Honey-Chile Roasted Sweet Potatoes image

Roasting sweet potatoes with honey and ancho chile creates an intense combination of sweet and heat. Finish with a little grated cheddar cheese for a very different take on traditional cheese fries.

Steps:

  • Cut 3 sweet potatoes lengthwise into 8 wedges each. Toss with 2 tablespoons each olive oil and honey, 1 teaspoon each ancho chile powder and kosher salt and a few grinds of pepper. Spread on a baking sheet and bake at 425˚ F, flipping once, until lightly browned and tender, 25 to 30 minutes. Top with finely grated aged cheddar and chopped chives.

3 medium potatoes, Soaked and Peeled
2 medium onions, Finely Chopped
1 teaspoon ginger paste
2 teaspoons garlic paste
2 teaspoons soya sauce
2 teaspoons vinegar
1 teaspoon red chili powder
1/2 teaspoon chili sauce
2 tablespoons tomato sauce
1 tablespoon honey
3 tablespoons cornflour
1/2 teaspoon red chili pepper flakes
oil (for frying)
water, as required
salt
sesame seeds (for Garnishing)
green onion (for Garnishing)

Steps:

  • Cut the potatoes in finger shape wedges.
  • Take a bowl add corn flour, salt, few drop water and make a smooth batter. Keep aside for few minutes.
  • Heat oil in a pan. Dip the potatoes in to the batter and fry till the turns in to golden. Drain fried potatoes on absorbent paper.
  • In the same fry pan put 2-3 tablespoon oil. Add onion, ginger-garlic paste and saute till the onion become soft. Then add soya sauce, vinegar, red chili powder, chili sauce, tomato sauce and honey. Mix well. Cook for a minute.
  • Add fried potatoes in mixture and cook over the lower flame. Remove from heat.
  • Sprinkle with red chili flakes and garnish with sesame seed and green onion serve hot.

  • To prepare this amazing Crispy Honey Chilli Potato, wash the potatoes and keep them aside. Put a pressure cooker on medium flame and add the potatoes in them along with enough water. Also, add half a teaspoon of salt. Pressure cook them for 1 whistle and let the steam release on its own. The potatoes should be soft, but not squishy. Do not overcook the potatoes. Once the steam is released, drain the water and peel them in a large tray. Cut them nicely in a long shape, just like French fries and keep aside until required.
  • Take a large bowl and mix together crushed garlic, red chillies, salt and cornflour. Use a little water to prepare the batter, and mix well. Keep aside for 3 to 5 minutes. Now, add the potatoes and toss well so that the mixture completely coats the potatoes.
  • Now, put a wok over medium flame and heat oil in it. When the oil is hot enough, deep fry the potatoes till they are crispy. You can also double fry them if the required crispiness is not attained in one go.
  • Drain excess oil and place them on an absorbent paper. Now heat a little oil in a wok. When the oil is hot enough, add 2 chopped garlic cloves, sesame seeds, vinegar and tomato chilli sauce along with the potatoes. Cook for a minute and then turn off the heat. Pour honey, seasonings and onion shallots.

  • Wash potato fingers well in running water and set aside. This removes any extra starch in the potatoes.
  • Mix together corn flour, all purpose flour, chilli powder, chilli paste and salt. Coat the potato fingers evenly with this flour mix. Heat oil in a wok or karahi and deep fry the potato fingers in batches till the potato is half cooked. It's important that you drop one potato finger at a time in to the oil so that they don't stick together (watch video above to see how to do this). Remove the potato fingers on a tissue lined plate and let them cool.
  • For the second coating, make a medium thick batter with all purpose flour, corn flour and pepper powder by adding just a few tablespoons of water. Dip the half done fries in this batter and fry again in hot oil till crisp and golden. Drain on a kitchen paper and keep aside.
  • Heat 2 tablespoons oil in another wok, add chopped garlic and stir fry for a few seconds. Add chili flakes and sesame seeds and saute for another minute to toast them. Now add vinegar, soy sauce, ketchup, honey and the red chili paste and stir together. Mix corn flour with 1/4 cup water to make a slurry and add this to the honey- vinegar mixture in the wok and stir for a few seconds till it thickens.
