SOY ROASTED SALMON WITH ASIAN GREENS



Soy Roasted Salmon with Asian Greens image

4 (6-ounce) salmon fillets or steaks
1/4 cup soy sauce
1/4 cup sake or dry white wine
1/4 cup mirin
2 tablespoons sugar
3 tablespoons chopped green onion
3 tablespoons chopped fresh ginger
1 small lemon, thinly sliced
4 tablespoons olive oil
1 pound baby bok choy, washed and cut diagonally
1 cup shelled, blanched fresh soy beans (either fresh or frozen) also called Edamame
1 pound washed fresh pea shoots or pea leaves
Garlic Chicken stock, recipe follows
Sea salt
Hot pepper sesame oil
Toasted sesame seeds and fresh daikon radish or onion sprouts, as garnish

Steps:

  • If using fillets of salmon, be sure to remove any pin bones. Combine marinade ingredients, except lemon slices, in a small saucepan and bring to a boil. Take off heat and allow to cool to room temperature. Add lemon and pour cooled marinade over fish and marinate, refrigerated, for at least 1 but no more than 4 hours. Turn fish occasionally.
  • When ready to serve, heat 2 tablespoons of olive oil in an ovenproof saute pan (preferably non-stick) over moderately high heat. Remove salmon from marinade and quickly saute on 1 side until lightly browned and "lacquered" looking. Turn fish over and place pan in a preheated 500 degree oven for 4 to 5 minutes or until just cooked through. Don't overcook. Salmon should still be translucent in the very middle.
  • While salmon is cooking add remaining oil to another skillet and heat over moderately high heat. Add bok choy and soy beans and stir-fry for 1 or 2 minutes. Add pea shoots and stir-fry for 1 minute longer. Add 1 cup or so of stock and bring to a boil, stirring constantly. Season vegetables, to taste, with salt and a few drops of hot pepper sesame oil. Place vegetables and broth in the center of shallow warm bowls and top with salmon. Garnish with sesame seeds and sprouts and serve immediately.

  • To Roast Garlic: Slice off the top quarter or so of 2 heads of garlic to expose the cloves. Drizzle with a little olive oil and season with salt and pepper. Loosely but completely wrap each head in a piece of foil and roast in a preheated 400 degree oven until garlic is very soft and lightly browned, about 30 minutes. Squeeze out and mash as much as you can from garlic heads. Stir garlic into 1-quart chicken stock and simmer for a few minutes to develop the flavor.

2 1/2 pounds bok choy,stem ends and leaf tips trimmed
8 to 9 whole scallions, ends trimmed, cut into thin julienne slice on diagonal
3 heaping tablespoons fresh ginger, cut into very thin julienne shreds
6 salmon steaks, about 6 ounces each
6 tablespoons soy sauce
3 1/2 tablespoons Chinese black vinegar or Worcestershire sauce
1/4 cup sugar, or to taste
2 tablespoons minced garlic

Steps:

  • Preheat oven to 450 degrees. Trim the tough outer leaves from the bok choy and discard. Rinse stalks and leaves; drain. Cut the stalks in half lengthwise. Cut halves diagonally into 2-inch sections. In a bowl toss the scallions and ginger with the sections. Arrange on a heatproof platter. Place salmon steaks atop greens. Pour several inches of water into a roasting pan and heat until boiling. Place the platter of salmon and vegetables on a rack over the roasting pan. Cover tightly with foil. Steam 7 to 9 minutes or until fish is cooked. Mix remaining dressing ingredients in a serving bowl. Serve from the platter with dressing spooned on top.;

Soy Glazed Salmon With Crunchy Hot and Sour Salad image

This makes a superb meal when you have friends coming over. Most of the prep work can be done the day before, it only takes minutes to throw together, it's colourful and healthy. Serve with fried rice (a combination of mint, coriander and shitake mushrooms in the rice works well).

4 (170 g) salmon steaks
2 tablespoons oil
5 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon honey
1/4 cup rice wine vinegar
1 red chile, deseeded and finely chopped
1 tablespoon caster sugar
1 tablespoon sunflower oil
140 g cashew nuts
1 teaspoon sea salt
1 teaspoon black mustard seeds
225 g bean sprouts
100 g snow peas, sliced on the diagonal
6 -8 water chestnuts, thinly sliced
1/2 lime, zest of
1/2 lime, juice of
2 -3 tablespoons freshly chopped coriander, plus extra to garnish

Steps:

  • Combine the marinade ingredients.
  • Pour over the salmon and put in the fridge for at least two hours and as long as overnight.
  • Make the hot and sour dressing by putting the vinegar, chilli and sugar in a small saucepan.
  • Heat gently without boiling until the sugar has dissolved.
  • Remove from the heat, leave to cool and then add the sunflower oil.
  • While the dressing is cooling, fry the cashew nuts in a heavy frying pan until lightly browned, then add the sea salt and mustard seeds and fry for a minute or until the seeds start to pop.
  • Set aside.
  • In a hot pan, add the oil and let it heat up.
  • Fry the salmon steaks for four minutes on each side, starting with the skin side down.
  • The flesh should be moist but cooked and the top of the salmon should be a lovely brown.
  • Combine all the salad ingredients and the dressing together.
  • Serve piled onto each plate and topped with the salmon.

