Perk up with this creamy Baileys Martini! It's the ideal after dinner drink: coffee, Kahlua and Baileys Irish Cream with a crunchy coffee bean rim.

2 ounces* coffee, slightly cooled (use decaf if desired)
1 ounces vodka
1/2 ounce Kahlua (or other coffee liqueur like Tia Maria or Sheridan's)
1/2 ounce Irish cream (Bailey's or other)
For the rim: equal parts finely ground coffee beans and granulated sugar, for the garnish

Steps:

  • Make the coffee, using your favorite method (pour over, Aeropress or other).
  • Wet the rim of the cocktail glass. Place the finely ground coffee beans and sugar on a plate, and tilt the outside rim of the glass into the mixture so that it coats the outer rim.
  • Place the coffee, vodka, Kahlua, and Irish cream in a cocktail shaker. Add 2 handfuls ice and shake until cold. Strain into the prepared cocktail glass.

1 (8 ounce) can condensed milk (small, half tins)
1 (13 ounce) bottle whiskey (of which you will use around 340ml.)
1 vanilla bean
2 tablespoons heavy cream
1 pinch salt (tiny)
hot water

Steps:

  • The night before, boil the cans of condensed milk (dont open them) in plenty of water for 3 hours. Make sure when boiling that they are constantly covered with water, if not they may explode! Leave overnight to cool.
  • In a large bowl put the cooled condensed milk (should be thick and caramelised) and 300ml whiskey.
  • Get your whisk and start whisking till as many of the lumps as possible are gone.
  • Add cream, the tiniest pinch of salt and whisk.
  • Add a little hot water and whisk, you will see that the lumps will be disolved.
  • Add more hot water till your desired consistancy is reached- whisk.
  • Serve Chilled.

20 gingersnap cookies
3 tablespoons butter, melted
1 cup heavy cream
1 tablespoon sugar
2 tablespoons instant espresso powder
1 (14-ounce) can sweetened condensed milk
1/2 cup Irish cream (recommended: Baileys Irish Cream)

Steps:

  • Line the ramekins with plastic wrap creating a shell and leaving long flaps to cover the ramekins later. In a food processer, pulse gingersnap cookies with melted butter until small crumbs form for the crust. Press half the cookie crumb mixture, dividing evenly, firmly into the bottom of each ramekin. Reserve the other half of the crumb mixture for the topping.
  • In a large bowl, whisk heavy cream with sugar until soft peaks form. In a separate large bowl, add the espresso powder and condensed milk and blend until espresso powder is dissolved. Whisk in Irish cream then fold in whipped cream. Pour evenly into the ramekins. Top with remaining gingersnap crumbs and cover with the extra plastic wrap, pressing to compact mixture. Freeze until set, about 5 hours. To serve, remove plastic wrap from top and then gently turn ramekins over to release dessert onto a serving plate. Gently remove plastic wrap.

  • Melt chocolate.
  • Slowly add to condensed milk.
  • Then add rest of ingredients.
  • Bottle and store in refrigerator.
  • Enjoy!

1 2/3 cups whiskey (I use Jameson)
1/4 cup Hersheys Chocolate Syrup
2 1/2 teaspoons almond extract

1 tablespoon vanilla extract

Steps:

  • Add ingredients in blender.
  • Blend until smooth.
  • Taste (!) I usually adjust the flavor at this point, adding either more half and half, more chocolate or leaving it as is.
