My favorite homemade peanut butter granola recipe! It's quick and easy to make, it's naturally sweetened with honey, and it's ridiculously, irresistibly, completely delicious. Feel free to customize with any add-ins that you prefer.

3 cups old-fashioned oats
2/3 cup nuts (such as peanuts, sliced almonds, chopped pecans, or a mix)
1/3 cup natural smooth peanut butter
1/4 cup honey
3 tablespoons melted coconut oil
2 teaspoons vanilla extract
3/4 teaspoon sea salt*
1/4 teaspoon ground cinnamon
optional: 1/3 cup unsweetened flaked coconut
optional: 1/3 cup semisweet chocolate chips

Steps:

  • Heat oven to 325°F. Line a large baking sheet with parchment paper.
  • Combine oats and nuts in a large mixing bowl. Set aside.
  • In a separate bowl, stir together the peanut butter, honey, coconut oil, vanilla, salt and cinnamon. Heat briefly in the microwave (for 20-30 seconds) or in a small saucepan (over medium heat for 3-4 minutes) until warm, but not bubbly. Stir again until smooth.
  • Pour the peanut butter mixture over the oats mixture, and stir until evenly combined.
  • Spread the granola out evenly on the prepared baking sheet. Bake for 25 minutes, stirring once halfway through, and keeping an eye on the granola to ensure that it doesn't burn. Remove pan from the oven, sprinkle the coconut on top, and give the mixture a good stir. Bake for 4-5 more minutes, or until the granola is lightly toasted and golden.
  • Remove from the oven and transfer to a wire baking rack. Let the granola cool until it reaches room temperature. Then stir in the chocolate chips (if using), and any other optional add-ins you might prefer.
  • Serve immediately, or store in an airtight container at room temperature for up to 1 month.

This granola bar recipe is so easy and delicious! These wholesome granola bars are naturally sweetened, gluten free, and the perfect healthy snack. Recipe yields 16 bars.

1 ¾ cups old-fashioned oats or quick-cooking oats
1 teaspoon ground cinnamon
½ teaspoon fine sea salt (if using regular table salt, scale back a bit)
2 cups mix-ins* (nuts, seeds, chocolate, shredded coconut or dried fruit)
1 cup creamy peanut butter or almond butter
½ cup honey or maple syrup
1 teaspoon vanilla extract

Steps:

  • Line a 9-inch square baker with two strips of criss-crossed parchment paper, cut to fit neatly against the base and up the sides. The parchment paper will make it easy for you to slice the bars later.
  • Place the oats in a large mixing bowl**. Add the cinnamon and salt, and stir to combine. Set aside.
  • Now we'll blitz the mix-ins briefly in the food processor or blender (or, you can chop them by hand). Add any large nuts (like almonds or pecans) first and blitz for a few seconds. Then add the rest and run the machine for a few more seconds, until the ingredients are all broken up into pieces smaller than your pinky nail. Pour the mix-ins into the bowl of oats.
  • In a 2-cup liquid measuring cup, measure out the nut butter. Top with ½ cup honey and the vanilla extract. Stir until well blended. If you must, you can gently warm the liquid mixture on the stovetop or in the microwave, but make sure it's close to room temperature before you pour it into the dry mixture (this is especially important if using chocolate, since it will melt).
  • Pour the liquid ingredients into the dry ingredients. Use a big spoon to mix them together until the two are evenly combined and no dry oats remain. This takes some arm muscles, but you can do it! If the mixture was easy to mix together, that's a sign that you need to add some more oats-sprinkle in more oats until you can't incorporate any more.
  • Transfer the mixture to the prepared square baker. Use your spoon to arrange the mixture fairly evenly in the baker, then use the bottom of a flat, round surface (like a short, sturdy drinking glass) to pack the mixture down as firmly and evenly as possible.
  • Cover the baker and refrigerate for at least one hour, or preferably overnight. (The oats need time to soak up some of the moisture so they aren't sticky.) When you're ready to slice, lift the bars out of the baker by grabbing both pieces of parchment paper on opposite corners. Use a sharp knife to slice the bars into 4 even columns and 4 even rows.
  • Wrap individual bars in plastic wrap or parchment paper (if you store them all together, they will stick to one another). Bars keep well for several days at room temperature, a couple of weeks in the fridge, or several months in a freezer-safe bag in the freezer for best flavor.

1/2 cup unsweetened coconut flake
1 cup almonds
1 cup pecans
1/4 cup craisins ((or other dried fruit))
3 Tbsp sugar
1/4 tsp salt
1/2 Tbsp ground cinnamon
1 Tbsp cocoa powder ((optional))
1/4 cup extra virgin coconut oil*
1/2 scant cup honey ((sub maple syrup or agave for vegan))
1 tsp vanilla extract

Steps:

  • Preheat oven to 340 degrees F (171 C).
  • Mix the oats, coconut, cinnamon, sugar, cocoa powder, salt, and nuts together in a large bowl.
  • In a small saucepan over medium low heat, warm the coconut oil, honey and vanilla extract and pour over the dry ingredients and mix well.
  • Spread the mixture evenly onto a baking sheet (may take two batches- or more if increasing batch size) and bake for 20-25 minutes, stirring a bit near the halfway point. The coconut oil will help this granola crisp up nicely but be sure to watch it carefully as it browns quickly.
  • Add the craisins to the baking sheet in the last few minutes of cooking, so they don't get hard.
  • Once the granola is visibly browned (about 23 minutes for me), remove from the oven and scoop into a bowl to let it cool. Place in a container that has an air-tight seal and it should keep for a few weeks.

1 cup blanched slivered almonds
1 cup chopped walnuts
1 cup chopped pecans
1 cup sesame seeds
1 cup wheat germ
2 cups shredded coconut
1 cup unsalted sunflower seeds
1 cup canola oil
1 ½ cups honey
1 cup raisins
1 cup dried cranberries

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a large bowl, stir together the oats, almonds, walnuts, pecans, sesame seeds, wheat germ, coconut and sunflower seeds. In a small pan over medium heat, stir together the oil and honey. Cook and stir until blended. You could also do this in a large measuring cup in the microwave, heating for about 2 minutes and 30 seconds. Pour over the oat mixture, and stir to coat evenly. Spread out in an even layer on two cookie sheets.
  • Bake for 20 minutes in the preheated oven, until the oats and nuts are toasted. Immediately after it comes out of the oven, stir in the raisins and dried cranberries. Let stand until cooled, and stir again to break up any large clusters. Store in an airtight container at room temperature for up to two weeks, but I guarantee it won't be around that long!

1/3 cup maple syrup
1/3 cup extra-virgin olive oil
3/4 cup dried sour cherries

Steps:

  • Preheat the oven to 300 degrees F. Line 2 rimmed baking sheets with parchment paper. Toss the oats, coconut, pistachios, pepitas and salt in a large bowl. Warm the brown sugar, maple syrup and olive oil in a small saucepan over low heat, stirring, until the sugar dissolves. Fold the sugar mixture into the oat mixture to evenly coat.

Steps:

  • Preheat the oven to 350 degrees F.
  • Toss the oats, coconut, almonds, and cherries together in a large bowl. Pour the vegetable oil and honey over the oat mixture. Add the cinnamon, and stir with a wooden spoon until all the oats and nuts are coated with the liquids. Pour onto a sheet pan.
