Let's make cold brew coffee! It's easy to make, and it's so nice to have coffee ready to go. This recipe is written for a 1-quart wide-mouth mason jar; you can scale it up or down using 1 ounce* (28 grams) coffee per 1 cup water. The quantities provided will produce about 2 1/2 cups concentrate, which is enough for 5 cups of cold brew.

3 ounces (85 grams) coarsely-ground coffee (that's about 3/4 cup whole coffee beans turned into about 1 1/2 cups* coarsely-ground coffee)
3 cups water (filtered water if you have it)

Steps:

  • In a 1-quart wide-mouth mason jar, combine the coffee and water. Stir to combine. I like to let my mixture rest for about 5 minutes and stir it again; the coffee grounds seem to gain more water exposure this way.
  • Put a lid on your container and refrigerate it for 12 to 18 hours.
  • When you're ready to strain your cold brew, place a thin paper coffee filter or a small, thin cotton napkin, cloth or handkerchief over a small fine-mesh sieve. Pour the concentrate through the prepared sieve into a liquid measuring cup or pitcher. Let it rest for a few minutes to let the last of the cold brew trickle down.
  • To serve, fill a glass with ice and fill it halfway with water. Then fill the rest of the glass with cold brew concentrate, and stir to combine. Cold brew concentrate will keep well in the refrigerator for up to 2 weeks, although I find that it has the best flavor within the first week.

90 grams (1 cup plus 2 tablespoons) coarse-ground coffee
45 grams (1/3 cup plus 1 tablespoon) roasted chicory
675 grams (2 3/4 cups plus 2 tablespoons) cold filtered water
60 grams (3 tablespoons) honey
60 grams (3 tablespoons) dark agave syrup
20 grams (1 tablespoon) molasses (preferably blackstrap)
100 grams (6 tablespoons plus 2 teaspoons) hot water
Ice cubes, for serving (optional)
Whole milk or half-and-half, for serving (optional)

Steps:

  • Combine the coffee, chicory, and the 675 grams cold water in a clean quart jar. Seal the jar tightly, shake vigorously, then set aside for 8 to 10 hours. Make sure to keep the jar out of direct sunlight.
  • To make the sweetener, combine the honey, agave, molasses, and the 100 grams hot water in a wide-mouth plastic squeeze bottle or pint-size glass jar. Put the lid on and shake to thoroughly combine. The sweetener will keep a couple of months in the refrigerator.
  • When the coffee is ready, give the jar a couple of shakes, then strain through a fine-mesh sieve into a large liquid measuring cup. Clean the jar, then place a piece of cheesecloth, folded 3 or 4 times, over the mouth and push down to create a filter at least 2 inches deep. Affix with a rubber band. Pour the coffee through cheesecloth to filter out any remaining sediment, stirring as needed with a rubber spatula. Tightly seal and refrigerate for up to 1 week.
  • To serve, combine 4 fluid ounces (1/2 cup or 120 grams) of the coffee with 1 tablespoon (15 grams) of the sweetener (add more if you like it sweeter) in a pint glass, then fill the glass with ice, if desired. Top with milk, if desired, and consume.

50g ground coffee (use coarsely ground for cafetières)
ice
sparkling water or still water to dilute

Steps:

  • Put 400ml cold water into a large jug or jar and add the coffee grounds, but do not stir the mixture. Cover and leave to steep for 24hrs.
  • Gently stir the mixture then pour it through a funnel or sieve lined with coffee filter paper (or a sheet of kitchen paper) into another large jug. This concentrate will keep in the fridge for 2-3 days.
  • To serve dilute 1 part cold brew with 2 parts still or sparkling water (or to your taste) and serve with lots of ice.

  • Assemble a pour-over coffee rig using a carafe, filter holder, and filter set on a digital kitchen scale.
  • Very slowly pour 100 grams of the water over the coffee in a spiral pattern. This step should take about 1 minute. Let the coffee sit for 30 to 40 seconds to bloom. Tare the scale, then, working in three batches, very slowly pour over the remaining 175 grams water in the same spiral pattern over the coffee. This step should take 2 to 3 minutes total. If using an electric kettle with a thermostat, return the kettle to the heater in between batches.
  • When the coffee is finished brewing, remove the filter holder and discard to compost the grounds.Serve the coffee with any remaining ice, or strain it out for a stronger brew.
