- Preheat oven to 400°. In a shallow bowl, mix bread crumbs, cheese and, if desired, chipotle pepper. Place butter in a separate shallow bowl. Dip chicken pieces in butter, then in crumb mixture, patting to help coating adhere., Place chicken on a greased 15x10x1-in. baking pan; sprinkle with remaining crumb mixture. Bake 20-25 minutes or until no longer pink.

Steps:
- In a large Ziploc bag, add Cayenne Pepper (1/2 teaspoon), All-Purpose Flour (1/2 cup), Chili Powder (1/2 teaspoon), Ground Black Pepper (to taste), Garlic Powder (1 teaspoon), Salt (to taste), Smoked Paprika (1 teaspoon). Seal the bag and shake up the mixture.
- Add in the Chicken Breast (2) and shake until coated.
- In a small bowl, add Egg (2) and Milk (2 tablespoon). Beat together until combined.
- Dunk each chicken piece in the egg and milk mixture and then coat it in Breadcrumbs (1 1/2 cup). Place finished nuggets on a plate.
- Cover the plate with plastic wrap and refrigerate the nuggets for 30 minutes.
- Transfer the nuggets to a baking tray lined with non-stick baking paper. Bake at 180 degrees C (350 degrees F) for 20-25 minutes, or until golden, flipping halfway through.
- Serve and enjoy!
