Raspberry vinegar (one tablespoon)

Steps:

  • Shop carefully. You'll need to find the best quality venison available to you. Like any other meat, venison's final taste and nutritional benefits are highly dependent upon its origin. If you can't shoot a deer yourself, then ask questions when shopping around among hunters in season. If the only produce available comes from a supermarket, surely go for the organic variety of it. Try to get something of about half an inch thick regardless of the overall size.
  • Make your marinade. The marinade is essential when it comes to game. Think about countries or regions of the world when it comes to spices and flavours. For example, to give it a traditional flair, use about a tablespoon each of shallots, garlic and a very high quality raspberry vinegar together with not-so-cheap olive oil. Cut the shallots and the garlic as small as possible (Brunoise). Put them in a vinaigrette of olive oil and raspberry vinegar, with a generous pinch of salt and pepper.
  • Cover the meat with marinade. Then rub the mixture on the meat. The rubbing in process is not-negotiable!
  • Marinade. Let the meat 'soak' in the flavours for about an hour and you are ready to go.

4 venison steaks
1 tbsp cracked black pepper

zest 1 orange , removed in strips, plus its juice
6 tbsp redcurrant jelly
4 tbsp port
1 cinnamon stick

Steps:

  • Make the gravy by simmering all the ingredients together until the redcurrant jelly has completely melted. Keep warm.
  • Steam or simmer the potatoes until just tender, about 8 mins, then drain well and add a few drops of oil.
  • Lay the venison on a board. Sprinkle some of the black pepper and a little salt on each side, pressing the pepper into the steaks. Heat the remaining oil in a pan. When it has a shimmering surface, add the steaks, 2 at a time. Cook for 2 mins on each side for rare, 3 mins for medium and 4 mins for well done. When cooked, return them all to the pan and pour over the sauce. Warm for 1 min, sprinkle with parsley. Serve with the potatoes and peas, if you like, and any extra sauce spooned over.

Last night was venison steak... recipe to follow, and tonight was tenderloins. Will post that later. I checked the Zaar to see what people did. There were only 5 recipes for venison steak, and all took way longer than I wanted. So here it is, I made it up as I went along. Boy was it yummy!

2 medium onions (sliced)

Steps:

  • Put 1 tablespoon pepper on wax paper in shape of steak.
  • Put steak on pepper and sprinkle second tablespoon of pepper on steak.
  • Melt butter in heavy large skillet and saute onions.
  • Remove onions when done and move to serving platter.
  • Saute peppered steak in remaining butter, in skillet, over medium heat for 3 minutes.
  • Turn steak over and cook for 2 more minutes.
  • Serve.

It's easy to cook a venison steak so that it's juicy, you just need to follow a few rules. A good marinade, a hot grill or pan and not overcooking is key.

about 1 and 1/2 lbs of venison steaks, at least 1 inch thick - here I'm using 4, 6oz. venison tenderloin medallions, you could also use medallions from the backstrap/loin (sometimes called chops)
1 batch All-Purpose Venison Marinade or acidic marinade of choice (you'll need about 1/2 cup marinade - see below*)
sea salt and fresh ground pepper, to taste
optional - extra lemon for serving

Steps:

  • Remove the steaks from their packaging and put them on a plate or in a bowl lined with a paper towel. This absorbs old blood while defrosting and creates a more palatable taste.
  • If you're marinating your steaks, add your venison to a zip-top bag or a bowl with a lid. Again, this recipe works best with steaks that are at least 1 inch thick, but you can use this method for a flank steak or a thinner cut, just alter the cooking time.
  • Pour your marinade all over the steaks and make sure everything is coated. Marinate for at least 3 hours, but up to overnight for really tender/flavorful steaks. If you aren't fond of the natural taste of venison, opt for a longer marinade time, the acid will develop the flavor so that it's more pleasing to you.
  • When you're ready to cook, remove the steaks from the marinade and let them come to room temperature for 20-30 minutes before you cook (this is safe to do, it ensures even cooking).
  • Pat the steaks dry, wiping off the marinade, but DO NOT rinse them off. If you haven't used a marinade, pat them very dry and season them all over with salt and pepper.
  • If you used my marinade recipe, there's no need to add more oil for the grill. If you didn't mariante, a drizzle of olive oil is nice for grilling. I like to pierce my steaks with a fork all over to further tenderize them (see the photo in the post), but this is optional.
  • If you're using a grill to cook, preheat it to medium-high, about 450-500F. If you're cooking in a pan, preheat a well-seasoned cast-iron pan over medium-high heat until it's very very hot.
  • Place the steaks on the grill or in the pan and cook for about 5-7 minutes per side (this will depend on steak thickness), but keep an eye on the internal temperature. You want to pull the steaks at 117-125F for a rare plus/medium-rare steak, it's very important not to overcook venison.
  • Once the steaks are cooked, remove them from the heat source at once and let them rest for at least 10 minutes before serving or slicing.
  • Season with a bit more salt (flakey salt if you have it) and pepper if desired and a light squeeze of lemon. Enjoy!

  • Match the cut to the cooking method. Different cuts are more appropriate for different cooking methods. Some are great cooked up as steaks, while others make better stew meats or candidates for venison sausage.

  • Start by caramelizing the onions. Heat 2 tablespoons of the butter in a large saute pan over medium-high heat. When it's hot, add the onions and toss to coat. Cover the onions, turn the heat down and cook slowly, stirring once in a while. You are looking for them to slowly soften and brown, not scorch on the edges. After 10 minutes or so, they'll start to get soft. Sprinkle salt over them and let them cook some more. When they are just starting to brown, add the thyme and honey. Cook until they are a nice brown. Remove and set aside. The onions can be made in advance.
  • While the onions are cooking, take the venison out of the fridge and salt it well. Let it come to room temperature the whole time you are cooking the onions; this is especially important if you are using elk or moose backstrap, which is thick.
  • When the onions are done, wipe out the pan and add the remaining butter. Pat the venison dry with a paper towel and sear it over medium-high heat, turning it to make sure all sides are well browned. Use the finger test for doneness (See notes, below) to determine when to take it out of the pan. Let the meat rest on a cutting board. If you have some, roll the venison in the porcini powder as it rests.
  • While the venison is resting, put the mushrooms in the pan and turn the heat to high. Sear the mushrooms until they release their water; this might not happen with hen of the woods. When the water has almost boiled away or when the mushrooms begin to brown, add some more butter and saute hard until the mushrooms are nicely browned. Salt them as they cook.
