ITALIAN TURKEY SANDWICHES

- Place turkey breast in a greased 5-qt. slow cooker. Add onion and green pepper. , Combine the chili sauce, vinegar, oregano and bouillon; pour over turkey and vegetables. Cover and cook on low for 5-6 hours or until turkey is tender., Shred turkey with 2 forks and return to the slow cooker; heat through. Spoon 1/2 cup onto each roll. Freeze option: Place cooled meat and its juices in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, gently stirring and adding a little water if necessary.

- Heat gravy in a skillet until bubbly: If the gravy is too thick, thin with a little stock or water.
- Add pieces of sliced cooked turkey meat to the gravy: Coat with the gravy on all sides and heat until the meat is heated through.
- Arrange a slice of bread on a plate: Rustic French or Italian loaf would work great. Top with sliced turkey and gravy.

I used to run a small italian restaurant and this was our most popular sub. Some like it served as a cold sub, and others prefer it baked until the cheese melts and the roll is toasty. Either way, it's delicious.

Steps:
- Slice sub rolls all the way through& sprinkle each inside half with oil& vinegar mixture (or bottled italian dressing).
- Spread a little mayo on top of that& add your lettuce, tomato& onion& roasted peppers on the bottom half.
- Layer your meats on top of each other (fold each slice to fit on the roll) and top with cheese.
- Eat cold or put in 450° oven on a cookie sheet until cheese melts& rolls are lightly browned.

Steps:
- Dice garlic clove (or just buy the garlic in a jar that's ready to use) then mix the garlic, basil and olive oil in a small bowl, set aside.
- Cut each of the loaves of bread in quarters (cut the loaf from front to back and from top to bottom, in the middle).
- Coat the inside of the bread with the olive oil mixture then layer on the cheese and turkey.
- Close up the sandwiches and wrap well in aluminum foil.
- Place in the oven at 300 degrees until the cheese melts.
- I like to go really heavy with the olive oil/garlic/basil mixture and with the turkey, but beware going heavy on the cheese -- mozarella smells really strong when there's a lot around!

- Heat the oil in a heavy large skillet over medium heat. Add the sausages and cook until brown on both sides, about 7 to 10 minutes. Remove from the pan and drain.
- Keeping the pan over medium heat, add the peppers, onions, salt, and pepper and cook until golden brown, about 5 minutes. Add the oregano, basil, and garlic and cook 2 more minutes.
- Add the tomato paste and stir. Add the Marsala wine, tomatoes, and chili flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Bring to a simmer.
- Cut the sausages into 4 to 6 pieces each, about 1-inch cubes. Add the sausage back to the pan and stir to combine. Cook until the sauce has thickened, about 20 minutes.
- Serve in bowls. Or, if serving as a sandwich, split the rolls in half lengthwise. Hollow out the bread from the bottom side of each roll, being careful not to puncture the crust. Fill the bottom half of the roll with sausage mixture. Top and serve sandwiches immediately.
