- Preheat oven to 375°. In a small bowl, mix the first 9 ingredients., Unroll crescent dough and separate into 4 rectangles; press perforations to seal. Spread rectangles with cheese mixture to within 1/4 in. of edges. Roll up jelly-roll style, starting with a short side; pinch seam to seal., Using a serrated knife, cut each roll into 4 slices; place on a greased baking sheet, cut side down. Bake until golden brown, 12-15 minutes. Serve with pizza sauce.

- In bread machine pan, place the first 7 ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1-2 tablespoons water or flour if needed)., In a small skillet, saute the onion, mushrooms and peppers in oil until tender; cool. , When bread machine cycle is completed, turn dough onto a lightly floured surface; divide in half. Let rest for 5 minutes. Roll each portion into a 16x10-in. rectangle; spread with pizza sauce. Top with the onion mixture, pepperoni, pizza cheese and olives. Roll up each rectangle jelly-roll style, starting with a long side; pinch seam to seal. REAL ITALIAN CALZONES
This is real calzone, because there is no tomato sauce INSIDE of it! We eat it at least once a week. Have a bowl of tomato or spaghetti sauce on the table for people to top their calzone with, if desired.

- To Make Dough: In a small bowl, dissolve yeast in water. Add the oil, sugar and salt; mix in 1 cup of the flour until smooth. Gradually stir in the rest of the flour, until dough is smooth and workable. Knead dough on a lightly floured surface for about 5 minutes, or until it is elastic. Lay dough in a bowl containing 1 teaspoon olive oil, then flip the dough, cover and let rise for 40 minutes, or until almost doubled.
- To Make Filling: While dough is rising, combine the ricotta cheese, Cheddar cheese, pepperoni, mushrooms and basil leaves in a large bowl. Mix well, cover bowl and refrigerate to chill.
- Preheat oven to 375 degrees F (190 degrees C).
- When dough is ready, punch it down and separate it into 2 equal parts. Roll parts out into thin circles on a lightly floured surface. Fill each circle with 1/2 of the cheese/meat filling and fold over, securing edges by folding in and pressing with a fork. Brush the top of each calzone with egg and place on a lightly greased cookie sheet.
- Bake at 375 degrees F (190 degrees C) for 30 minutes. Serve hot.

- Open tube of pizza dough, unroll, and roll out until approximately 8"x12".
- Layer ham and salami, then top with mozzarella cheese. Lightly drizzle with Italian dressing.
- Carefully roll from the long side and pinch well to seal the entire loaf. You should have 1 long roll. Place on lightly oiled cookie sheet, seam side down.

ITALIAN MOZZARELLA ROLL-UPS

- Preheat the oven to 350 degrees F. Line 2 rimmed baking sheets with parchment.
- Cut each slice of prosciutto into 4 pieces, each about 1 1/2 inches by 3 inches. Cut the roasted red pepper into 16 strips, each about 1/2 inch by 2 inches.
- Unroll the dough on a cutting board. Spread the pesto on the dough in an even layer. Cut the dough along the perforated lines to create 8 triangles. Cut each triangle in half to create 16 long, thin triangles.
- Lay a mozzarella stick across the bottom of the wide end of one of the triangles. Lay 1 strip of red pepper crosswise next to the mozzarella, then lay 1 piece of prosciutto over most of the remaining pesto layer. Starting at the wide end, roll up the dough tightly around the filling and place seam-side down on one of the prepared baking sheets. Repeat with the remaining dough, prosciutto, red pepper and mozzarella sticks.
- Bake until the dough is golden brown and cooked through and the mozzarella sticks are heated through, about 20 minutes. Serve warm with marinara and more pesto for dipping.
EASY GREEK-STYLE SPINACH AND FETA TURNOVERS
To make it easy, purchase prepared refrigerated pizza dough or use your own favorite pizza dough recipe. You can cut this complete recipe in half to make 4 turnovers. Cooking the spinach in the microwave firstly is only optional, I prefer to use cooked spinach rather than raw, cooking it first will mellow out the strong taste of the spinach, if you do not mind a strong taste then omit this step. I have made this many times using puff pastry in place of the pizza dough!

- Place the two packages thawed spinach in a microwave-safe bowl with about 1/2 cup water in the bottom of the bowl, and microwave on HIGH for 8 minutes; cool to almost room temperature, then squeeze all of the moisture out of the spinch with your hands (to speed the cooling process up just run the spinach under cold water).
- Set oven to 400 degrees.
- Lightly grease a large baking sheet.
- Whisk the eggs in a large bowl until blended, then add in squeezed spinach, feta cheese, garlic and black pepper; mix well to combine.
- Unfold the prepared pizza dough onto prepared baking sheet and gently stretch to a 11-inch square.
- Cut into 4 equal squares, repeat with the remaining tube of pizza dough.
- Spoon about 1/3 cup of the filling into the center of each square.
- Fold one corner of each square over the filling to the opposite corner (forming a triangle).
- Press dough edges together tightly with a fork to seal.
- With a shap knife cut 2 or 3 small slits in the top of each turnover to allow steam to escape.
- Beat the small egg in a cup then brush over the tops of the turnover.
- Bake until the filling is cooked through and the tops of the turnovers are golden brown (about 15 minutes).

Steps:
- To prepare garlic and herb dough, in a large combine 1 and 1/4 cups of the flour, yeast, salt, basil, oregano, Italian seasoning and garlic.
- Add 1 cup warm water and oil.
- Beat with an electric mixer on low speed for 30 seconds, scraping bowl constantly.
- Beat on high speed for 3 minutes.
- Using a spoon, stir in as much of the remaining flour as you can (I usually never get all of the extra flour to work in).
- Turn dough out onto a lightly floured surface.
- Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total).
- Divide dough in half.
- Cover and let rest for 10 minutes.
- On a lightly floured surface, roll each half of dough into a 13-inch circle.
- Transfer to greased baking sheets.
- Set aside.
- For the filling, cook lamb, onion, and garlic until meat is brown and onion is tender.
- Drain fat.
- Stir in cinnamon.
- Spread pizza sauce on half of each dough circle to within 1 inch of edge.
- Sprinkle meat mixture over sauce.
- Top with olives or mushrooms and feta or provolone cheese.
- Moisten edges of dough with water.
- Fold dough in half over filling.
- Seal edges by pressing with tines of a fork.
- Cut slits in tops.
- Brush with milk; sprinkle with sesame seed.
- Bake in a 375 degree F oven for 30 to 35 minutes or until crust is lightly browned.
- Cut each calzone into thirds for serving.

REAL ITALIAN CALZONES
I absolutely love this recipe! I got it from another on-line site long ago and have adapted it to my tastes. It is a "real Italian" calzone because there is no tomato sauce inside of it. I serve it with warmed tomato/marinara sauce to dip or pour over top! Feel free to change the filling to suit your own tastes! This makes a massive amount of calzone but it freezes well. I usually bake only 1 calzone (which will serve about 4 people) and freeze the other.

- Fill one half of each circle with half of the filling mixture and fold over. Seal the edges by pressing with a fork.
- Brush the top of each calzone with the egg wash and place on a greased cookie sheet.
- Bake at 375°F for 30 minutes or until golden brown and heated through.
- Serve with warmed tomato sauce if desired!
