2 ½ cups all-purpose flour
¼ cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, room temperature
¾ cup brown sugar
¾ cup white sugar
2 large eggs
2 tablespoons vanilla extract
½ cup chocolate-hazelnut spread, such as Nutella®
½ cup chopped toasted hazelnuts
1 cup chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet or line it with parchment paper.
  • Combine flour, cocoa powder, baking soda, and salt in a bowl. Mix with a whisk to break up any lumps.
  • Beat butter, brown sugar, and white sugar with an electric mixer in a large bowl until smooth. Beat in eggs one at a time until completely incorporated. Mix in vanilla and chocolate-hazelnut spread.
  • Slowly add in flour mixture and stir just until combined. Fold in chopped hazelnuts and chocolate chips. Drop the dough onto prepared baking sheet by tablespoons or with a cookie scoop.
  • Bake in preheated oven until edges look dry and cookies are fragrant, about 12 minutes. Allow to cool for 1 minute on baking sheet before transferring to a wire rack.

1/2 cup + 1/2 tablespoon salted butter softened ((125 grams))
1/4 cup granulated sugar ((50 grams))
1 cup all purpose flour ((125 grams))
1/3 cup + 1 tablespoon hazelnuts * ((65 grams))
3 tablespoons milk (I used whole milk)
1 large egg yolk
1 teaspoon vanilla
20 whole hazelnuts*

Steps:

  • Pre-heat oven to 350F (180C). Line two cookie sheets with parchment paper.
  • Roast the whole hazelnuts (1/3 cup + 1 tablespoon and the 20 whole hazelnuts) for about 5-6 minutes. Move them to a clean bowl, remove 20 hazelnuts and set aside. The remaining hazelnuts place in a food processor and pulse until finely chopped (see photo). Set aside.
  • In the bowl of the mixer cream the butter and sugar until fluffy about 2-3 minutes.
  • Add the flour, chopped nuts, egg yolk, milk and vanilla. Mix just until combined into a dough.
  • Either place the dough in a pastry bag with a large star tip or drop by heaping teaspoonfuls (or half and half) on the prepared cookie sheets. Place a roasted whole hazelnut on each cookie round and bake for approximately 15-20 minutes or until golden. Let cool 10-15 minutes on the cookie sheet then move to a wire rack to cool completely. Steps:

  • For the cookies: Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Line 3 baking sheets with parchment paper or silicone liners. Set aside.
  • In a stand mixer fitted with the paddle attachment, beat the butter and sugar on high speed until light and fluffy, 2 to 3 minutes. Beat in the vanilla. With the machine running, gradually add the flour until incorporated. Beat in the chocolate-hazelnut spread. Using a small cookie scoop or a tablespoon, drop 12 balls of dough onto each baking sheet.   • In a large bowl, mix together hazelnuts, flour and sugar. Mix in butter, egg yolk and salt until combined. Form into ball; wrap in plastic wrap. Refrigerate for 3 hours.

2 cups hazelnuts, toasted and skinned
1 1/4 cups sugar
4 large egg whites
1/2 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Position 2 racks as close to the center of the oven as possible; preheat to 325 degrees F. Line 2 baking sheets with parchment paper or nonstick baking mats.
  • Pulse nuts and sugar in a food processor until finely ground. Scrape into a large bowl.
  • Beat egg whites and salt in another large bowl with an electric mixer on high speed until stiff peaks form.
  • Using a rubber spatula, gently fold the egg whites into the nut mixture. Add vanilla and gently but thoroughly mix until combined.
  • Drop the batter by the tablespoons 2 inches apart on the prepared baking sheets.
  • Bake the cookies until golden brown, 25 to 30 minutes, switching the pans back to front and top to bottom halfway through.
  • Let cool on the baking sheets for 5 minutes.
  • Gently transfer the cookies to a wire rack to cool completely.
  • When the baking sheets are thoroughly cooled, repeat with the remaining batter.
  • NOTE: TO TOAST AND SKIN HAZELNUTS.
  • TO TOAST: Cook sliced or chopped nuts in a small dry skillet over medium-low heat, stirring constantly until fragrant and lightly browned, 2 to 4 minutes.
  • Toast whole hazelnuts on a baking sheet in a 350 degree F oven, stirring occasionally, until fragrant, 7 to 9 minutes.
  • TO SKIN: Let the nuts cool for a few minutes, then rub together in a clean kitchen towel to remove most of the papery skins.

