When it comes to sub rolls, I prefer mine light and fluffy. I make up a big batch of these and freeze them for later use.

Steps:
- Dissolve sugar in water and add yeast to proof. Rest one to two minutes.
- Melt butter and, along with the salt, stir into yeast mixture.
- Mix in flour, 1 cup at a time until desired consistency is reached (this dough should not be terribly stick to the touch, but should have plenty of "give" and not be too tough).
- Knead until VERY well developed (important!). Your dough is finished when you can tear a small piece off, roll into a ball and stretch to form a nearly transparent "window" between your fingers without it tearing.
- Cover with plastic wrap and let stand until doubled in bulk (approx 40 minutes).
- Lightly dust a small amount of corn meal over well-greased pans, roll your dough into long, thin "logs" and place about 3" apart on the pans. Slash each loaf every inch and a half with a knife, brush with egg white and sprinkle with sesame seeds if desired.
- Let double in size.
- Bake in a 400°F oven until golden brown.

Homemade Hoagie Rolls make for the best sandwich. Nothing beats a loaf of fresh homemade bread, and these hoagie rolls don't disappoint!

Steps:
- In a large stand mixer, combine milk, yeast, sugar, salt, butter, egg and 3 cups flour. Knead on low until a smooth dough ball forms, adding more flour ¼ cup at a time to achieve desired texture. Your dough should be tacky, but not sticky.
- Transfer dough to a lightly greased mixing bowl, cover with a towel, and let rise until double in size, about 1 hour.
- Roll dough into a large rectangle, about 1/4 inch thick, and 24 inches wide. Cut the dough into 4 strips, about 6 inches wide on each.
- Roll strip up. Continue rolling gently until ends and seams are pinched together (otherwise it'll unroll in the baking process).
- Put rolls on a lightly greased jelly baking sheets. Let rise about 30 minutes.
- Preheat oven to 375 degrees. Bake rolls for 12-15 minutes until lightly browned.

- In a mixing bowl, dissolve the yeast in 1/2 cup warm water add 1 T. sugar and then let stand about 5 minutes.
- Add remaining water and sugar. Beat in oil, salt and 4 cups flour until smooth. Stir in enough flour to form a soft dough.
- Turn onto a floured board. Knead until smooth and elastic for about 6-8 minutes.
- Place in a greased bowl turning once to grease the top.
- Cover and let rise 45 minutes.
- Punch dough down. Turn onto a lightly floured board, divide into 18 pieces.
- Shape into an oval.
- Place 2 inches apart on a greased baking sheets.
- With scissors cut a 1/4-inch slash across the top of each.
- Cover and let rise 20 minutes.
- Bake at 400° for 13-18 minutes until golden brown.
- Remove to wire racks to cool.

FRENCH HOAGIE ROLLS
This is basically a standard French bread loaf recipe scaled up and modified for 4 hoagies, with my own observations and tips regarding making them suitable for eating sandwiches. The key point is that biting through the crust of a roll into a sandwich requires a crust that isn't tough.

Steps:
- Combine yeast with tepid but not warm water and let sit until convinced the yeast isn't dead, 10 minutes maximum.
- In a large bowl, combine most of the flour, oil and salt, add the water/yeast, and stir/add flour until the ball pulls away from the bowl.
- Sprinkle flour over a kneading surface and over the ball, and knead for about 7 minutes.
- Lightly oil a bowl and allow to rise until doubled, usually about 50-60 minutes if in a barely warm place.
- Punch down the dough, divide into quarters, and shape into 4 hoagies roughly 6" x 3.5" or so. Allow to rise for 20 minutes.
- Preheat the oven at 425, with a baking stone in the center rack and a ceramic dish on the bottom while the bread rises.
- Transfer the rolls to the stone, return the stone to the center rack, and turn the heat down to 375.
- For each of the first 4 minutes baking, toss a dash of water across the bottom of the ceramic dish to create steam.
- The rolls should be medium brown and more than doubled in height within 29-30 minutes.

- Place opened roll onto a clean work surface. In a small bowl, combine olive oil, vinegar, and basil. Drizzle the vinegar mixture on the inside top half of the roll. SONNY'S STEAK HOAGIE

- For the hoagies:
- Preheat frying pan over medium-high heat. Cut the hoagie rolls horizontally to open up and make a pocket. Add the blended oil to the pan and stir in the onions. Put the steak on top of onions and add 1/2-ounce of the butter. Cover the pan for 2 1/2 minutes. The meat should have a cooked appearance on top and rare underneath. Using a fork and spatula separate steak from the onions. When the meat is cooked add the salt, remaining butter, and provolone. Cover to the pan to melt the cheese. Divide the steak mixture among the hoagie rolls and serve. If you like, you can add the optional ingredients to the steak mixture before serving.
HOMEMADE HOAGIE ROLL RECIPE

