SKINNY OATMEAL CHOCOLATE CHIP COOKIES

These healthier oatmeal chocolate chip cookies have NO sugar, NO white flour, and only 2 tablespoons of butter in the whole batch!

1 cup quick oats
3/4 cup whole wheat flour (spooned and leveled)
1 & 1/2 teaspoons baking powder
1 & 1/2 teaspoons cinnamon
1/2 teaspoon kosher salt (scant)
2 tablespoons butter (melted and cooled)
1 teaspoon vanilla
1 large egg
1/2 cup honey
1/2 cup to 3/4 cup dark chocolate chips (divided)

Steps:

  • Preheat oven to 325 degrees F. Line a large baking sheet with parchment paper or a silpat.
  • Pull out 2 medium bowls, one for dry ingredients, one for wet.
  • In one bowl, whisk together the oats, flour, baking powder, cinnamon, and salt.
  • Melt the butter in the other bowl. You don't have to melt it all the way, if there are a couple lumps it's okay. Let cool slightly.
  • Whisk in the vanilla, then the egg. Whisk in the honey.
  • Add the wet ingredients to the dry ingredients and use a wooden spoon to stir until it has just come together (don't overdo it).
  • Save out about half of the chocolate chips. Use a sharp knife to roughly chop the remaining chocolate, then fold it into the dough.
  • Refrigerate the dough for about 30 minutes, or freeze for about 15 minutes.
  • Use your hands to shape the dough into roughly 15 cookies (or 12 if you eat a lot of dough like me...)
  • Place on the prepared baking sheet about 2 inches apart.
  • Bake in the preheated oven for about 12-13 minutes, or until they have just started to brown on the edges.
  • Once you remove them from the oven, immediately press the remaining chocolate chips into the tops of the cookies.
  • Let cool on the pan for a few minutes before removing to a cooling rack.
  • Drink with lots of milk!

1 cup oatmeal
1 cup white sugar
1 cup brown sugar
1/2 cup butter
1 1/3 cups flour

  • Make icing.
  • Mix all icing ingredients,and spread on hot cake.
  • Put under broiler for a few minutes til bubbly.

  • Preheat oven to 350 degrees F. Grease a cookie sheet. Using a mixer with the paddle attachment, mix together the butter, brown sugar, honey, egg and water thoroughly. Sift together the dry ingredients then stir in the oats. Add the dry ingredients to the wet and mix. Add any additional ingredients you've chosen. Drop by heaping teaspoonfuls onto the cookie sheet. Bake 12 to 15 minutes. Cool on a wire rack.

1 teaspoon baking powder
1 teaspoon cinnamon
1 cup grated carrot ((about 1 large))
1/2 cup grated apple ((about 1 medium))
1 cup raisins
1/2 cup sunflower seeds, chopped walnuts, or chopped pecans ((optional))
1/2 cup coconut oil ((or unsalted butter, melted and slightly cooled))
1/3 cup honey ((or maple syrup))

Steps:

  • Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.
  • Mix together all ingredients in a large bowl using a wooden spoon to start and then using (clean) hands to bring the batter completely together if needed.
  • Portion out 2-tablespoon sized balls of dough, place onto the prepared baking sheet, and press down until 1/4-1/2 inch thick. Space them about an inch apart-they won't spread, so close is okay.
  • Bake for 18-20 minutes or until lightly golden around the edges. Let cool on the baking sheet and serve.

1/2 cup steel-cut oats
1 1/4 cups boiling water
8 tablespoons (1 stick) unsalted butter, softened at room temperature
1 1/2 cups granulated sugar
2 eggs
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1/2 cup oat bran
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup apple sauce
1 pound cream cheese
1 cup powdered sugar
1/4 cup honey
1/2 to 3/4 cup chopped walnuts, toasted

Steps:

  • In a saucepan, place the oats and the water and simmer 15 minutes to soften slightly. Allow to cool to room temperature.
  • Preheat the oven to 350 degrees F. Lightly butter a 8-inch square cake pan.
  • In a mixer fitted with a whip attachment, cream the butter until smooth. Add granulated sugar and mix until smooth and fluffy. Add the eggs and vanilla and mix just until combined. Add the cooked oats and mix just until combined.
  • In another bowl, mix the flour, oat bran, baking soda, cinnamon, and salt. Working in 3 batches, add the dry ingredients to the butter-oat mixture, alternating with the applesauce mixing just until combined after each addition. Pour into the prepared pan. Bake until a tester inserted into the center of the cake comes out dry and almost clean (a few crumbs are fine), 40 to 50 minutes. Let cool completely. Turn cake out onto a square serving platter. Place strips of paper under the cake around all the edges.
  • To make the frosting, in a mixing bowl with a whip attachment cream the cream cheese on medium to high speed until light and fluffy. Turn the mixer to low and mix in the powdered sugar and honey. Frost the cake on the sides with a thin layer of frosting then use the remaining to cover the top and swirl it decoratively. Using your hands, press the toasted chopped nuts onto the side of the cake to coat it. Remove the paper strips before serving. Cut into 2-inch square pieces.
  • Notes about the recipe: This is a delicious hearty and healthful cake. The texture added by the cooked steel cut oats makes you thing there are nuts inside. I made it to help me use up ends of jars of oat bran in the freezer and steel cut outs in the cereal drawer after the hot cereal breakfast season was over for the year.

Steps:

  • Preheat oven to 350 degrees F, line 8" x 11" baking dish with unbleached parchment paper and spray with cooking spray. Set aside. Cut apples in half, core and slice thinly, using a mandoline or sharp knife.
  • In a large mixing bowl, add oats, flour, baking powder, cinnamon and salt; mix well with spatula. Add 1/2 cup honey, egg (quickly whisked in a small bowl), coconut oil and applesauce. Mix with spatula until wet dough forms.
  • To make the topping, in a medium bowl add pecans, oats, salt, cinnamon, vanilla extract, and stir well.
  • Place dough in prepared baking dish and level with spatula. On top lay apple slices overlapping and sprinkle with topping. Bake for 45 minutes.
  • Remove from the oven and let cool completely. Drizzle with remaining honey before slicing into 18 squares.

3 chamomile tea bags
2/3 cup oatmeal
1/2 cup plain yogurt
1/4 cup honey

Steps:

  • To make the chamomile rinse, bring the quart of water to a boil. Arrange the chamomile tea bags in a bowl pour the boiling water over the bags and let the tea steep and cool down to lukewarm.
  • While the rinse is cooling down make the mask. Put oatmeal in a blender and grind until it is a fine powder. Transfer the oatmeal powder to a small bowl with the remaining ingredients. Mix thoroughly. Using your finger tips apply the mixture to your face, avoiding your eyelids and the tender skin under your eyes. Keep the mask on for 15 minutes, just relax and read or let yourself stare at the wall, you need the break. After the 15 minutes, double check that the chamomile tea rinse is not to hot, be careful you're going to put this on your face, you want it to be lukewarm. Rinse face with the chamomile tea.
