5 cinnamon sticks
1 tablespoon cardamom pod, cracked
1 cup honey

Steps:

  • Bring all ingredients to a boil; reduce heat immediately and simmer for 5 minutes.
  • Remove from heat and let stand for 24 hours.
  • Reheat over low heat and strain to remove cinnamon sticks and cardamom.
  • Place in sterilized jars and garnish with fresh cinnamon sticks.

Mmmm! Honey and Cardamom is such a pleasant combination. These carrots make an excellent side dish to my Roasted Chicken with Curry Leaves and Spices.

2 cups carrots, sliced
6 cups cold water
2 tablespoons butter
1 tablespoon honey
3/4 teaspoon ground cardamom
1/4 teaspoon salt, to taste

Steps:

  • Bring carrots in salted water to a boil and cook until just before done. Strain and place in ice water (skip the ice water if serving immediately).
  • Before serving, melt butter in a sauté pan over medium heat. Add carrots to heat through and finish cooking.
  • Add honey and cardamom, toss, adjust salt and serve.

2 cups unsalted butter, softened (plus more for greasing)
1 cup sugar
3 cups flour, sifted
11 teaspoons ground ginger
3 1/2 teaspoons ground cardamom
2 teaspoons baking powder
2 teaspoons kosher salt
1 1/2 cups confectioners' sugar
3 tablespoons golden syrup (or dark corn syrup)

Steps:

  • Heat oven to 375°. Grease a 9" x 13" baking dish; set aside.
  • Put 18 tablespoons butter and sugar in a large bowl; beat with a handheld mixer on medium until fluffy.
  • Add flour, 3 teaspoons ginger, 1 teaspoons ground cardamom, baking powder, and 1 teaspoons salt; mix until incorporated but still crumbly.
  • Transfer mixture to reserved dish; press flat with your hands.
  • Bake until shortbread is golden brown, about 20 minutes. Let cool.
  • In a 1-qt. saucepan over medium heat, combine remaining butter, ginger, cardamom, and salt and the confectioners' sugar and syrup.
  • Bring to a boil and pour over shortbread; cool.
  • Cut into 2" rectangles.

  • Combine the oats, almonds, sugar, and ground cardamom together in a large bowl. In a small saucepan, melt together the butter, honey and salt, stirring to dissolve the salt. Pour over the oat mixture, tossing to combine thoroughly.
  • Dump the mixture onto the lined baking sheet, and spread it into a thin sheet no thicker than an almond. Ideally, the edges will be slightly thicker than the center as they will bake faster. Lay the second piece of parchment over the granola, and place the second sheet pan on top, right-side up, making a little granola sandwich.
  • Slide the whole thing into the oven and bake for 20 minutes. Rotate and continue baking another 10 - 20 minutes, peeking under the parchment to make sure the edges aren't burning, until the granola is a rich golden brown. It will still be soft, but should crisp up as it cools. (If the granola is still soft after cooling, return it, uncovered, to a low oven (around 150º) and let it dry out for 20 minutes or so.)
