INDIAN MEATBALL CURRY

This delicious Indian Meatball Curry combines my favorite curry recipe with tender meatballs. It's a healthy and easy to make dinner recipe that is easy to fall in love with. It's also naturally gluten-free + paleo and can easily be made Whole30 compliant.

¼ cup oil
2 medium onions (minced)
4 cloves garlic (minced)
2 inch piece of ginger (minced)
2 teaspoons curry powder
1 teaspoon each: cumin and coriander
28 ounce can crushed tomatoes
¼ cup plain yogurt, cream, coconut milk, or cashew cream (see notes)
2 tablespoons almond butter or tahini
2 teaspoons sea salt
Optional: 2 tablespoons brown or coconut sugar (omit for Whole30)
2 lbs. ground beef, or ground pork, or ground lamb, or a combination
2 tablespoons each: very finely minced ginger and onion
1 tablespoon each: sea salt, curry powder, and fish sauce
4 cloves garlic (minced)

Steps:

  • Heat 3 tablespoons of the oil in a large frying pan over medium-high heat. Add the onion and cook, stirring occasionally, until well caramelized, about 15 minutes. Add the garlic, ginger, and spices and cook for 1 minute. Add the tomatoes and scrape any stuck on bits off the bottom of the pan.
  • Transfer to a blender and add 1 cup of water, the cream, almond butter, sea salt, and if you're using, the sugar. Blend on high until smooth.
  • While the onions are cooking, make the meatballs. Add all the meatball ingredients to a large bowl. Using your hands, mix the meat well. Form into 12 balls, being careful to use a light hand and not to pack the balls tightly.
  • Heat the remaining 1 tablespoon of oil in a large skillet over medium-high heat. Add the meatballs and cook, turning occasionally, until well browned all over, about 15 minutes.
  • Pour the curry from the blender into the skillet with the meatballs. Bring to a simmer then reduce the meat to medium-low, cover the pan, and cook for 15 minutes. If the curry gets too thick, add a little extra water to the pan to thin it.
  • While the curry is simmering, take this time to make some rice or cauliflower rice to serve it with.

1 pound ground beef
1 green serrano chile, minced
2 teaspoons minced fresh ginger
2 tablespoons minced fresh cilantro
Kosher salt
3 tablespoons coconut oil or canola oil
1/2 teaspoon brown or black mustard seeds
4 shallots, thinly sliced (about 1 cup)
5 cloves garlic, minced
1 (1-inch piece) ginger, peeled and minced
2 teaspoons ground coriander
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
2 medium tomatoes, finely diced
1 (14-ounce can) full-fat coconut milk
Kosher salt
2 tablespoons minced fresh cilantro
2 teaspoons lime juice (about half a lime)
Serving suggestions: Rice, Indian bread, such as naan or chapatti or spaghetti.

Steps:

  • For the meatballs: In a large bowl, mix the ground beef, chile, ginger, cilantro and 1 teaspoon salt together using your hands until just combined. (Don't mix any more than this or you'll end up with tough meatballs!) Make 16 balls like this: divide the mixture in half, and then in half again. Take each quarter and divide it into 4 small portions. Roll each portion between your palms until smooth. Set aside and repeat for all 16 meatballs
  • For the curry: In a large skillet over medium-high heat, warm the coconut oil until nearly smoking. Add the mustard seeds, covering the pan with a lid so you don't get popping seeds all over you.
  • When the spluttering subsides, add the shallots, garlic and ginger and cook until golden brown. Then add the ground coriander, cumin and cayenne pepper. Stir, and cook 30 seconds. Add the tomatoes and cook until they soften, about 5 minutes.
  • Add the coconut milk, 1/2 cup of water, 1/2 teaspoon salt and bring to boil. Turn down to a simmer and add the meatballs. Simmer until the meatballs are cooked through, 15 to 20 minutes.
  • To finish, add the cilantro and lime juice. Shake the pan gently to mix them in, and then taste for seasoning. Serve over rice, with Indian bread (naan or chapati) or over spaghetti!

450g/1lb lean beef mince
1 tsp crushed garlic
1 large onion, finely chopped
½ tsp black pepper, coarsely ground
1 tsp garam masala
1 free-range egg
1 tsp rapeseed oil
1 tsp cumin seeds
1 tsp finely chopped root ginger
1 x 400g/14oz can chopped tomatoes
1 tsp tomato purée
½ tsp ground turmeric
60-90ml/2-3fl oz water (optional)
cooked brown basmati rice, to serve

Steps:

  • Mix the beef mince, garlic, half of the onion, pepper, garam masala and egg together in a bowl. Using your hands, shape the meat mixture into 24 balls.
  • Preheat the grill to hot. Line the bottom of a grill tray with aluminium foil and place the meatballs on the grill tray. (This will allow the fat to drain off into the lined tray, saving on washing up.) Grill the meatballs under a medium heat for 10-15 minutes, turning occasionally, or until nicely browned.
  • Heat the rapeseed oil in a frying pan, and add the cumin seeds and the remaining onion. Cook for 4-5 minutes, or until softened, then stir in the ginger.
  • Add the chopped tomatoes, tomato purée and turmeric and cook for 10 minutes or until the sauce has thickened.
  • Add the cooked meatballs, reduce the heat and simmer for 20 minutes. Add 60-90ml/2-3fl oz water if the curry is a bit dry. Serve with rice.

