1 whole Recipe Of Ree's Basic Breakfast Potatoes
1 lb. Breakfast Sausage
12 whole Eggs
Chopped Chives, to taste
Seasoned Salt And Pepper, to taste
1 c. Monterey Jack Cheese
Flour Tortillas

Steps:

  • First have on hand one completed recipe of "Basic Breakfast Potatoes" (also available here at Tasty Kitchen). Then brown a pound of your favorite kind of breakfast sausage. Drain off the fat. In a bowl, whisk together a dozen eggs (adjust according to your needs), chopped chives, seasoned salt, black pepper and about 1 cup of Monterrey Jack cheese. If you are feeling saucy add some cayenne pepper or Tabasco sauce for a little more of a kick. Once your sausage is browned and drained add in the breakfast potatoes and stir to combine over low heat. Pour the egg/cheese mixture over the sausage/potato mixture. You don't want to stir too much or the potatoes will fall apart and become mushy. Cook over low heat and turn them occasionally to cook. When fully cooked throw some into a nice warm tortilla, wrap it up and, if they need to be kept warm for a bit, wrap them individually in sheets of foil.

This breakfast-to-go is perfect for the kind of day when you or your loved one may not be able to take time for lunch. It's a soft, warm flour tortilla filled with a savory combination of sausage, bacon, scrambled eggs, chives and two melty cheeses, all wrapped up in wax paper and ready to travel. It's very filling and should help stave off those hunger pangs until suppertime.

1 large flour tortilla
1 slice(s) american cheese
1/4 cup(s) shredded cheddar cheese
1 tablespoon(s) real bacon bits
2 - cooked breakfast sausage links or small patties, cut or torn into small pieces
1 teaspoon(s) chives
1/2 teaspoon(s) butter or cooking spray
2 large eggs
- salt and pepper to taste

Steps:

  • Gather and prep ingredients (shred cheese, mince chives etc...)
  • Place a square sheet of wax paper on kitchen counter (to wrap burrito.)
  • Place flour tortilla in medium size fry pan over low heat; tear American cheese into several pieces and place on tortilla.
  • Evenly scatter over tortilla, cheddar, bacon, sausage and chives; cover pan with foil or lid.
  • Over medium heat, melt butter in small nonstick skillet (or spray skillet with cooking oil spray.)
  • Add 2 eggs and salt and pepper to taste; using a nylon or silicone spoon or spatula scramble eggs and cook over medium heat, until eggs are just cooked (I usually shut the heat off at about the halfway point and let the residual heat of the pan finish the job, to avoid overcooking the eggs.)
  • Spoon eggs onto one half of the tortilla; use spatula to carefully (HOT!) fold burrito-style.
  • Leave burrito in skillet, seam side down, for a few seconds.
  • Place burrito diagonally on wax paper.
  • Fold wax paper around burrito, securing wax paper with a piece of tape, if needed. There you go! Ready to go.

2 teaspoons canola oil
1/2 small red onion, diced (1 cup)
1 red bell pepper, seeded and diced
1 cup drained, rinsed canned black beans, preferably low-sodium
1/4 teaspoon chili flakes
Salt and freshly ground black pepper
4 eggs and 4 egg whites
1/3 cup (about 1 1/2 ounce) shredded pepper Jack cheese
Nonstick cooking spray
4 (10 inch) whole wheat tortillas (burrito size)
1/4 cup reduced fat-free sour cream or 2 percent plain Greek yogurt
1/4 cup salsa
1 large tomato, (4 ounces) seeded and diced
1 small avocado (4 ounces), cubed
Hot sauce

Steps:

  • Heat the canola oil in a large nonstick skillet over a medium-high heat. Cook the onions and peppers until onions are softened and peppers are slightly charred, about 8 minutes. Add black beans and red pepper flakes and cook until warmed through, another 3 minutes. Season with salt and pepper and transfer to a dish.
  • Whisk together the eggs and egg whites then stir in the cheese. Spray the skillet with cooking spray, and reheat the skillet over a medium heat. Reduce heat to low and add eggs, scrambling until cooked through, about 3 minutes. Spread each tortilla with 1 tablespoon each sour cream (or yogurt) and salsa, then layer with 1/4 of the black bean mixture, 1/4 of the scrambled eggs, some diced tomato and 1/4 of the avocado. Season, to taste, with hot sauce. Roll up burrito-style and serve.

1 tsp chipotle paste
1 egg
1 tsp rapeseed oil
50g kale
7 cherry tomatoes, halved
½ small avocado, sliced
1 wholemeal tortilla wrap, warmed

Steps:

  • Whisk the chipotle paste with the egg and some seasoning in a jug. Heat the oil in a large frying pan, add the kale and tomatoes.
  • Cook until the kale is wilted and the tomatoes have softened, then push everything to the side of the pan. Pour the beaten egg into the cleared half of the pan and scramble. Layer everything into the centre of your wrap, topping with the avocado, then wrap up and eat immediately.
