Healthiest Cookies Ever image

These healthy cookies are made with 100% whole food ingredients, but they taste like a soft batch cookie. They are so easy to make!

1 1/2 cups raw walnuts ((165 grams))
1 tightly packed cup medjool dates (, pitted (8 ounces))
1/4 teaspoon salt ((3 grams))
1/2 teaspoon baking soda ((3 grams))
1 teaspoon vanilla extract ((3 grams))
1 tablespoon ground flax seeds ((8 grams))
3 tablespoons water ((42 grams))
1 teaspoon apple cider vinegar ((5 grams))
1/2 cup dark chocolate chips ((optional; 75 grams))

Steps:

  • Preheat the oven to 350F and line a baking sheet with parchment paper. In a large food processor fitted with an "S" blade, briefly process the walnuts into a crumbly texture.
  • Add in the dates, salt, baking soda, vanilla, flax, water, and vinegar. Process again, until the batter looks relatively smooth and sticky.
  • Add in the chocolate chips, or any other mix-ins you like, and process briefly to mix them in. Use a tablespoon or 1-ounce cookie scoop to scoop the dough.
  • Drop the cookie dough onto the lined baking sheet, and use your fingers to flatten and shape the cookies. (They don't spread much on their own.) I usually get about 16 to 18 small cookies from this batch.
  • Bake at 350ºF for 12 minutes, or until the edges are lightly golden. While the cookies are still warm, you can add a few more chocolate chips on top (if there are any spots that look bare). Let them cool completely on the pan, as they will be fragile while they are still warm. Store the cookies in an airtight container in the fridge or freezer, and serve cold for the most firm texture.

200g butter at room temperature, plus extra for the pan
250g light brown sugar
2 egg yolks
½ tsp vanilla extract
275g plain flour
1 tsp baking powder
150g chocolate chips
100g other cookie fillings, such as pretzels, chopped nuts, pieces of fudge or toffee, marshmallows
vanilla ice cream, to serve (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Tip the butter and sugar into a large mixing bowl, beat until combined, then stir in the yolks and vanilla. Tip in the flour, baking powder, chocolate chips, a pinch of sea salt and any other fillings you want to add. Mix until a crumbly dough forms.
  • Lightly butter a 25cm ovenproof frying pan. Spoon in and flatten the cookie mixture. For a gooey dessert, bake for 20 mins, leave to rest for 5 mins, then scoop straight from the pan and serve with ice cream, if you like. For a firmer cookie you can cut, bake for 30 mins, then leave to cool completely before cutting into wedges.

4 drops green food coloring
½ teaspoon water
¼ cup flaked coconut
48 vanilla wafers
24 chocolate covered thin mints
1 tablespoon sesame seeds

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • In a bowl, combine food coloring with a few drops of water. Add coconut and cover the container, shake until coconut is tinted. Set aside.
  • Place 1/2 of the vanilla wafers, flat side up, in an ungreased cookie sheet. Top each wafer with a peppermint patty. Place in the oven about 1 minute or just until chocolate begins to soften.
  • Remove cookies from oven and sprinkle each mint with 1/2 teaspoon coconut (for lettuce). Place another vanilla wafer on top and press gentle. With a clean paint brush, brush the top of each hamburger with just enough water to moisten so that the sesame seeds will stick when sprinkled on top of each cookie. NOTE: You can use canned chocolate frosting in place of peppermint patty, then eliminate the baking.