2 tablespoons lemon juice
2 bread rolls
4 garlic cloves
2 small hot red chili peppers
5 cm gingerroot
1 egg
4 cloves
2 teaspoons turmeric

4 cardamom pods
2 tablespoons coriander seeds
2 tablespoons fish sauce
1 tablespoon brown sugar
500 ml yoghurt
2 tablespoons red curry paste
2 tablespoons instant chicken bouillon granules
1 zucchini
1 red bell pepper
4 green onions
2 tablespoons sesame oil
2 tablespoons chopped coriander leaves

Steps:

  • Water bread rolls for 15 minutes, press out water afterwards.
  • Chop chilli, ginger and garlic.
  • Mix lemon juice, bread roills, minced meat, curcuma, chopped chilli, ginger and garlic and egg to a dough.
  • Ground gloves, cumin, black pepper, coriander seed and broken cardamom pods.
  • Add ground spices, fish sauce and brown sugar to dough.
  • Mix all ingredients and form meatballs out of 2 tbsp of dough.
  • Chop zucchini, bell pepper and green onions to 2 cm long pieces.
  • Heat sesam oil.
  • Roast meatballs 2 minutes from each side, then put aside.
  • Roast green onions for one minute, than add zucchini and bell pepper and roast for another two minutes.
  • Put yoghourt into the pan and add meatballs again.
  • Add curry paste and chicken broth
  • Cook for 10 minutes. Turn meatballs after 5 minutes.
  • Serve with rice and decorate with coriander leaves.
  • Enjoy!

MASALA MEATBALL CURRY

Try a new way with curry and roll up lamb and mint meatballs to serve with a flavoursome tomato sauce

2 garlic cloves
1 red chilli , deseeded
1 thick slice white bread
small pack mint leaves, reserving some to serve
400g lamb mince
1 egg , lightly beaten
1 tbsp vegetable oil
1 large onion , roughly chopped
1 tbsp masala curry paste
400g can chopped tomato
400ml lamb stock
100g baby spinach leaves
cooked basmati rice and cucumber & mint raita, to serve (optional)

Steps:

  • Place the garlic, chilli, bread and mint in a food processor and pulse until finely chopped. Tip into a bowl and mix with the lamb, egg and seasoning. using damp hands, shape into 16 small meatballs.
  • Heat half the vegetable oil in a large non-stick frying pan. Fry the meatballs in batches over a high heat until golden, then set aside.
  • Heat the remaining oil in the frying pan, add the onion and cook for 3-4 mins until beginning to soften. Add the curry paste and fry for 1 min, then tip in the tomatoes and stock and bring to a simmer.
  • Add the meatballs and simmer for 15 mins until the sauce is thickened. Stir through the spinach until just wilted. Scatter over the reserved mint leaves, and serve with rice and cucumber & mint raita, if you like.

1 tbsp fennel seed , toasted
2 garlic cloves , finely grated
thumb-sized piece ginger , finely grated
2 green chillies , deseeded and finely chopped

60g desiccated coconut
400g lamb mince
1 tbsp olive oil
1 onion , finely chopped
1 tsp grated ginger
1 tbsp garam masala
1 tsp turmeric
400g can chopped tomatoes
1 tbsp coconut yogurt
½ small pack coriander , roughly chopped
rice or naan, to serve

Steps:

  • Put all the meatball ingredients in a large bowl and use your hands to combine everything together. Roll into about 16 balls, cover and chill until needed.
  • Heat the oil in a large, deep frying pan over a gentle heat and fry the onion, ginger and spices for 10 mins until the onions are softened. Tip in the tomatoes and a splash of water, and bring to the boil over a high heat. Drop in the meatballs and reduce the heat. Cover and simmer for 15 mins or until the meatballs are cooked. Mix through the yogurt, scatter over the coriander and serve with rice or naan bread.

A quick and easy Indian meat dish. The spices can be adjusted to suit your tastes. You can omit the coconut if you have cholesterol problems or if you don't like the flavour of coconut.

2 lbs lean ground beef
2 tablespoons vegetable oil
1 teaspoon cayenne pepper
salt
3/4 teaspoon ginger powder
1 teaspoon garlic powder
1 dash black pepper
2 onions, chopped in thin slices
2 tomatoes
6 curry leaves
1 inch cinnamon stick
6 cardamoms
6 cloves
1 tablespoon ginger-garlic paste (store bought or see my recipe)
1 1/2 teaspoons cumin
1 1/2 teaspoons coriander powder
1 -1 1/2 teaspoon cayenne pepper
1 inch coconut paste, grated (or a splash of coconut milk)
4 potatoes, peeled and sliced lengthwise (I use Yukon Gold)

Steps:

  • Spread the ground beef over a plate.
  • Add the spices as indicated to form the meatballs.
  • Mix thoroughly and shape into one inch balls; set aside.
  • In a saucepan, heat oil, fry onions till golden brown.
  • Add curry leaves, cloves, cardamoms, cinnamon.
  • Add tomatoes and stir (med-high heat).
  • In a small bowl, combine remaining spices except the coconut, and mix with a bit of water to form a soupy mixture.
  • Add to onion-tomato mixture after the tomatoes have cooked down a bit.
  • Let spices cook for about 3 minutes.
  • Add meatballs GENTLY into pot.
  • Cover and let cook for a few minutes before stirring again (stir gently).
  • Add water as needed and add potatoes when meatballs have firmed up a bit.
  • Add grated coconut, salt as needed.
  • Cover and let cook, stirring occasionally until potatoes are cooked.
