HOMEMADE LEMON DROPS
Homemade lemon drop candies give you a zesty flavor pop anytime you need a break. They're made with real lemon juice and zest for authentic taste.

Steps:
- Juice and zest the lemon with a fine grater.
- Measure the water and sugar into a saucepan over a medium low heat.
- Heat, stirring, until the sugar dissolves.
- Add the lemon zest and bring to a rolling boil. If you have a candy thermometer, it should read 250 Fahrenheit.
- Remove the saucepan from the heat. Add the lemon juice, honey, and food coloring if desired. Stir together.
- Return to the heat until the mixture comes to another boil.
- Strain out the lemon rind (or leave it in as you like). Pour the candy mixture onto a lightly greased baking tray.
- Allow it to cool for a few minutes, just until it's cool enough to touch.
- Use a spoon or clean fingers and pull out small pieces one at a time. Roll into a ball and dust with icing sugar.

- Spray mini muffin pans with non-stick spray; set aside.
- Whisk together flour, sugar, salt, and baking soda in a mixing bowl; set aside.
- Melt butter in a small saucepan over medium heat. Add water and bring to a boil.
- Pour hot mixture over dry ingredients and beat with a hand beater till barely blended. Beat in the sour cream, egg, zest, and lemon juice till smooth.
- Scoop batter into muffin pans. Bake at 325° for about 12 minutes. Let cool for 5 minutes, then turn onto cooling racks. Cool completely before glazing.
- Dip lemon drops top side down into the glaze. Let excess glaze drip off into the bowl, then invert lemon drops bottom side down onto cooling racks. (Place waxed paper underneath the cooling racks for easier clean up.) Let sit till glaze hardens.

LEMON DROP COOKIES
This is one of our favorite Christmas cookie recipes. It's a buttery cookie with a tart lemon curd in the center. The only drawback - they don't stack very well due to the lemon curd filling. But they don't last that long anyway in our house!! My kids love them. Note: serving size is 2 cookies.

- Make Cookie: Combine the 1/2 pound butter and confectioner's sugar in a mixer bowl. Beat together for 30 seconds.
- Add flour and mix well.
- Using 1 1/2 - 2 teaspoons dough per cookie, roll into balls and place an inch or 2 apart on a greased or parchment lined baking sheet.
- Using a glass coated with cooking spray or your hand (I just use my fingers), lightly flatten the balls into a circle. Using your thumb or the back of a 1/4 teaspoon measuring spoon, create a dent in the center of each cookie.
- Bake in preheated 350 oven 10-12 minutes. Remove to rack and cool.
- Make lemon Curd: In a small non-reactive saucepan, combine the egg, granulated sugar, 1 1/2 T. butter, lemon juice and lemon rind. Cook over medium-low heat, stirring constantly until thick and bubbly. Or, use a double boiler. Let cool 5 minutes. Spoon @ 1/2 t. curd into dent of each cookie. Sprinkle with confectioners sugar if desired.
LEMON DROP
Mix vodka, lemon juice and triple sec, shaken with ice to make this refreshing lemon drop cocktail. Dip the rim of the glass in sugar to impress party guests

- Put 1 martini glass in the fridge to chill. Mix the white caster sugar with the finely grated zest of the lemon, and set aside.
- Pour the vodka into a cocktail shaker and add the triple sec, lemon juice and a handful of ice. Shake really well until the outside of the shaker feels cold.
- Dip the rim of the chilled glass in water, shake off the excess then dip into the sugar and lemon zest mix.
- Strain the contents of the shaker into your prepared glass and enjoy.

- Add the first 4 ingredients to a large pitcher (55 oz.).
- Stir to dissolve the sugar.
- Cover and chill for at least 4 hours.
- Moisten the rim of cocktail glasses with water or lemon juice; dip rim of glasses in granulated sugar.
- Chill glasses in freezer for 1 hour before ready to serve.