- In a mixing bowl or bowl of a stand mixer, combine the warm water with the yeast and sugar. Let stand for 5 minutes. Combine the milk, egg, and olive oil in a cup and whisk to blend. Add the milk and egg mixture to the yeast mixture along with the bread flour and salt. Mix by hand or with a dough hook until the dough comes together. Knead by hand or with the dough hook for about 8 minutes, adding more flour or water if necessary. The dough should be firm and smooth but slightly tacky to the touch.
- Grease a large bowl with olive oil .
- Gather the dough into a ball and put in the oiled bowl. Turn to grease all sides of the dough ball. Cover the bowl with plastic wrap and let the dough rise for about 1 1/2 hours or until doubled in volume.
- Continue with the recipe or refrigerate overnight at this point. If you refrigerate overnight, let the dough come up to room temperature before shaping. 1 1/2 to 2 hours should be enough time.
- Line two baking sheets with parchment paper . Sprinkle lightly with cornmeal or semolina flour.
- Divide the dough into 10 portions, roughly 4 ounces each. Shape into 6-inch hoagie roll shapes and arrange on the prepared baking sheet.
- Cover the rolls with a light towel and let stand at room temperature for 1 hour.
- Preheat the oven to 425 F.
- With a baker's lame, sharp knife, or razor, cut a 1/4-inch-deep slit down the tops of the rolls just before they go in the oven.
- Put the rolls in the oven and reduce the temperature to 375 F.
- Bake the rolls for 15 to 18 minutes, rotating the pan once about halfway through the baking time. The rolls will be about 195 F in the center when done. Or check by tapping on the bottom of a roll. It will sound hollow when done.
- Makes about 41 ounces of dough for about 10 sandwich rolls. Note: If you are making kaiser rolls with a kaiser roll stamp, shape the dough portions into balls, then flatten slightly. Press with the stamp firmly, but don't cut through the dough. Arrange the stamped rolls upside-down on the parchment paper. Before baking, turn them right-side-up, brush with egg wash if desired, and bake as above.

GARLIC HOAGIE ROLLS
I found this recipe in the 2010 Taste of Home's " The Best of Country Cooking ", it was sent into them by Patty Ryan of Merrill, Wisconsin. Prep time does not include rising time in bread machine and for second rising. UPDATE: I made this recipe on 4/12/11 and changed a couple of the ingredients to my personal tastes.Instead of 1 teaspoon of of dried chives, 1 1/2 teaspoons were used. And the 1/2 teapoon garlic salt was changed to 1 1 /2 teaspoons of garlic powder was used.The rising time in the machine and the second rise in the oven isn't included in the time to prep. - In bread machine pan,place all the ingredients in order suggested by manufactuter.
- Select the dough cycle setting( check the dough after 5 minutes to see if you might need to add 1 to 2 teaspoons of extra flour or water.).
- When cycle is completed,turn dough onto a lightly floured surface and divide into 9 pieces.
- Shape each into a 4 1/2 inch x 1 1/2 inch roll, and place 4 inches apart on greased baking sheets.
- Cover;let rise in a warm place until doubled, 20 to 30 minutes.
- Bake at 350 degrees for 12 to 15 minutes or until golden brown.
- Remove from pans to wire racks to cool.
SANDWICH ROLLS
I think many people will be surprised at just how simple these homemade rolls are. Besides the super obvious reasons why these are better than the ones from the supermarket, you can make them the exact size and shape you want.

Steps:
- Place yeast and warm water in the bowl of a stand mixer; whisk to mix. Add flour and salt.
- Knead with dough hook until mixture forms a soft, sticky dough ball and easily pulls away from the sides and the hook, about 5 minutes. (If still too sticky, add a bit more flour and knead a few more seconds.) Transfer dough to a work surface and form into a smooth ball. Place dough back in the mixing bowl. Drizzle the dough and sides of bowl a few drops of vegetable oil. Spread a film of oil over the surface of the dough.
- Cover the bowl and transfer to a warm, draft-free place until dough is doubled in size, 60 to 90 minutes.
- Transfer dough to a floured work surface. Form into a rectangle shape and cut into 6 equal pieces. Using your cupped hand and the work surface, roll each section of dough into a smooth round ball. Cover with a clean, dry cloth and let rest 15 minutes.
- Flatten dough balls into 6- or 7-inch long ovals. Starting with a long edge, roll the dough into a cylinder, applying extra pressure to the ends to form pointy tips for a classic French roll shape. Transfer to parchment-lined baking sheets (do not crowd them) and cover with clean dry towels until doubled, about 1 hour.
- Preheat oven to 450 degrees F (230 degrees C). Place a pan of water on the bottom rack.
- With a very sharp knife, score each roll about 1/4 inch deep along one side somewhere between the side and the top. Spritz loaves lightly with water from a spray bottle.
- Bake in preheated oven about 20 minutes. Spritz loaves again and rotate pans for a more even bake. Bake until loaves are golden brown, about 10 more minutes. Transfer to a cooling rack; cool completely before cutting.

The word Hoagie came from the sandwiches that used to get eaten by workers over on a place that was nicknamed "hog island" The workers there would bring crusty rolls with Italian meats and some olive oil and they became known as "hoggies" which eventually morphed into hoagie... Now that I've sounded like a Cliff Claven... the only other thing I have to say is don't make this with a soft roll! It has to be a GOOD crusty Italian Long Roll!
