SOUTHWEST TURKEY BURGERS

- Chop your garlic and veggies.
- Cook bacon in a large nonstick skillet over medium high heat until crisp. Wipe excess grease from pan and return skillet to heat.
- While bacon cooks, combine turkey meat, garlic, shallot or onion, thyme, cilantro or parsley, bell pepper, serrano or jalapeno pepper, cumin, hot pepper sauce, grill seasoning or salt and pepper. Divide mixture into 4 equal mounds then form meat into patties. Drizzle patties with vegetable oil to coat. Cook in skillet over medium high heat for 5 to 6 minutes on each side. Place sliced cheese over the patties in the last 2 minutes of cooking, use 1 or 2 slices for each patty, as you like.
- Pile cooked cheeseburgers into buns. Spread sweet relish or jelly on bun tops and set red leaf lettuce into place, using the relish or jelly as glue. Top cheeseburgers with 2 slices of cooked, crisp bacon or turkey bacon and lettluce. Then serve with tortilla chips, tossed salad and/or spicy o-nuts.
JALAPENO TURKEY BURGER

- For the jalapeno jam: In a small saucepot, combine the jalapenos, sugar and marmalade and bring to a simmer over low heat. Simmer until the liquid reduces to a glaze, about 1 hour.
- For the turkey burgers: In a bowl, combine the ground turkey, salt and pepper and mix well. Form the mixture into 6 patties.
- Heat a cast-iron skillet over high heat until it begins to smoke. Add 1 tablespoon of the grapeseed oil to the pan and reduce the heat to medium. Add 3 of the patties to the pan and cook until the first sides are seared, 3 to 5 minutes. Flip and cook until the burgers are cooked completely through, about 5 minutes. Repeat with the remaining tablespoon grapeseed oil and the other 3 burgers.
- Butter each of the buns on both sides and toast them in the hot skillet until golden brown.
- Dress each of the bottom halves of the buns with lettuce, tomato, red onion and avocado. Place a burger on top of each dressed bun and top with 2 tablespoons of the jalapeno jam. Finish with a bun top.

- Prepare grill for cooking on high heat.
- Mix jalapeno pepper, garlic, onion and ground beef in bowl.
- Separate beef mixture into about 7 equal bundles.
- Place a thick slice of pepper jack cheese into center of each beef bundle (about the size of a thick butter pat). Form bundles into patties.
- Brush grill grate with oil.
- Grill hamburger patties 5 minutes per side, or until desired doneness.
- Remove burgers from grill; top with more pepper jack cheese.
- Let rest on serving plate for 5 minutes.
- Serve on toasted buns with condiments of your choice.

- Mix meat, Worcestershire sauce, salt, garlic powder, and pepper.
- Shape the mixture into 12 thin patties, each about 4 inches in diameter.
- Mix the cream cheese, ancho chili powder, cumin, dried onion, and minced jalapeno.
- Top 6 patties with the cheese mixture, spreading it to within 1/2-inch of the edge (if the mixture is difficult to spread, try heating in the microwave for about 15 seconds).
- Cover each patty with one of the remaining 6 patties, sealing the edges well.
- Broil or grill the patties (4 inches from the heat), turning only once if possible, until preferred doneness and cheese is melted, about 10 to 15 minutes.
- Low-carb serving: top with a bit of grated cheddar, guacamole, and enjoy!
- High-carb serving: eat with a bun and other condiments.

JALAPENO JACK BURGERS
These are very spicy but so good. If you want less spicy, you can use a less spicy pepper - like a poblano. These are great on the grill or any other way you cook a burger!!

- On the grill or under the broiler, roast the jalapeno peppers whole, until they start to turn black. Once they are black on all sides, put into a brown paper bag, close and let sit 5 minutes. Remove from bag and peel off skin.
- Using a knife, slit open jalapenos, and take the seeds out and remove the stem. Cut jalapenos in half so you have 4 total slices of jalapeno. Set aside.
- In a bowl combine ground beef, 1 egg, ketchup, salt, garlic, and onions. You may also use any other seasonings you like in your hamburger mixture. Mix well.
- Form 8 thin patties. Take one slice of jalapeno and one slice of pepper jack cheese and place on 4 of the patties. Top each patty with remaining four patties and seal the edges together so the cheese doesn't leak out.
- Grill burgers or cook as usual until done. Your burgers will have a spicy, cheesey surprise in the middle of each one. Delicious!
