- Preheat the oven to 190C/gas 5/fan 170. Arrange the chicken in a shallow ovenproof dish. Mix together the honey, lemon zest and juice, oil, salt and pepper, then pour over the chicken breasts and turn them around until well coated.
- Roast the chicken breasts for 40-45 minutes, turning them halfway through the cooking time, and basting occasionally, until they are golden brown and shiny and the marinade has almost evaporated. Leave to cool, then wrap in foil and chill until ready to eat. (The chicken may now be frozen for up to 1 month. Defrost before serving.)
- On the day, spread the lettuce over a large platter, tearing up any large leaves. Slice the chicken breasts, keeping them together, then arrange over the lettuce.

- Put 2 chicken breasts, skin side up in a small baking dish and season.
- Squeeze the lemon into a bowl and stir in the honey and soy sauce. Spoon the mixture over the chicken, then tuck the squeezed-out half of lemon between the pieces (this will moisten and add flavour to the chicken).
- Roast the chicken breasts in a baking dish, uncovered, for 30-35 minutes in a preheated oven (190C/gas 5/fan oven 170C). Cook until done and richly glazed, basting with the juices at least twice. To check if they are done, prod the chicken with your finger - if it's still a bit soft, give it a bit longer.
- Serve with salad and potatoes roasted with herbs and garlic.

- In a large bowl mix all cornstarch, flour, baking powder, water, salt, egg, and egg white (batter ingredients) together until smooth. Cover and allow the batter to site for at least 30 minutes. Add the chicken to the batter tossing to coat. Heat a deep fryer to 350°F Fry chicken bits in patches for 2 minutes or until batter becomes firm. Drain on paper towels. To make the sauce. Heat 1 ½ tablespoons of oil in your wok. Add garlic and ginger and stir fry for 30 seconds. Add salt, honey, vinegar, and water. Mix well. Combine 1 teaspoon of water with 1 teaspoon of cornstarch. Add to the sauce and simmer for 2 minutes. Makes 4 servings

Crisp fried chicken strips in a sweet sauce. Despite the name there is no honey in this recipe. I have not yet tried it, it is for an ISO request on the recipe board. Note: When the recipe was first posted, there were an additional 2 Tablespoons of salt listed in the batter. This was a typo and never should have been there. - MIX THE BATTER INGREDIENTS together in a medium-sized bowl; it should be thick and smooth.
- Allow the batter to sit, covered for at least 30 minutes.
- Combine the chicken with the batter.
- Heat a wok or large deep skillet until it is hot and add the oil for frying.
- When the oil is barely smoking, deep-fry the chicken for 2 minutes or until the batter is just firm.
- You should do this in several batches.
- Remove the chicken with a slotted spoon and drain on paper towels.
- TO MAKE SAUCE: Heat a small saucepan; when it is hot, add the oil, ginger and garlic, and stir for 30 seconds.
- Then add the rest of the sauce ingredients and simmer for 2 minutes.
- Keep warm.
- Reheat the oil in the wok until it is very hot, but not smoking.
- Deep-fry the chicken again until it is golden and crisp, about 1 minute.

- Place the chicken pieces in a large bowl, then add the buttermilk, 1 tablespoon of the salt, 1 tablespoon of the pepper and 1 teaspoon of the paprika. Mix to combine. Cover and marinate in the refrigerator for at least 1 hour and up to 4 hours.
- In a large, deep pot or Dutch oven pour enough of the oil to fill the pot 3- to 4-inches. Heat over medium-high heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F. Set a cooling rack over a baking sheet.
- In a large bowl, whisk to combine the flour, garlic powder, onion powder, the remaining 3/4 tablespoon salt, 1/2 tablespoon pepper and 1 tablespoon paprika. Whisk to combine the dredge.
- Lift the chicken from the buttermilk, then coat the pieces completely in the flour. Transfer the chicken to a baking sheet or large plate.
- Working in batches and being careful to not overcrowd the pot, add the legs and thighs to the hot oil and cook, turning and monitoring the oil temperature, until crisp and golden brown, 5 to 6 minutes per side. Transfer the chicken to the prepared rack. Add the wings and breast pieces to the oil and cook until deep golden brown, 3 to 5 minutes per side. - Mix all the ingredients for the sauce in a small bowl.

- ⭐️Sautee the chicken. Turn instant pot to saute mode and heat oil. Add chicken and saute until browned.

- Cut chicken into serving pieces: breast into halves, legs, thighs, and wings separated for a total of 8 pieces. Clean thoroughly. Heat shortening in a heavy duty skillet pan to 360 degrees. - Cube the chicken breast and add it to a bowl. Add in the ginger-garlic paste, salt, soy sauce and the red chilli flakes. Soy sauce is salty. So go easy on the salt. - Do not add any water. The moisture from the chicken is enough. Saute for about 5-6 minutes until the chicken is cooked and relatively dry. Once the chicken is cooked and dry, add in the honey. Saute for a minute.
- Make a corn starch slurry by adding a tablespoon of cornstarch to half a cup of water. Add it to the chicken.
