Ingredients

2 cups honeydew melon, cubed
1 cup vanilla low-fat yogurt
2 tablespoons apple juice, from frozen concentrate
Ice
Honeydew melon slices, for garnish

Steps:

In a blender, combine melon, yogurt, and apple juice concentrate. Blend until smooth. With blender running, add ice until frothy.
Pour into 2 (16-ounce) glasses and garnish with sliced melon.

Ingredients

1 honeydew
1 tablespoon fresh lime juice
16 slices smoked salmon (lox)
fresh ground pepper, to taste
1 tablespoon snippedfresh dill (to garnish) (optional)

Steps:

cut honeydew into quarters, remove the seed and rind.
cut each quarter into 4 thin wedges and sprinkle with lime juice.
wrap a slice of salmon around the center of each wedge and place 2 on individual plates.
sprinkle with pepper and dill before serving.

Slice off the top and bottom of the melon to create flat surfaces, then stand upright. Slice rind off melon in pieces; discard. Cut flesh in half through stem end; scoop out seeds and membrane from each half and set aside. Slice melon into ¾"-thick wedges; arrange on a platter.
Place reserved seeds and membrane in a fine-mesh sieve set over a small bowl and push out juice with a spoon; discard seeds and membrane. Drizzle melon juice over wedges, then drizzle with oil; season with salt. Drape smoked salmon on top. Drizzle with more oil and sprinkle with salt and pepper; top with dill.
