1 cup unbleached flour
3/4 cup cream of wheat or 3/4 cup farina
1/2 cup sugar
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1 egg (beaten)
3/4 cup milk
1/3 cup cooking oil

Steps:

  • Mix together the Farina, flour, sugar, baking powder, and salt.
  • In a separate bowl mix egg, milk and oil together.
  • Add egg mixture to flour mixture, stirring just until moistened. Batter will be a little lumpy.
  • Grease loaf pan and pour batter into pan.
  • Bake at 400 for about 30 minutes or until done.

How to Make Farinata image

Farinata is nothing more than a simple garbanzo bean flour batter which is spiked with olive oil and salt and baked in a very hot oven. The surface gets crusty, the edges get crispy, and yet the inside stays moist and sort of creamy. The texture is easy to explain, but the taste, not so much. Very earthy, comforting, and satisfying.

1 ½ cups garbanzo flour
2 cups lukewarm water
1 ½ teaspoons kosher salt
½ teaspoon minced fresh rosemary
5 tablespoons olive oil, divided
freshly ground black pepper to taste

Steps:

  • Combine garbanzo flour and water in a bowl; whisk until batter is smooth. Cover bowl with plastic wrap or a plate and let stand at room temperature for 2 hours. Skim as much foam as possible from top of batter. Whisk salt, rosemary, and 3 tablespoons olive oil into batter.
  • Preheat oven to 500 degrees F (260 degrees C).
  • Place a 10-inch cast-iron skillet over high heat and heat until smoking hot. Pour 2 tablespoons olive oil in skillet and swirl to coat bottom of skillet with oil. Continue to heat until oil shimmers and a wisp of smoke rises from oil.
  • Quickly pour batter into hot oil; carefully transfer skillet to preheated oven.
  • Bake in the preheated oven until cake is browned and crusty, 25 to 30 minutes. Transfer immediately to a plate, cut into wedges, and serve hot. Garnish with freshly ground black pepper.

¼ cup unsweetened applesauce
½ cup white sugar
⅓ cup honey
2 tablespoons lemon zest
2 cups dry cream of wheat
2 teaspoons baking powder
1 teaspoon ground cardamom
1 cup plain yogurt
4 egg whites
½ cup flaked coconut,
½ cup sliced almonds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In a large bowl, cream together the butter, applesauce, sugar and honey until smooth. Mix in the lemon zest. Combine the cream of wheat, baking powder and cardamom; stir into the creamed mixture. Blend in the yogurt and egg whites. Try not to overmix, or the bars will fall. Finally, mix in the coconut and sliced almonds if you like them. Spread the mixture evenly into the prepared pan.
  • Bake for 45 to 55 minutes in the preheated oven, until the edges are brown but not the top. Cool and cut into bars.

3 cup milk (whole or skim)
1½ cup farina ((cream of wheat))
½ teaspoon salt
½ teaspoon vanilla extract
3 sticks cinnamon
¼ teaspoon clove powder
½ cup sugar (white, granulated)
2 tablespoon butter (salted)
¼ teaspoon nutmeg (freshly-grated)

Steps:

  • In a medium-sized saucepan combine milk, cream of wheat, salt, vanilla, cinnamon sticks, clove powder, 2 cups of water, and half the sugar. Stir until the sugar has dissolved and taste (it's safe to do so), add more sugar if you find it necessary (I found ½ cup too sweet, but too sweet is the preferred sweetness for some people, so do it to your taste).Let it rest for 5 minutes.
  • Heat over medium heat stirring constantly to prevent it from sticking to the pot.When it breaks the boil, add butter and lower the heat to very low. Simmer stirring until it reaches the desired consistency, taking into consideration it will get much thicker when it cools down. I suggest a thick but still liquid consistency.
  • Remove from the heat and pour into individual servings, and sprinkle with the nutmeg. Serve warm.

Thick and fragrant of vanilla, this sweet summer breakfast pudding was a special treat that my mother made when I was little. It's definitely not your everyday cereal and is good plain or served with berries. Prep time includes chilling overnight.

1/2 cup quick-cooking farina
1/3 cup sugar
1/2 teaspoon salt
3 cups milk
1 tablespoon butter
3 eggs, well beaten
1 1/2 teaspoons vanilla extract

Steps:

  • Mix farina, sugar and salt.
  • In a saucepan, bring milk to a boil then briskly stir in farina mixture.
  • Lower heat, cooking and stirring constantly for 3 minutes.
  • Add butter, then remove from heat and sir in eggs and vanilla.
  • (Eggs will cook from the heat, but you may use pasteurized frozen egg product if you wish.) Pour mixture into individual custard cups rinsed in cold water.
