4 cup water (or more)
2 medium onions, finely chopped
3 scallions, including tops finely chopped
2 hot peppers, finely chopped (preferably scotch bonnet)
1 1/2 lbs lean ground beef
2 tablespoons oil
5 cups fresh breadcrumbs
3/4 teaspoon ground thyme
3/4 teaspoon ground turmeric
salt and pepper
3/4-1 cup water

Steps:

  • Pastry: Sift together flour, baking powder, turmeric, curry and salt.
  • Cut in shortening with pastry blender or until pastry has consistency of corn meal. (I have used food processor and "pulsed" the mixture with good results) Add egg to water and mix well.
  • Add just enough of this mixture to flour mixture in order to hold dough together, mixing it in with your fingers.
  • Wrap dough in plastic wrap and refrigerate for 30 minutes.
  • Filling: Add chopped onions and peppers to ground beef and mix well with hands.
  • Heat oil in large frying pan or dutch oven.
  • Add meat mixture.
  • Cook until lightly browned, about 10 minutes.
  • Add breadcrumbs and seasonings and stir well.
  • Add water.
  • Cover and simmer for 30 minutes or as long as needed to evaporate the excess liquid (mixture should be just wet, not runny or not dry).
  • Allow meat mixture to cool while rolling pastry.
  • Divide the dough into 24 even-sized pieces.
  • On a lightly floured surface, roll out each piece of dough to a thickness of 3/8 of an inch and cut into 4 inch circle.
  • Keep patty dough circles moist by stacking and covering them with a damp cloth.
  • After all circles are cut, take one at a time and spoon on enough filling to cover half the circle.
  • Fold the other half over, and seal the edges by crimping with a fork.
  • Bake the patties on ungreased baking sheets and bake at 400°F for 30-35 minutes.
  • Serve hot.

1/2 cup chicken stock or 1/2 cup water
2 green onions (finely chopped)
pastry dough
500 g plain flour
1/2 teaspoon turmeric
1/4 teaspoon salt
200 g shortening (cold,diced) or 200 g butter (cold,diced)
1/4 cup ice water (lightly beaten) or 1 egg (lightly beaten)

Steps:

  • Heat oil in large heavy pan.
  • Add onions and garlic.
  • Cook, stirring till onion wilts.
  • Add ground meat.
  • Cook, stirring until meat is browned.
  • Sprinkle with curry powder, salt and pepper.
  • Cook about 5 minutes.
  • Stir in breadcrumbs and stock or water. Cook, stirring often, about 20 minutes. Mixture should be thick but not dry.
  • Stir in green onions.
  • Remove from heat and leave to cool.
  • Make pastry by combining flour with turmeric and salt.
  • Rub in butter or shortening until crumbly.
  • Add water and gather into a ball.
  • Roll out to about 1/4" thickness and cut into 4" diameter circles.
  • Gather remaining dough together and lightly cut out again.
  • Place about 1 Tbsp filling on each circle. Brush edges with lightly beaten egg, fold over and seal.

The Jamaican beef patty is an island's history in the palm of a hand. Dubbed Jamaica's "No. 1 fast food" by Enid Donaldson, author of "The Real Taste of Jamaica," a beef patty's filling is spiced, then baked inside of a suet dough. These pastries are often filled with seasoned ground beef, but can include pork, lamb, lobster, shrimp, cheese, chicken and ackee. The dish is a byproduct of Jamaica's long history - the introduction of spices from African slaves, as well as Indian and Chinese indentured laborers, impacted the patty's development. But while this meal is found throughout Jamaica, it's also present wherever the Caribbean diaspora is around the globe. Both the dough and the filling can be made prior to baking. Eat with coco bread for a more substantial meal.

