1 can(s) 16.3 oz large refrigerated biscuits
8 frozen italian meatballs (beef or turkey) cooked, thawed, cut in half
2 sticks (1 oz each) string cheese, cut into 8 pieces each
1 Tbsp grated parmesan cheese
1/2 tsp italian seasoning
1/4 tsp garlic powder
1 c spaghetti sauce, heated

Steps:

  • 1. Heat oven to 375F Separate dough into 8 biscuits. Cut each biscuit into 2 pieces. Press each biscuit layer to make 3 inch circle. Place 1 meatball half, cut side up, and 1 string cheese piece in the center of each dough circle. Wrap dough around filling; press edges to seal. Place seam side down, in a single layer in an un-greased, 8 or 9 inch pan. Sprinkle evenly with Parmesan cheese, Italian seasoning and garlic powder. Bake for 20 to 25 minutes, or until golden brown. Remove from pan. Serve warm with spaghetti sauce for dipping. Makes 8 servings

These little biscuits have meatballs and cheese inside. Dip them in marinara sauce for a yummy snack. They would even be great as a side with soup. The layer type biscuits work best for this appetizer. I found this recipe in a Pillsbury cookbook. *****UPDATE*****Since posting, I have begun using my own homemade meatballs for this recipe (usually prepared the day before and refrigerated until needed). I had purchased a bag of ready-made meatballs that weren't the best quality and was really unhappy with the results for the appetizer. Just thought I would pass on the info...

1 (16 1/3 ounce) can ready-to-bake refrigerated buttermilk flaky biscuits (or other LAYER biscuits)
8 frozen cooked italian meatballs, thawed, each cut in half
3 ounces mozzarella string cheese, each cut into 6 pieces
1 tablespoon grated parmesan cheese
1/2 teaspoon dried Italian seasoning
1/4 teaspoon garlic powder
1 cup marinara sauce, heated

Steps:

  • Heat oven to 375°F.
  • Separate dough into 8 biscuits.
  • Separate each biscuit into 2 layers.
  • Press each biscuit layer to form a 3-inch round.
  • Place 1 meatball half, cut side up, and 1 string cheese piece in center of each dough round.
  • Wrap dough around meatball and cheese, pressing edges to seal.
  • Place seam side down in single layer in ungreased 8 or 9-inch round cake pan.
  • Sprinkle evenly with Parmesan cheese, Italian seasoning and garlic powder.
  • Bake at 375°F for 20 to 25 minutes or until golden brown and biscuits are no longer doughy in center.
  • Remove from pan.
  • Serve warm biscuits with warm marinara sauce for dipping.

AUTHENTIC ITALIAN MEATBALLS

Meatball recipes are often challenged by chefs who claim, "Mine are the best!" Even though my meatballs ARE the best, I will make no such claim. Try them for yourself! This meatball recipe was given to me by my father who got it from a little old lady from Italy that he knew. It's amazing that she gave up her recipe to him, but I sure am glad she did!

1 lb ground beef
2 eggs
1/4 cup milk
1/2 cup breadcrumbs
1/2 teaspoon salt
1 tablespoon fresh parsley
1 teaspoon garlic powder
1/2 teaspoon fresh ground pepper
1/2 cup grated locatelli cheese

Steps:

  • Mix all ingredients in a large bowl by hand.
  • Use your bare hands for best results.
  • Roll meatballs to about the size of a golf ball. (wet your hands to prevent the meat from sticking to them while rolling the meat balls).
  • Drop raw meatballs into large (I use a stock pot) pot of sauce.
  • (I have an incredible sauce recipe {#92096} I use for my meatballs).
  • Simmer for about 3 hours.

1 (18 ounce) bag frozen cooked italian meatballs
1 (14 ounce) jar pasta sauce (any variety)
1 (9 ounce) box frozen spinach, thawed and squeezed to drain
1 (8 ounce) package cream cheese, softened
1 1/2 cups shredded Italian cheese (6 oz.)
2 1/4 cups original Bisquick baking mix
1 cup milk

Steps:

  • Heat over to 400 and coat a 13x9x2 baking dish with cooking spray.
  • Thaw meatballs in microwave on high 3-5 minutes or until warm.
  • Add pasta sauce and stir to coat and place half in baking dish.
  • Mix spinach, cream cheese and 1/2 cup of the cheese together and spoon half of the mixture by tablespoonfuls randomly over meatballs.
  • Stir Bisquick mix and milk in medium bowl until soft dough forms; spoon half of this mixture over the meatballs by tablespoonfuls.
  • Repeat layers with remaining meatballs, spinach mixture and Bisquick dough.
  • Bake uncovered about 20 minutes or until biscuits are golden brown.
  • Sprinkle with remaining cheese and bake 5 minutes longer or until cheese is melted.
  • TIP: Bake for 20 minutes as directed but do not add the remaining 1 cup cheese. Cover and freeze. For an easy weeknight meal, bake frozen casserole at 350 for 45-55 minutes or until hot. Sprinkle with 1 cup of cheese and bake an additional 5 minutes or until cheese is melted.
