Number Of Ingredients 10

2 1/2 cups all-purpose flour or 2 1/2 cups whole wheat pastry flour
1 tablespoon baking powder
1 1/2 teaspoons ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt
2 eggs, lightly beaten
1 cup buttermilk
2/3 cup brown sugar
1/2 cup melted butter
3/4 cup dried fig, chopped

Steps:

  • Preheat oven to 375F and lightly grease 18 standard-size muffin cups (2 1/2 inches) or line with paper muffin liners.
  • In a large bowl, combine flour, baking powder, cinnamon, baking soda and salt.
  • In a medium bowl, beat together the eggs, buttermilk, sugar, and melted butter.
  • Make a well in the center of the dry ingredients and gently mix in the wet ingredients, until just moistened.
  • Gently fold in figs.
  • Pour batter into muffin tins, filling about 2/3 full.
  • Bake for about 20 minutes, or until a toothpick inserted into the center come out clean and the tops are golden.
  • Cool on a rack in the tins for 5 minutes, then take out of the tins and cool completely on the rack or serve warm.
  • -OAMC instructions- Bake as directed and cool completely.
  • Wrap the muffins tightly in foil and place ina freeser bag for up to 3 months.
  • To reheat, heat muffins in foil for about 15-18 minutes or until warm in a 300F oven.

3/4 cup soft fresh goat cheese, crumbled (Neufch) or 3/4 cup reduced-fat cream cheese (Neufch)
2 tablespoons honey
1 teaspoon fresh lemon zest, grated
1 1/4 teaspoons vanilla extract, divided
2 cups white whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 large eggs
1 large egg white
3/4 cup dark brown sugar, packed
1 cup low-fat buttermilk or 1 cup fat-free buttermilk
1/3 cup extra virgin olive oil
1 1/4 cups dried figs, chopped
3 tablespoons turbinado sugar or 3 tablespoons granulated sugar

Steps:

  • Preheat oven to 425°F Line 12 (1/2-cup) muffin cups with paper liners or coat with cooking spray.
  • Thoroughly combine goat cheese (or cream cheese), honey, lemon zest and 1/4 teaspoon vanilla in a small bowl. Set aside.
  • Whisk flour, baking powder, baking soda and salt in a large bowl. Lightly beat eggs and egg white in a medium bowl; add brown sugar and the remaining 1 teaspoon vanilla and whisk until the sugar is dissolved, about 1 minute. Gradually whisk in buttermilk and oil until smooth. Add the wet ingredients to the dry ingredients and stir until just combined; do not overmix. Fold in figs.
  • Spoon half the batter into the prepared muffin cups. Add 1 generous teaspoon of the reserved cheese filling to the center of each muffin, and cover with the remaining batter. (The filling should not be visible.) Sprinkle the muffins with sugar.
  • Bake the muffins until the edges start to brown and the tops spring back when gently pressed, 13 to 15 minutes. Let cool in the pan for 5 minutes before turning out onto a wire rack to cool.

100g log rind-on goat's cheese
30g honey
20g pistachios, finely chopped
a few small thyme sprigs, roughly chopped

Steps:

  • Arrange the figs on a tray, cut-side up. Slice the goat's cheese into eight rounds, then cut each round in half.
  • Gently push the goat's cheese pieces into the cut sides of the figs, then season with a little salt and pepper, drizzle with the honey and scatter with the pistachios and thyme.

1 tablespoon good balsamic vinegar
12 fresh figs, washed and drained

Steps:

  • Use your fingers to roll the goat cheese into 24 1/2 teaspoon-sized balls.
  • Cut figs in half. Press a cheese ball into the center of each fig. Plate them and drizzle with vinegar. Serve within an hour.
