SCOTTLEY'S BASIC YELLOW CAKE
Very simple, but delicious cake. Can be used with most any kind of frosting.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 - 9 inch round cake pans.
- In a large bowl, cream butter and sugar together until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- Sift flour, baking powder, and salt together in a separate bowl. Add flour mixture to butter mixture alternately with milk, mixing just until incorporated. Pour batter into prepared pans.
- Bake in preheated oven for 40to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

POUND CAKE WITH RUM TOPPING
Delicious! A holiday favorite. Amaretto can be substituted for the rum if desired.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan. Sift together the flour and baking powder; set aside.
- In a large bowl, cream together the butter and confectioners' sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with 1 cup water, mixing just until incorporated. Spread into prepared pan.
- Bake in the preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- In a small saucepan over medium heat, combine 1 cup sugar, 1/4 cup water, and 1/2 cup butter. Bring to a boil, stirring until sugar is dissolved. Remove from heat, and stir in rum. Pour hot syrup over hot cake. Let soak for 20 minutes.

THE BEST HONEY BUNDT CAKE
This is a wonderful honey cake recipe, I have been making this for years, it always turns out fantastic, the addition of tea makes it taste so good, and moist, you will love this recipe, I am sure. ENJOY!

Steps:
- Set oven to 325 degrees.
- Set oven rack to middle position.
- Grease a Bundt pan.
- In a bowl, sift together flour, baking powder, cinnamon, baking soda, ginger, allspice and salt; set aside.
- In a small saucepan bring honey JUST to a boil; remove from heat, and stir in tea and grated lemon peel; set pan aside and cool slightly.
- In a bowl, beat eggs for about 5 minutes, or until thick, pale and frothy.
- Beat in oil and vanilla or brandy (if using).
- Beat in sugar 2 tablespoons at a time until well blended.
- Alternately fold in flour and honey mixture (batter will be fairly thin).
- Add/fold in raisins.
- Pour batter into prepared Bundt pan.
- Bake in center oven for 60-70 mins, or until cake tests done.
- To make glaze: in a small bowl, whisk together, 1/2 cup icing sugar and 4 tsp fresh lemon juice to make a glaze, drizzle over cake.
