4 cups cornflakes cereal
½ cup honey
¼ cup milk
4 boneless, skinless chicken breast halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Place the flour in a small bowl and the cornflakes in a medium bowl. In a separate small bowl, mix the honey and milk. Dredge chicken in the flour, dip in the honey mixture, and thoroughly coat with the cornflakes.
  • Arrange chicken in the prepared baking dish. Bake 25 minutes in the preheated oven, or until no longer pink and juices run clear.

This is a variation of a recipe I had found. This is my ALL time favorite way to eat baked chicken. I can not say enough good things about this!!! Make sure to use chicken that is NOT frozen for best results. This turns out so nice and crispy. My picky daughter even eats it all up !!! We have even made chicken strips from it instead to make it more kid friendly. I serve it with white pepperd gravy to dip it in on put on top- YUM YUM..... LET ME STRESS AGAIN HOW IMPORTANT IT IS TO NOT USE FROZEN CHICKEN BREAST- IT WILL MAKE THE CRUST SOGGY ESPECIALLY ON THE BOTTOMS AS EXPEIENCED BY SOME MEMBERS

4 boneless skinless chicken breasts
3 cups corn flakes
2 tablespoons melted butter
1 large egg
1 teaspoon water

chicken poultry seasoning

Steps:

  • preheat oven to 400 degrees.
  • salt, pepper and put chicken poultry seasoning on breast front and back.
  • mix egg and water in a bowl.
  • crush cornflakes and mix in butter ( i use land of lakes) and more chicken poultry seasoning to taste.
  • dip breast into egg/water mixture and roll in the cornflake crust to coat. Mixture will be moist so you may have to pat it on there.
  • I also make extra crust if needed and pat it onto tops of breast once I place them onto my baking sheet.
  • bake at 400 for about 30 mins or untill done.
  • I serve with a veggie on side and mashed potatoes with white peppered gravy. I always serve extra gravy to dip chicken inches.

Many moons ago this was in the monthly rotation of recipes at our house. I made it again recently and wondered why I took it out of the rotation. It is liked a fried chicken, but is coated with Cornflake crumbs and baked. Easy too.

  • 1. Preheat oven oven to 350-degrees.

1.5 lb chicken breast
3/4 cup light buttermilk
1 cup cornflake crumbs
1/2 tsp kosher salt
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp ground mustard
1/2 cup plain non fat Greek yogurt
1 tbsp Dijon mustard
1 tbsp honey

Steps:

  • If using chicken breasts, slice them into 8 thinner pieces to form chicken-tender shaped pieces. If using tenderloins, remove the tendon from the middle.
  • Add the buttermilk to a bowl and submerge the chicken pieces.
  • Cover the bowl and keep in the fridge for a minimum of 4 hours to marinate, or up to 24 hours.
  • If using an air fryer, preheat at 385F. If using the oven, preheat at 450F.
  • When ready to cook, combine the cornflake crumbs with the garlic powder, onion powder, salt, and ground mustard.
  • When ready to cook, remove the chicken from the buttermilk and scrape off any excess, leaving each tender wet enough for the breading to stick.
  • Dredge each piece of chicken in the cornflake mixture.
  • Air Fryer Method: Spray the basket of the air fryer with cooking spray and add the breaded chicken pieces. Spray the tops with more cooking spray. Air fry at 385 for 15 minutes. Halfway through, flip the tenders and spray the other side. (Work in two batches to not overcrowd the tenders).
  • Convection Bake Method: Place a wire rack on top of a baking sheet. Spray the rack with cooking spray, and lay the breaded tenders on top. Spray the tops with cooking spray. Bake at 450 for 15 minutes; after 7 minutes, flip the pieces and spray the other side.
  • Whisk together the yogurt, Dijon and honey.

This is a delicious "unfried" fried chicken recipe. Chicken tenders are dipped in cornflakes and baked in the oven. I recommend placing the cornflakes in a ziploc bag and using a rolling pin to crunch the cornflakes into very tiny pieces (to help coat the chicken better). Honey and mustard are used to give the chicken extra flavor without adding any extra fat. Be sure to watch these carefully because the cornflakes can burn easily in the oven. For an Italian twist try adding 1/2 teaspoon dried basil and oregano to the cornflake mixture. Or, add a pinch of chipotle chili powder for a Mexican twist. Enjoy!

