2 tbsp. Butter
2 slices Rye Bread
2 tbsp. Irish Mustard
2 oz. weight Aged Irish Cheddar (I Used Kerrygold)
Small Pickles, For Serving

Steps:

Melt the butter in a skillet over medium-low heat.Place the slices of bread in the skillet, allowing it to soak up all the butter. Spread the mustard on both slices, then cut the cheese into thin slices and lay it on the bread. Allow the cheese to melt, then bring the two slices together and check both sides to make sure they're crisp and golden brown and the cheese is melted.Transfer the sandwich to a cutting board and slice it in half. Serve it with small pickles while the cheese is hot and gooey. VariationsUse pumpernickel bread or pumpernickel-rye swirl bread for a nice, deep color.Add tomato slices or thinly sliced corned beef to the sandwich.

4 slices bread (I like Pullman bread for this recipe)
Soft butter
4 ounces sliced Irish cheddar
2 slices thick cut bacon, cut in half and cooked until crisp
1 tomato, sliced thinly

Steps:

Butter one side of each slice of bread
Assemble as follows: slice of bread butter-side-down, cheese, bacon, tomato, more cheese, second slice of bread butter-side-up.
Heat a skillet or griddle over medium heat. Place the sandwiches in the skillet and cook until golden on one side. Carefully flip and cook until golden on the other side.
Remove, cut in half and serve.

Mash 4 tablespoons softened butter with 2 tablespoons each chopped parsley, scallions and chives. Spread the mixture on 4 slices white bread; top each with sliced Irish cheddar cheese and bread-and-butter pickles. Cover with 4 more bread slices. Spread plain butter on the outside of the sandwiches and fry in a skillet until golden on both sides. Spread the remaining herb butter on the warm sandwiches. Slice into quarters, then press the cut sides in more chopped herbs.

2 pieces sourdough bread
1 ½ tablespoons unsalted butter
1 ½ tablespoons mayonnaise
3 slices cheddar cheese

Steps:

On a cutting board, butter each piece of bread with butter on one side.
Flip the bread over and spread each piece of bread with mayonnaise.
Place the cheese on the buttered side of one piece of bread. Top it with the second piece of bread, mayonnaise side out.
Heat a nonstick pan over medium low heat.
Place the sandwich on the pan, mayonnaise side down.
Cook for 3-4 minutes, until golden brown.
Using a spatula, flip the sandwich over and continue cooking until golden brown, about 2-3 minutes.
