- In a large bowl, combine 1-1/2 cups flour, sugar, yeast and salt. Add water and 2 tablespoons butter; beat on medium speed for 3 minutes or until smooth. Stir in cheese and enough remaining flour to form a soft dough., Turn onto a lightly floured surface; knead until smooth and elastic, about 4-6 minutes. Cover and let rest for 10 minutes. Divide into 13 pieces. Shape each into a ball. Place in a greased 9-in. round baking pan. Cover and let rise in a warm place until doubled, about 30 minutes., Preheat oven to 375°. Bake rolls 11-14 minutes or until lightly browned. Combine honey, garlic salt and remaining butter; brush over rolls. Remove from pan to wire rack.

BAKED HAM AND CHEESE ROLLS WITH HONEY MUSTARD SAUCE
Classic ham and cheese sandwiches meet Stromboli in these baked rolls made with pizza dough and finished with honey mustard poppy seed glaze. A crowd-pleaser for kids and adults.

- If the pizza dough is refrigerated, take it out of the fridge 20 minutes before you begin so that it comes to room temperature (this will make it easier to work with).
- Preheat oven to 400 degrees F. Spray an 8 x 8 baking dish with nonstick cooking spray.
- Roll pizza dough out on a lightly floured surface into a rectangle that is roughly 16" x 8" (just use the baking dish as a guide, no need to be exact).
- Heat butter in the microwave until melted. Brush the surface of the rectangle lightly with melted butter (this should require about 1 Tablespoon of butter), and set the remaining butter aside.
- Top the pizza dough with ham and then with cheese each in a single layer with no slices overlapping.
- Starting with the edge closest to you, roll the pizza dough up into a log so that the ham and cheese is on the inside. Use a serrated knife to slice the roll into 9 even pieces. Place the pieces in the prepared baking dish and set aside to rise for 20 minutes.
- Whisk remaining butter with mustard, honey and poppy seeds. After the dough has risen slightly, pour honey mustard glaze over the top of the rolls. (This will look like a lot of sauce, but that's what makes it so good!)
- Bake the rolls until the dough is cooked through and golden on top, 30 to 40 minutes.
- Serve rolls warm or at room temperature.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- In a bowl, mix together butter, Dijon mustard, Worcestershire sauce, poppy seeds, and dried onion. Separate the tops from bottoms of the rolls, and place the bottom pieces into the prepared baking dish. Layer about half the ham onto the rolls. Arrange the Swiss cheese over the ham, and top with remaining ham slices in a layer. Place the tops of the rolls onto the sandwiches. Pour the mustard mixture evenly over the rolls.

- In the bowl of an electric stand mixer fitted with the dough hook attachment, add the warm milk, yeast and honey and let mingle for about 10 minutes until foamy and frothy (this lets us know our yeast is working). Add in the flour, potato flour, butter, egg and sea salt and mix on low at first, working your way up to medium high. Run the machine for 10 minutes. The dough will stick to the bottom of the bowl but should be clearing the sides. Some minor sticking on the sides is fine. The dough should smooth out the longer it is kneaded. Make sure to scrape the sides and bottom of the bowl so that everything is incorporated.
- Lightly grease a large bowl with olive oil. Scoop the dough into this bowl and let rest for 1 1/2 hours or until double in size. **At this point, the bowl could be covered tightly and stashed in the fridge for 24 hours. When ready to use, just move onto the next step, no need to bring the dough to room temperature.
- In a small bowl toss the shredded gruyere with the minced thyme. Set aside. Lightly grease and line a 9x13 baking dish with If You Care Parchment Paper, letting the excess hang over the sides…this will make it easier to lift the rolls out of the dish.
- When read to bake, separate the dough into 15 equal-sized pieces. Total dough weight should be about 789g; each dough ball should weigh roughly 52g. Roll the pieces into balls (this is an excellent video on rolling dinner rolls) and then flatten them into about 2-inches circumference (no need for a rolling pin, you can use your hands). Fill with 1 1/2 tbsp of the gruyere-thyme mixture. Grab the edges of the dough and pinch them together to seal the cheese in the middle. Place the seam side down and gently roll until they’re a perfect little ball again. Set the balls, even-spaced apart from each other, in the prepared baking dish and cover loosely with a damp dish towel. This is a perfectly imperfect process. Some cheese will spill out, that’s fine. Let it stick to the bottom or the outside of the dough, it will all bake up beautifully. Let rest for 30-60 minutes or until almost double in size in a warm, draft-free area.
