Steps:
- Combine water and oats in an electric pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 3 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes.

- Press the "Manual" button and cook on high heat for 5 minutes.
- Unplug the Instant Pot once it's done and let sit for 5-10 minutes before taking off the lid and serving.

- In a 6-quart Instant Pot, stir together the water, almond milk, oats, salt, cinnamon, and maple syrup. Cover and seal. Cook on HIGH pressure (manual) for 4 minutes. Let the pressure release naturally for 10 minutes. Carefully remove lid.
- Give the oats a big stir. Carefully taste (they will be hot!) and add additional cinnamon and/or maple syrup to taste. The oats will continue to thicken as they cool. Ladle into serving bowls and serve hot with any desired toppings.

- Combine the steel cut oats and water in the bowl of a 6-quart Instant Pot and give them a stir. (If using a different size machine, please see the notes for modifications.) Secure the lid and turn the steam release valve at the top to "sealing."
- Press the Manual or Pressure Cook button, then set the cook time to 4 minutes on high pressure. The Instant Pot will read "ON" as it comes to pressure, which can take 10 to 15 minutes. When the floating valve in the lid pops up, you'll know the pot is pressurized and the countdown will begin.
- When the cooking cycle is complete, allow the pressure to naturally release for 20 minutes. (The timer on the Instant Pot will remain on after the cooking cycle to let you know how long it's been kept warm, unless you press the OFF button. I like to keep it on for the timer function.)
- Once the 20 minutes have passed, turn the steam release valve to "venting" to release any remaining pressure. Carefully remove the lid and stir the oats to incorporate any water that has risen to the top. They might look watery at first, but should thicken up when you stir them.

- *Overnight Option - Hot and Ready Overnight Steel Cut Oats: Pour everything in the night before and set the delay timer to roughly 30 minutes before you wake up the next morning.
- Pressure Cook Steel Cut Oats: Add 80g (½ cup) steel cut oats in Instant Pot. Pour in 313ml (1¼ cup) to 375ml (1½ cup) cold water and make sure all the steel cut oats are submerged in the water. Close lid and pressure cook at High Pressure for 10 minutes, then Full Natural Release (~12 minutes). Open the lid carefully.
- Thicken Steel Cut Oats: The steel cut oats will look watery when you first open the lid. Give it a few quick stir with a silicone spatula to combine and thicken the steel cut oats.
