DELICIOUS FUDGE RECIPE WITH EVAPORATED MILK AND NO MARSHMALLOWS
Fudge is a classic treat that many people grew up loving. Its smooth and creamy taste makes for a delectable snack. This delicious fudge recipe with evaporated milk and no marshmallows is the perfect treat to satisfy your sweet tooth.

- Prepare the 13 x 9-inch pan by laying down a sheet of aluminum foil followed by a sheet of parchment paper. Lightly coat the parchment paper with cooking spray.
- In a large saucepan, whisk together evaporated milk and sugar. Bring to a boil over medium heat and add the candy thermometer. Allow the mix to reach 243 degrees Fahrenheit, stirring regularly for approximately 10-20 minutes.
- While the sugar and evaporated milk is cooling, add the butter and chocolate to a separate bowl.
- Pour the hot mixture over the chocolate and butter. If the evaporated milk and sugar do not appear to be smooth use a strainer while pouring it to remove any lumps. Whisk immediately after pouring with egg whisk.
- Add the vanilla to the mixture and whisk until fully combined.
- If your fudge mix appears grainy or not smooth, add in half and half. Add in one tablespoon at a time until the fudge is smooth and shiny.
- If you desire, add the pecans to the fudge.
- Using a spatula, pour the fudge into the pan. Use the spatula to evenly spread out the fudge.
- Place the fudge in the fridge uncovered until it is fully cooled and set.
- Once the fudge is set, cover with plastic wrap and return it to the fridge for three hours.
- After the fudge has been in the fridge for at least three hours, flip the fudge over onto a cutting board and remove parchment paper. Dip a sharp knife into hot water, then trim the edges of the fudge and cut into squares.
- Fudge makes great presents for the holidays to give your friends and family.

This is a fantastic fudge. This is my grandmother's recipe. Actually the French Canadian name for this recipe is sucre a la creme. It's delicious and also very rich and sweet for all you sweet lovers.

- In pot melt butter.
- Add brown sugar and evaporated milk.
- Bring to a medium boil.
- Boil for exactly 5 minutes.
- Remove from heat.
- Add icing sugar and mix well with electric mixer (Do this fast enough because it will start to harden around the edges of the pot).
- Add walnuts.
- Pour in a 9x9 square pan.
- Cool completely before cutting into squares.

- Line an 8x8 inch dish with foil.
- In a medium bowl, beat cream cheese until smooth. Beat in salt and vanilla. Beat in confectioners' sugar, a little at a time, until smooth. Stir in melted chocolate. Fold in walnuts. Spread into prepared pan. Chill 1 hour, until firm. Cut into one inch squares.

SUPER EASY & DELICIOUS FUDGE
If you like fudge and you like easy, this is the recipe for you! My grandma used to give this to us for Christmas served in circular tins, separated by wax paper. I prefer plain chocolate fudge, but have been known to insert some Andes mints in here or there. I went through a phase in high school where I made this almost bi-weekly.

- Spray a large bread pan (or two small bread pans) with a non-stick spray. Also, prepare a double boiler by getting the water boiling. Also, this is a recipe which requires constant stirring, so have a spoon handy!
- In the double boiler, add the butter, vanilla and sweetened condensed milk and melt together. Note: if you don't have a double boiler, create a makeshift one by boiling water in a pot and placing another similar-sized pot over it. It keeps you from burning the chocolate by providing an even heat source.
- Once the mixture is blended and easy to stir, add the chocolate chips, stirring constantly.
- Stir until the mixture is glossy and well blended with no chunks.
- Pour into the prepared bread pan(s). If desired, insert Andes chocolate mints throughout the fudge by pushing it into the top. Let cool completely before serving. (Don't put into the refrigerator to cool either.) Enjoy!
