Italian Sub Sandwich with Prosciutto di Parma, Salad, and Cheese image

Italian Sub Sandwich with Prosciutto di Parma, Salad, and Cheese - An easy to prepare "long sandwich" that would be great for outdoor dining and picnics.

Number Of Ingredients 9

1 small hot-dog or submarine roll, per person (about 5"/12.5cm long)
Drizzle of extra virgin olive oil
Dried oregano
Fresh lettuce leaves (of your choice)
1 small vine-ripened tomato per person (thinly sliced)
1/4 red onion, per person (very thinly sliced)
25g Parmigiano-Reggiano cheese per person (shaved into thin slices with a vegetable peeler)
2 slices of Prosciutto di Parma per person
Sea salt and ground black pepper, to taste

Steps:

  • Cut the submarine or hot-dog rolls in half through the middle, keeping both halves attached on one side; then drizzle some of the olive oil over both sides. Sprinkle the dried oregano over both sides.
  • Start to layer the sandwich like so: on one side of the roll arrange the lettuce leaves, sliced tomatoes seasoned with salt and pepper, red onion slices, Parmigiano-Reggiano cheese and finally arrange the two slices of Prosciutto di Parma ham over the top. Cover the filling with the top half of the roll to make a sandwich.
  • Eat immediately, or wrap in grease proof paper secured with string for transporting to a picnic.
  • Can be made up to 2 to 3 hours in advance for ease. Wrap the sandwiches and keep in a cool place or in the fridge.

1 egg white, beaten
1 cup progresso Italian style breadcrumbs
8 ounces goat cheese, cut into 1/4 inch slices
2 tablespoons butter
1 head boston lettuce
2 ripe pears, thinly sliced
12 slices prosciutto di Parma
1/4 cup lightly toasted walnuts
2 tablespoons fresh orange juice
1 1/2 teaspoons white wine vinegar
1 1/2 teaspoons Dijon mustard (DONT use yellow or French's mustard)
1/4 teaspoon sea salt
1/4 teaspoon white sugar
1/3 cup olive oil
4 -5 dashes pepper, milled

Steps:

  • In small dishes, place egg whites and bread crumbs.
  • In a large skillet over medium high heat, melt butter.
  • Dip goat cheese slices first in the egg whites, second in the bread crumbs.
  • Cook coated goat cheese in the hot butter until just golden, around 30 seconds for each side.
  • Remove and set aside.
  • In a small bowl whisk together all the ingredients from orange juice to the pepper.
  • On each of 4 salad plates, arrange 3 lettuce leaves.
  • Place 2 pear fans on each plate.
  • Place/tuck 3 slices of Prosciutto on each plate.
  • Center the goat cheese rounds, dividing evenly.
  • Drizzle with vinaigrette and sprinkle with walnuts.
  • Serve.

2 Belgian endive
1 cup frisee
2 cups mache
1 head radicchio
3 1/2 ounces prosciutto di Parma, sliced paper thin
2 1/2 ounces romano cheese
2 tablespoons black pepper, coarsely ground
3/4 cup extra virgin olive oil

Steps:

  • Wash, drain and chill all of the greens.
  • Remove the core from the radicchio, cut into quarters and chill.
  • Cut the prosciutto into strips and set aside.
  • Shave the Romano into thin pieces and place in a large salad bowl.
  • Add the greens, radicchio, prosciutto, black pepper and oil.
  • Toss and serve or arrange on a chilled salad plate in a radial design with the prosciutto in the center.

4 -5 cups of cooked tri-color spiral pasta
4 slices dill pickles, chopped fine
1 can ripe olives or 1 can black olives, drained and halved
1 bunch green onion, sliced fine
snipped chives (optional)
1 cup of chopped sweet pepper (green, yellow, red)
1 can water chestnut, slices drained & chopped
2 medium tomatoes, chopped
1 cup pastrami or 1 cup any meat, of choice (optional)
1/2 cup of chopped cooper cheese or 1/2 cup any cheese, of choice (optional)
2 -3 tablespoons olive oil
3 teaspoons cider vinegar
1 teaspoon onion powder
1/2 teaspoon garlic powder
salt and pepper
1/2 teaspoon italian seasoning or 3 teaspoons fresh oregano, chopped

Steps:

  • Cook pasta and set aside.
  • Place onions, dill pickles, olives, water chestnuts, chives and peppers in a bowl.
  • Add oil, vinegar and spices.
  • Marinate for 15-20 minutes or so.
  • Add pasta,tomatoes, meat and cheese and toss lightly.
  • Serve cold.