1 cup Buttermilk
2 tsp Salt
1 tsp Black Pepper
½ tsp of Cayenne Pepper, divided
2 tbsp Flour
2 tbsp Cornstarch
1 tsp Garlic Powder
½ tsp Onion Powder
½ tsp Paprika
4 Eggs
3 cups finely crushed corn flakes
Olive Oil, for brushing
½ cup Hot Honey, see recipe notes
2 tbsp Butter

Steps:

  • Place chicken in large gallon zip lock bag. Add buttermilk, salt, pepper, ¼ tsp of cayenne pepper and massage to evenly cover the chicken. Let marinate for at least 30 minutes or overnight.
  • Preheat oven to 425 degrees. Line a baking sheet with parchment paper (or aluminum foil), then place a cooling rack on top. Spray with nonstick cooking spray.
  • In a shallow bowl or dish, combine the flour, cornstarch, garlic, onion, paprika & remaining ¼ tsp of cayenne pepper. In another shallow bowl whisk together the eggs. In a third shallow bowl, add the crushed corn flakes.
  • Remove each piece of chicken from the buttermilk mixture, shaking off the excess, and dredge in flour mixture. Shake off excess flour and dip in egg mixture. Shake off excess egg and lastly coat in the cornflakes, pressing to ensure the coating sticks.
  • Place on prepared baking sheet and repeat with remaining chicken pieces.
  • Lightly brush the tops of each piece of chicken with olive oil and bake for 15-20 minutes. Flip each piece of chicken over and bake another 10-15 minutes or until chicken is cooked through and outside is golden and crispy. Sprinkle each piece of chicken with salt immediately after taking it out of the oven.
  • Add hot honey and butter to small saucepan over medium low heat. Stir occasionally until butter is fully melted. Remove from heat and set aside.
  • Brush or drizzle with the hot honey and serve warm.

1 cup (125g) all-purpose flour (spoon & leveled)
5 cups (140g) corn flakes cereal, crushed lightly
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon garlic powder
1/4 teaspoon smoked paprika
2 large eggs
1/4 cup (60ml) milk
3/4 cup (222g) your favorite BBQ sauce (I like Sweet Baby Rays Original)
1/4 cup (80g) honey
1/4 cup (68g) ketchup

Steps:

  • Preheat oven to 400°F (204°C). Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
  • Place the bite-sized pieces of chicken in a large bowl. Add flour and stir to coat each piece. Set aside.
  • Place the corn flakes, salt, pepper, garlic powder, and smoked paprika into a large bowl. Set aside. Whisk the eggs and milk together in a small bowl.
  • This next step gets your hands a little messy so have paper towels nearby. Dip each piece of chicken in the egg mixture, letting any excess drip off. Then generously roll in the cornflake mixture, shaking off any excess. Place onto the prepared baking sheet. Repeat with all chicken bites.

Position a rack in the upper third of the oven. Preheat the oven to 350°F. Lightly oil a baking sheet.
Rinse and pat dry:
3 1/2 pounds chicken parts
Season with:
Salt and ground black pepper to taste
ground black pepper
Whisk together in a shallow bowl:
2 large eggs
1/4 cup milk
Combine in a wide, shallow bowl:
2 1/2 cups crushed corn flakes
2 teaspoons salt
1/2 teaspoon ground black pepper

Steps:

  • Dip the chicken pieces in the egg mixture, then coat with the corn flake mixture, patting with your fingers to make the crumbs adhere. The chicken can be prepared to this point up to 3 hours in advance and kept, uncovered, in the refrigerator. Arrange the chicken skin side up on the baking sheet. If you wish, drizzle over the chicken:
  • 2 to 3 tablespoons melted butter
  • Bake until the chicken is crisp and golden, 45 to 60 minutes. Serve immediately or at room temperature.

1 cup buttermilk, well shaken
4 cups cornflake crumbs
8 assorted chicken pieces, skin on
Salt and pepper

Steps:

  • Preheat the oven to 350 degrees F. Line a cookie sheet with aluminum foil and spray the foil with cooking spray.
  • Shake the hot sauce into the buttermilk and pour into a shallow dish. Place the cornflake crumbs in another shallow dish. Dip each piece of chicken in the buttermilk, and then roll it in the crumbs. Place the coated chicken pieces on the cookie sheet and sprinkle with salt and pepper.
  • Bake the chicken until the crust is golden brown and the meat is no longer pink at the bone, about 1 hour. Check this with the point of a sharp knife. Remove the pieces from the pan and serve while the chicken is warm.
