GRILLED CHICKEN THIGHS WITH BLACKBERRY BBQ SAUCE

- In a small bowl, combine the coriander, paprika and salt. Pat the chicken thighs dry with paper towels, season on both sides with the spice mixture and place in a gallon-size zip-top bag. Refrigerate for several hours but preferably overnight.
- Prepare and preheat your lump charcoal grill to create two heat zones: high and low.
- Brush the chicken thighs with olive oil and place them skin-side down on the hot side of the grill. Cover and cook for 2 minutes. Uncover and move the chicken to the low side of the grill, skin-side up. Cover and cook until the thighs reach an internal temperature of 160 degrees F, 15 to 20 minutes. Pour half the Blackberry BBQ Sauce into a medium bowl and use it to baste the chicken occasionally during the final 10 minutes of cooking.
- Remove the chicken from the grill. Serve with the remaining sauce on the side.
- In a large saucepan, combine the blackberries, beer, vinegars, sugar, onion, garlic, habanero, chipotle powder, coffee, coriander and cumin. Cook over medium-low heat, stirring occasionally, for 2 hours. Carefully puree the sauce in a blender or food processor, then strain.

This yummy honey barbeque sauce is great on chicken wings, pork, or short ribs. The soy sauce and oyster sauce hint at an Asian inspiration, while the gin gives it an undeterminable edge.

- In a large bowl, mix the teriyaki sauce, oyster sauce, soy sauce, ketchup, garlic powder, gin, liquid smoke, and sugar. Place the chicken wings in the bowl, cover, and marinate in the refrigerator 8 hours or overnight.
- Preheat the grill for low heat.
- Lightly oil the grill grate. Arrange chicken on the grill, and discard the marinade. Grill the chicken wings on one side for 20 minutes, then turn and brush with honey. Continue grilling 25 minutes, or until juices run clear.

- For barbecue sauce, in large saucepan, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the ketchup, vinegar, brown sugar, Worcestershire sauce, chili powder, cayenne and cumin. Simmer, uncovered, for 8-10 minutes, stirring often. Remove from the heat; stir in pepper sauce. - Fill a large stock pot with water a little over half way and bring it to a boil. Add the sea salt to the water along with the wings. Boil the wings for 10 minutes and drain them in a colander.
- Now, pat the chicken wings completely dry using paper towels. This is the most important step. You want to make sure they wings are as dry as possible. Transfer the wings to a large sheet pan. Bake the wings for 20 minutes, then flip then and continue to cook for 5 more minutes.
- While the wings cook, heat the ghee in a small saucepan over medium-high heat and add the garlic and pepper flakes. Sauté the garlic for a minute until its fragrant. Lower the heat to medium and add the blackberry jam, coconut aminos and ketchup to the pot. Stir the sauce and simmer for 3 minutes to marry the flavors and thicken the sauce a bit. Remove the sauce from the heat and set it aside.
