2 bunches of carrots (10-13 carrots)
2 tablespoons stone ground mustard
3 tablespoons raw honey
salt to season

Steps:

  • Preheat oven to 400.
  • Cut off greens from carrots. Wash and place on a baking sheet.
  • In small bowl, add honey and mustard and whisk until combined.
  • Drizzle half of the mixture over the carrots. Rub into the carrots using your hand. Season with salt.
  • Bake for 15-20 minutes, or until tender.
  • Remove from oven and drizzle with the remaining honey mustard mixture.
  • Serve

Two carrots, sliced into matchsticks (about 2/3 of a cup)
pinch salt
1 1/2 tsp butter
1 1/2 tsp Dijon mustard
1 tsp honey

Steps:

  • Boil water in a small saucepan (about one quart)
  • Once the water is boiling, add the carrots and the salt.
  • Cook for 5-7 minutes until the carrots are tender
  • Drain the carrots and set aside.
  • Add the butter, mustard, and honey to the empty saucepan. Once the butter melts, add the carrots back to the pan and stir to coat them with the mustard mixture. When the carrots are glazed, remove and serve.

1 1/2 teaspoons salt
4 tablespoons butter
4 tablespoons honey

1/2 lemon, juice of
fresh ground black pepper or chopped parsley, for garnish

Steps:

  • Rinse carrots under cold water and put in a medium saucepan. Cover with water and add salt. Bring to a boil. Reduce heat to medium-low, cover, and continue cooking for about 15 minutes, or until tender. Drain and set aside.
  • In a saute pan, melt butter over medium-low heat. Add honey and brown sugar and cook, stirring, until sugar is dissolved. Add the lemon juice and gently stir in carrots, coating well. Continue heating, gently stirring, until carrots are hot and glazed. Serve immediately garnished with freshly ground pepper or chopped parsley, if desired.

50g butter
1 tbsp maple syrup
1 rounded tbsp wholegrain mustard

Steps:

  • Peel and cut the carrots into batons. (You can do this up to 24 hours ahead and keep them in a polythene bag in the fridge.) Tip them into a pan, pour in enough boiling water just to cover, bring back to the boil, then put a lid on the pan and cook for 4-5 minutes until the carrots are just tender.
  • Meanwhile, put the butter and maple syrup in a small pan. Heat until the butter is melted then stir in the mustard. Take off the heat. Drain the carrots and tip into a warmed serving dish.
  • Pour the warm maple glaze over the carrots. Taste and adjust seasoning to suit.
