INSTANT POT DIRTY RICE
This Instant Pot dirty rice is our version of a popular Creole dish with ground beef, bacon, onions, peppers and celery and a tasty mix of Cajun spices. It's a one-pot, family-friendly dish that can be served a with a side salad, coleslaw or steamed greens. We used a 6-quart Instant Pot for this recipe.

- Turn the Instant Pot and press the Saute function key. Once hot, add the oil, onions, celery, peppers and bacon and cook for 2 minutes, stirring a couple of times.
- Add garlic and beef and cook for 2 more minutes, breaking the meat apart with a spatula until its color turned from red/pink to greyish.
- Add 1.25 cups of well-rinsed rice, about 2 tablespoons of Cajun spice mix (see notes), a tablespoon of Worcestershire sauce and 350 ml of veggie or chicken stock. Mix through and press Cancel to stop the Saute function.
- Pop the lid on top, lock and make sure the top valve is pointing to Sealing. Press Manual/Pressure Cook and set the time to 4 minutes at HIGH pressure. The Instant Pot will take 5-8 minutes to build up the pressure first. Once the timer is finished, allow about 5 minutes for natural pressure release (NPR) but not much longer as the rice will keep cooking.
- Use the quick release (point the valve to Venting) to let off the remaining pressure and open the lid. Stir through the rice and serve garnished with chopped scallions and parsley. We topped our rice with some fried shallots as well.

INSTANT POT CHEESY GROUND BEEF AND RICE

- Turn Instant Pot to "saute" mode. When hot, add the butter or oil and coat the bottom. Add the ground beef and cook and crumble it until no pink remains. Turn Instant Pot off.
- While ground beef cooks, mix together the chicken broth, tomato sauce, tomato paste, milk, heavy cream, salt, pepper, garlic powder, and onion powder in a medium bowl.
- Pour chicken broth mixture into the Instant Pot and add the corn. Stir to mix and be sure there is nothing stuck to the bottom of the Instant Pot.
- Add rice. Do NOT stir. Use a spoon to make sure all the rice is submerged in the liquid.
- Cover and set to "Pressure Cook" for 8 minutes. Be sure valve is in sealing position.
- Do a quick pressure release and then remove the lid. Add cheese, stir it in. Replace the lid for a few minutes to melt the cheese.
- Check for seasoning and add more salt if desired.

CREOLE BEEF TIPS
I used Chef Paul Prudhomme's low fat cooking techniques to create this very low fat and flavorful dish. The secret here is organization. Get all the prep work done, line up the ingredients and it really comes together quite fast.

- Brown your flour in a dry pan. This will take about 10-12 minutes. Stir often so the flour does not burn. All you want here is a light brown color. (It will get darker in the later stages when you add it back into the vegetables). Transfer to a bowl and set aside.
- Season tips with 1 tsp of seasoning. Cover and set aside.
- Chop all veggies and set aside.
- Heat a non-stick pan over medium heat for about four minutes. Add the beef tips and brown well on all sides. When done transfer beef and all juices to a bowl.
- Add the onion, celery and bell pepper to the pan. Add ½ cup stock, 1 tsp seasoning and 1 tsp Worcestershire. Cook and stir until all liquid has evaporated.
- Let the veggies stick to the pot one minute. Stir then let stick one more minute.
- Add garlic. Cook and stir until fragrant.
- Add ½ cup stock and browned flour. Cook for one minute, stir then cook one more minute.
- Add ½ cup stock, meat and juices, mushrooms, tomatoes and remaining 1 tsp of Worcestershire.
- Bring to a boil, cover and simmer 10 minutes. Remove cover and simmer until desired consistency.
- Serve over brown rice.

- Cook and stir ground beef in a 10 inch skillet until light brown; drain. Sprinkle beef with flour and salt. Stir in green pepper, onion, parsley, pepper, garlic, bay leaf and thyme.
- Cooke and stir over low heat until onion is tender, about 5 inutes.
- Stir water and tomatoes with liquid into beef mixture; break up tomatoes with fork.
- Heat to boiling; reduce heat.

- Preheat the oven to 350 degrees F (175 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