3 tablespoons cornstarch
1 tablespoon plus 1 teaspoon instant espresso powder
3/4 teaspoon salt
1 cup (2 sticks) chilled unsalted butter, cut into 1/2-inch pieces
1 teaspoon vanilla extract
2/3 cup hazelnuts, toasted, husked, coarsely chopped
2 tablespoons hot water
2 ounces semisweet chocolate, chopped

Steps:

  • Preheat oven to 350°F. Blend flour, brown sugar, cornstarch, 1 tablespoon espresso powder and salt in processor. Add butter and vanilla. Using on/off turns, process until mixture resembles coarse meal. Add nuts; blend until finely chopped. Transfer dough to floured work surface. Knead just until dough comes together.
  • Divide dough in half. Press each half into 9-inch-diameter tart pan with removable bottom. Bake until deep golden brown, about 25 minutes. Transfer shortbread to rack; cool 2 minutes. Remove pan sides.
  • Cut each shortbread round into 24 wedges. Cool completely.
  • Mix 2 tablespoons hot water and remaining 1 teaspoon espresso powder in small saucepan. Add chocolate. Stir over medium-low heat until chocolate is smooth. Remove from heat. Cool slightly. Drizzle chocolate mixture over cookies. Let stand until chocolate sets. (Can be prepared ahead. Store in airtight container at room temperature up to 1 week, or freeze up to 1 month.)

Tips: Please use whole raw nuts, and toast them yourself to intensify the flavor. Pre-toasted or pre-chopped nuts are often spoiled. To further intensify the nut flavor, use unrefined nut oil (for version 1), which is tan in color. Refined nut oils have the color and flavor removed. Peanut oil is especially cheap in Chinese supermarkets. I bought 20 ounces for $2.38! There's a lesson: if you're looking for a "gourmet" ingredient, try an ethnic market. To make any standard nut butter, use this procedure but omit the powdered sugar, cocoa, vanilla and extra oil. Add 1/2 tsp salt and 2 tbsp granulated sugar. Try making your own cashew butter: you may never go back to peanut butter again!

  • Preparation: Line a baking sheet with foil. Preheat oven to 350 degrees F.
  • Make the caramel: Combine the sugar and water in a 3- to 4-cup saucepan. Do not stir again during the cooking. Cover and bring sugar and water to a simmer over medium heat. Uncover and wipe down the sides of the pan with a wet pastry brush or a wad of paper towel dipped in water. Cover and cook for 2 minutes, or until the sugar is completely dissolved. Uncover and cook until the syrup turns a pale amber. Test by spooning a drop or two of the syrup onto a white saucer. Swirl the pan gently, continuing to cook and test the color until the syrup darkens to a medium amber color.
  • Pour the caramel immediately onto the lined baking sheet. Tilt sheet to spread caramel as thinly as possible. Let harden completely, about 15 minutes.
  • Toast the nuts: Meanwhile, place hazelnuts in a single layer on a shallow baking pan. Toast in the oven until the skins are almost black and the meat is dark brown, about 15 minutes. Stir the nuts halfway through baking to ensure an even color.
  • To get rid of the bitter skins, wrap the cooled hazelnuts in a clean kitchen towel or paper towel. Rub until most of the skins have come off, but don't worry if some remain.
  • Make the nut butter: When the caramel is completely cool, break it into pieces and pulverize in a food processor. Try to get the caramel as fine as possible at this stage (it won't get finer once you add the nuts).
  • Add the nuts and process until they have liquefied, about 5 minutes. Scrape down the sides of the bowl occasionally. Be patient; the nuts will go from a fine meal, to forming a ball around the blade, to nut butter. Add the cocoa, vanilla and salt and process until smooth.
  • Transfer the spread to an airtight container, and store in the refrigerator for1-2 months. For best results, stir the chocolate-hazelnut spread before using.