3 1/2 cups/450 grams all-purpose flour, plus more for rolling
3 teaspoons/7 grams ground turmeric
2 teaspoons granulated sugar
1 1/2 teaspoons kosher salt (Diamond Crystal)
1 cup/187 grams vegetable shortening
1/2 packed cup/67 grams minced or ground unrendered beef suet (see Tip)
1/2 to 3/4 cup/118 to 177 milliliters ice cold water
1 tablespoon vegetable oil
2 small Scotch bonnet peppers, seeded and minced
1 medium onion, diced
1 pound beef chuck, minced or ground
2 teaspoons ground allspice
1 1/2 teaspoons ground black pepper
1 teaspoon garlic powder
1 teaspoon paprika
1 tablespoon soy sauce, preferably dark soy sauce
2 small beef stock cubes (14 grams), dissolved in 3 tablespoons boiling water

Steps:

  • Make the crust: Whisk flour in a medium bowl, then whisk in turmeric, sugar and salt. Work in shortening and beef suet quickly, rubbing them into the dry ingredients with your fingers until the mixture is evenly crumbly. Gradually add 1/2 cup ice cold water while stirring with your hands to form the dough. If the dough isn't coming together, add more water by the tablespoon as necessary. Form dough into a ball, cover with cling wrap and refrigerate for at least 1 hour or up to 2 days.
  • While the dough is chilling, make the filling: Heat a large frying pan over medium, then add vegetable oil. Fry scotch bonnet peppers and onion, stirring occasionally, until softened, about 5 minutes. Add beef and cook, stirring occasionally, until browned, 4 to 8 minutes. Season with allspice, black pepper, garlic powder, paprika, soy sauce and the beef stock mixture. Cook, stirring, until most of the liquid evaporates, 1 to 2 minutes. Transfer to a dish and let cool completely at room temperature or in the refrigerator. (The filling can be refrigerated in an airtight container for up to 2 days.)
  • When ready to assemble patties, heat oven to 375 degrees. Remove dough from the refrigerator and roll on a lightly floured work surface with a lightly floured pin into a 12-inch square. (Turmeric will stain a porous work surface. Roll between sheets of parchment paper if needed.) Fold dough in half to form a rectangle, then fold again the other way to form a square. Roll again into a 12-inch square. Repeat this process 3 more times, letting dough rest as needed if it's too stiff to roll. Roll to 1/8-inch thickness, then use a bowl or pastry cutter to cut out 10 (6-inch) rounds, rerolling scraps as necessary.
  • Divide beef mixture among rounds, spooning about 1/4 cup onto one side of each round. Fold the other side of each round over the meat until the edges meet. Using a fork, seal the edges, then prick the center of each to allow steam to escape.
  • Place patties on 1 or 2 baking sheets, and bake until pastry is set and golden, 22 to 25 minutes. Serve hot, warm or at room temperature.

1/2 lb boneless skinless chicken breast half
1 sweet potato, medium sized, to yield 1 cup mashed
2 tablespoons butter
1 fresh pepper, minced (your choice mild and sweet, or hot)
1 teaspoon grated fresh ginger
1 teaspoon jamaican yellow curry powder (or yellow curry paste)
salt
2 tablespoons fresh parsley, chopped
1/4 cup flour
1/4 cup cornmeal
1/4 teaspoon cayenne pepper (optional, but nice if using a mild pepper above)
vegetable oil (for frying, about 1/4 - 1/2 inch in the pan)

Steps:

  • Cook the chicken breast according to your preferred method (roasted, stewed, boiled, sauteed, grilled, etc.) and let cool. Shred and chop the meat until a fine texture. Set aside.
  • Peel, dice and boil the sweet potato in enough salted water to cover. When tender, drain and mash potato. Set aside.
  • Melt butter in a medium saute pan. Add pepper and ginger and saute until tender and fragrant. Add the curry powder and salt. Stir. Add the chicken and sweet potatoes to the pan. Stir until thoroughly blended. Add the parsley, and stir again. Remove from heat and let cool slightly - enough to handle, and then shape into 8 small patties.
  • Meanwhile mix the flour, corn meal, and cayenne (if using). Thoroughly coat the chicken patties in the flour mixture.
  • Heat the oil on medium until hot. Carefully drop the patties into the oil and fry on each side until golden brown. Serve hot.
