Easy Homemade Beefaroni image

Five main ingredients and less than thirty minutes to recreate a childhood classic of slightly-spiced pasta, beef, and sauce.

8 oz. uncooked elbow macaroni ((regular or gluten free))
1 teaspoon olive oil
1.25 pounds ground beef
1 small onion, (chopped)
1/2 teaspoon kosher salt
1/4 teaspoon pepper
29 oz tomato sauce
2 Tablespoons chili powder ((you can use more or less, to taste))

Steps:

  • Cook pasta according to package directions.
  • While pasta is cooking, heat olive oil in a skillet over medium heat. Add ground beef, onion, salt, and pepper.
  • Cook until the beef is browned and cooked through. Drain any excess grease.
  • Drain the cooked pasta and return to the pot. Add the beef, tomato sauce, and chili powder and stir together.
  • Return the pot to the stove over medium heat until heated through. Season to taste with salt and pepper.

1 pound Italian pork sausage, casings removed
One 28-ounce can chopped tomatoes
2 cups macaroni noodles
1 1/2 cups vegetable or chicken stock
3/4 cup peas, fresh or frozen
Kosher salt and freshly ground black pepper
1 cup shredded cheese (I like a mix of Parmesan and mozzarella!)
A handful of fresh parsley or torn basil, for garnish, optional

Steps:

  • Heat a large pot over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned and cooked through, about 7 minutes. Add the chopped tomatoes, noodles and stock and bring to a boil. Reduce to a simmer, cover and cook, stirring occasionally, until the noodles are tender, 25 to 30 minutes. Stir in the peas (if they're frozen, they'll thaw pretty much immediately when stirred in). Season with salt and pepper. Top with cheese and herbs, if desired.

1 medium onion, chopped
1 can (28 ounces) diced tomatoes, undrained
2 cans (14-1/2 ounces each) beef broth
1 cup water
4 celery ribs, thinly sliced
4 large carrots, halved and thinly sliced
1/2 cup quick-cooking barley
1 teaspoon dried thyme
1/4 teaspoon pepper
1/4 cup minced fresh parsley

Steps:

  • In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the tomatoes, broth and water. Bring to a boil., Add celery, carrots, barley, thyme and pepper. Reduce heat; simmer, covered, for 10-12 minutes or until vegetables and barley are tender., Remove from heat; stir in parsley. Let stand 5 minutes.

This classic beef stew recipe makes sure you really make the most of each step of the cooking process to end up with a beautiful, rich, and hearty beef stew!

1 (2 pound) boneless beef round steak, cut into 1-inch cubes
kosher salt and cracked black pepper to taste
¼ cup all-purpose flour
1 tablespoon smoked paprika
1 tablespoon canola oil
3 cups chopped onion
6 cloves garlic, minced
4 tablespoons tomato paste
2 cups dry red wine
1 tablespoon dried thyme
1 tablespoon dried rosemary
1 tablespoon herbes de Provence
3 bay leaves
2 cups beef broth, or more as needed
1 tablespoon Worcestershire sauce
3 cups chopped carrots
3 cups cubed Yukon Gold potatoes
1 cup fresh peas
1 ½ teaspoons chopped fresh rosemary
1 teaspoon chopped fresh thyme, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place beef cubes into a large bowl. Season with kosher salt and black pepper. Add flour and paprika and toss until evenly coated.
  • Heat oil in an oven-safe Dutch oven over medium-high heat. Sear the beef cubes in batches until dark brown, about 4 minutes per side. Flip or stir gently with a wooden spoon until all edges are dark brown, 2 to 3 minutes more. Remove beef and set aside.
  • Add onions to the beef fat with more salt and pepper; cook and stir until they begin to caramelize, about 10 minutes. Add garlic and stir until aromatic and soft, about 30 seconds. Stir in tomato paste and cook until it turns brown and begins to caramelize and stick to the bottom of the pan. Deglaze with red wine, scraping up the flavorful browned bits on the bottom. Let the wine reduce until almost dry again, about 3 minutes.
  • Add dried thyme, dried rosemary, herbes de Provence, and bay leaves. Add 2 cups beef broth and Worcestershire, stir, and bring to a boil. Add the seared beef cubes back into the stew liquid. Remove from heat and cover the pot.
  • Braise in the preheated oven until meat is almost tender, about 1 1/2 hours. Remove from the oven. Add carrots, potatoes, and more beef broth if needed. Cover and return to the oven to braise until meat and vegetables are tender, about 30 minutes longer.
  • Discard bay leaves. Stir in peas, fresh rosemary, and fresh thyme. Serve hot.

This recipe came off a box of pasta, Ronzoni, I think, but it's been so long that I really don't remember. I clipped it from the box and just tossed it in my mess of recipes a long time ago. Since it was on every box I didn't really have to worry about keeping it. Then it wasn't there any more. I spent days going through my recipe clippings swearing I'd be better in the future about organizing (I haven't been). Here it is for even safer keeping.

Number Of Ingredients 6

1 lb ground beef, browned
8 ounces elbow macaroni, uncooked
3 cups spaghetti sauce (28 oz. jar)
4 ounces shredded cheddar cheese
1/2 onion, diced
1 cup water

Steps:

  • In a large skillet, if it isn't already, brown your ground beef and drain off excess fat.
  • Add spaghetti sauce, 1 cup of water, onion, and uncooked macaroni to the beef in the skillet.
  • Bring to a bowl, then cover and simmer for about 10 minutes OR until the macaroni is done to your liking.
  • Take off heat and mix in shredded cheese. Stir to melt.
  • Notes: I don't buy jarred spaghetti sauce most of the time. This recipe is quite adaptable. I often just dump in a 28 oz can of crushed tomatoes, spices (basil & oregano to taste) instead of the jarred sauce.
  • Also feel free to saute the onions with the beef if you like a more cooked onion.

Steps:

  • Coat a large skillet with cooking spray; place over medium heat until hot.
  • Add ground round, onion, garlic powder, and pepper.
  • Cook, stirring constantly, until meat is browned and onion is transparent.
  • Add remaining ingredients, stirring well.
  • Cover and cook over medium heat 20 minutes, stirring occasionally to prevent sticking; add more water, if needed.

  • Meanwhile, in a large, deep skillet, heat the 3 tablespoons of olive oil. Add the onion and bell pepper and cook over moderately high heat, stirring, until softened, about 5 minutes. Add the ground beef and cumin and cook over high heat, stirring occasionally, until the meat is browned and any liquid has evaporated, about 8 minutes. Add the flour and cook until no floury taste remains. Stir in the tomatoes and stock and simmer until thickened, scraping up any browned bits from the bottom of the pan, about 3 minutes.
  • Remove from the heat and stir in the macaroni, cream, parsley and 1 cup of the cheddar cheese. Season with salt and pepper.
  • Transfer the mixture to a large ceramic baking dish about 2 inches deep. Sprinkle the remaining 1 cup of cheese and panko on top. Bake for about 15 minutes, until the casserole is bubbling and the cheese is melted. Let stand for 5 minutes. Scatter the scallions on top and serve.