1 small white onion, chopped
2 garlic cloves, minced
1 cup chopped fresh flat-leaf parsley
4 ounces watercress leaves, plus 2 bunches for serving
8 ounces fresh spinach leaves
1/2 cup nonfat buttermilk
1/2 cup low-fat sour cream
Juice of 1 lemon
2 teaspoons coarse salt
1/2 teaspoon freshly ground pepper
1/4 cup water
1 1/2 teaspoons extra-virgin olive oil
6 five-ounce salmon fillets, skins removed, about 1 1/2 by 4 inches

Steps:

  • Place onion, garlic, parsley, watercress, spinach, buttermilk, sour cream, lemon juice, 1 teaspoon salt, and 1/4 teaspoon pepper in the bowl of a food processor. Puree until smooth, and set aside in the refrigerator.
  • Preheat oven to 300 degrees. Rub the bottom of a 9-by-13-inch glass baking dish with 1/2 teaspoon oil. Set salmon fillets in the dish, and rub tops with remaining teaspoon oil. Sprinkle with remaining teaspoon salt and 1/4 teaspoon pepper. Pour 1/4 cup water in dish (to cover bottom in a thin layer). Cook fish until just cooked through, 20 to 25 minutes. Serve immediately over bed of watercress drizzled with cold herb sauce. Extra sauce can be refrigerated up to 4 days.

Simple and super quick, this lovely salmon dish tastes as good as it looks

1 tbsp olive oil
1 leek , thinly sliced
250ml chicken or fish stock
100g crème fraîche
140g frozen peas
140g frozen broad beans
4 skinless salmon fillets
small bunch chives , snipped
mash , to serve

Steps:

  • Heat the oil in a large, deep frying pan with a lid. Cook the leek for 5-10 mins until soft but not coloured, then pour in the stock. Simmer for a few mins until reduced slightly then add the crème fraîche and season. Cook for 1 min more.
  • Tip in the peas and beans, nestle in the salmon fillets, then turn down to a simmer and cover. Cook for 12-15 mins, depending on the thickness of the salmon, until cooked through. Sprinkle on the chives and serve with mashed potato, if you like.

1 cup brown rice
1/4 cup soy sauce
3 tablespoons fresh lime juice
1 teaspoon finely grated peeled fresh ginger
1/2 teaspoon agave nectar (optional)
4 teaspoons canola or peanut oil
4 salmon fillets (4 to 5 ounces each)
Coarse salt and ground pepper
2 garlic cloves, thinly sliced
1 head bok choy (1 1/2 pounds), cored and chopped

Steps:

  • Cook rice according to package instructions. Meanwhile, in a small bowl, combine soy sauce, lime juice, ginger, and agave, if using. In a large nonstick skillet, heat 2 teaspoons oil over medium-high. Season salmon with salt and pepper and cook until opaque throughout, 1 to 3 minutes per side; transfer to a plate. Wipe skillet clean with a paper towel.
  • In same skillet, heat 2 teaspoons oil over medium. Add garlic and bok choy; season with salt and pepper. Cook, tossing, until bok choy is bright green, about 3 minutes. Serve salmon and bok choy with rice and soy-lime sauce.

1 1/2 liters chicken stock
1 inch piece of fresh ginger, peeled and finely sliced
600 g fresh salmon, skinned,de-boned,sliced in 1 cm strips
4 baby bok choy, well washed,trimmed
2 small red chilies, finely sliced
3 tablespoons light soy sauce
1 -2 tablespoon sugar
3 -4 limes, juice of
1/2 cup roughly torn coriander leaves

Steps:

  • Place the stock and ginger in a large saucepan, bring to the boil, lower the heat and simmer for 5 minutes.
  • Strain to remove the ginger; discard.
  • Return stock to the pan, add salmon strips, bok choy and chilli to the stock, simmer gently for 2 minutes.
  • Lastly add soy sauce, and sugar and lime juice to taste and to achieve a balanced hot, sweet, salty, sour flavour.
  • Ladle into serving bowls and garnish with torn coriander leaves.
