2 tsp oil
1/2 tsp cumin seeds
3/4 cup onion ((chopped))
1 inch ginger ((finely chopped))
5 cloves of garlic ((finely chopped))
1 hot green chilli ((such as serrano - finely chopped))
1 tsp turmeric
1/2 tsp garam masala
1 tsp ground coriander
1/2 tsp smoked paprika
1 large tomato ((diced))
1 large eggplant ((peeled and cubed into small about half an inch cubes))
3/4 tsp salt
1/2 cup water
1/3 cup peas
1/4 cup cilantro

Steps:

  • Set your instant pot to sauté, once it has heated up, add oil. Let the oil heat up and add the cumin seeds. Cook for half a minute. Add the onion, ginger, garlic, green chili and a good pinch of salt. Cook for 3 minutes.
  • Add all the ground spices and mix well. Then add the tomato and allow to cook for 2 minutes. Mash the larger pieces of tomato and deglaze with a tbsp of water if needed.
  • Once the tomato is tender, add the eggplant, salt, water and give it a good mix. Cancel sauté mode, close the lid, then pressure cook for 9-10 minutes. Let the pressure release naturally. (Eggplant releases a lot of moisture/water under pressure, so you really need very less added water here)
  • Open the lid and mash the eggplants really well using a potato masher. Taste and adjust the salt and flavor as needed. Add 1/2 teaspoon of liquid smoke for additional smoky flavor. Press sauté mode and cook for 3 minutes, stirring occasionally, (cook a few mins longer for thicker and more roasted) then add the peas and cilantro and mix in. Cancel sauté.
  • Serve hot and garnish with additional cilantro, pepper flakes and sprinkle smoked paprika.

1 large eggplant
2 tablespoons vegetable oil
1 onion, chopped
2 garlic cloves, minced
2 green chilies, chopped
2 teaspoons ground coriander
1 teaspoon ground cumin
1/2 teaspoon garam masala
1/4 teaspoon chili powder
1/2 teaspoon paprika
salt (to taste)
1 large tomatoes, chopped
1/2 cup fresh cilantro
3 -4 tablespoons heavy cream

Steps:

  • Prick the eggplant with a fork a few times, lightly oil and bake in a preheated oven at 400°F Roast until they are tender, about 30-40min or until the flesh yields easily to pressure.
  • Remove the pulp, peel and mash.
  • Heat oil, add onion and cook until golden brown.
  • Add garlic, chilis and all the dry spices listed.
  • Add tomato and cook, stirring, till tomato gets pulpy, about 10mins.
  • Stir in the roasted eggplant pulp, and cook on medium-low heat, about 15min.
  • Stir in the cream and garnish with chopped cilantro.

  • Once the oil is hot, put in one layer of eggplant slices. This is the tough part now, do not mess with them until they are properly charred at the bottom. Without this char, you won't get the smoky taste you need. Once these slices char, they will shrink a bit and you can put in some more eggplant slices. At this point, you may need to put in more oil. This thing sucks oil, so just embrace that. Use a spatula or spoon and scrape up the char from the bottom as needed. This took me about 10-15 minutes to get it all charred.
  • Once the eggplant is charred and somewhat soft, add in onions, garlic, turmeric, salt and let these spices roast in the oil for a bit as you mix everything together.
