For a slightly nuttier flavor, use long-grain brown rice.

Number Of Ingredients 7

3 tablespoons extra-virgin olive oil
1 1/2 cups minced onion (from 1 onion)
3 cups long-grain white rice
Coarse salt
4 1/2 cups water
3 cups diced zucchini (from 2 zucchini)
1/2 cup finely chopped mixed fresh herbs, such as flat-leaf parsley, dill, and chervil

Steps:

  • Heat oil in a medium saucepan over medium-high heat. Add onion, and cook, stirring, until translucent, about 5 minutes. Stir in rice and 2 teaspoons salt. Stir rice until coated with oil, then cook 1 minute. Add water, and bring to a boil. Reduce heat, cover, and simmer until water is absorbed, about 16 minutes. Turn off heat. Let rice stand, covered, 10 minutes.
  • Meanwhile, bring a medium pot of water to a boil. Add zucchini, and cook until tender, about 2 minutes. Drain.
  • Add zucchini and herbs to rice, and fluff with a fork.

1/4 cup uncooked long grain rice
1 green onion with top, cut into 1-inch pieces
1 tablespoon butter
1/8 teaspoon each dried tarragon, thyme, basil, parsley flakes, and pepper
1/2 cup chicken broth
Salt to taste, optional

Steps:

  • In a small saucepan, cook rice and onion in butter until onion is tender. Add the seasonings; cook for 1 minute. Add broth and salt if desired; bring to a boil. Cover and simmer for 15 minutes or until liquid is absorbed and rice is tender.

This flavorful herb mix for rice is a great recipe to mix ahead as a side with baked chicken or pork chops. Just increase or decrease the amount for the servings needed. -Arlene Haupt, Madison, Wisconsin

5 tablespoons beef bouillon granules
3 tablespoons dried parsley flakes
2 tablespoons dried minced onion
4 teaspoons dried basil
2 teaspoons dried thyme
1 teaspoon garlic powder
ADDITIONAL INGREDIENTS (for each batch):
2 cups water
1 cup uncooked long grain rice

Steps:

  • In an airtight container, combine the first six ingredients. Store in a cool, dry place for up to 1 year. Yield: 4 batches (about 3/4 cup total). , To prepare rice: In a saucepan, bring water and 3 tablespoons herb mix to a boil. Stir in rice. Reduce heat; cover and simmer for 15 minutes or until rice is tender and liquid is absorbed.

HERBED BASMATI RICE

Number Of Ingredients 8

1 cup uncooked long-grain (white) basmati rice (recommended: Texmati)
1 3/4 cups water
3/4 teaspoon kosher salt
1 tablespoon unsalted butter
2 tablespoons minced fresh curly parsley leaves
1 tablespoon minced fresh dill leaves
1 tablespoon minced fresh scallions, white and green parts
Pinch freshly ground black pepper

Steps:

  • Combine the rice, 1 3/4 cups water, the salt, and butter in a small heavy-bottomed saucepan. Bring to a boil over high heat; reduce the heat to low, stir once, and simmer, covered tightly, for 15 minutes. (I need to pull the pot half off the burner to keep it from boiling over.) Turn off the heat and allow the rice to sit covered for 5 minutes. Add the parsley, dill, scallions, and pepper. Fluff with a fork, and serve warm.

1 tablespoon unsalted butter
3 to 4 scallions, sliced thinly
2 cups long-grain rice
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 cup chopped fresh parsley
1/2 teaspoon lemon zest, optional

Steps:

  • Heat the butter in a medium saucepan over medium heat. Add the scallions and saute for 2 to 3 minutes. Add the rice and stir until the rice is fully coated with butter.
  • Add 3 cups water and bring to a boil. Add the salt and pepper, cover and reduce the heat to a simmer. Cook until the liquid is absorbed and the rice is al dente, 18 to 20 minutes.
  • Remove from the heat; fluff the rice with a fork; and stir in the parsley and the lemon zest, if using.

1 tablespoon butter
2 tablespoons finely chopped shallots
2 tablespoons finely chopped celery
2 tablespoons finely chopped carrots
1 tablespoon finely chopped fresh flat-leaf parsley
2 cups low-sodium chicken stock or broth
2 cups instant rice (recommended: Uncle Ben's)
2 tablespoons combination freshly chopped marjoram, oregano and thyme leaves

Steps:

  • In a medium saucepan over medium heat, melt the butter. Add the shallots, celery, carrots and 1 tablespoon parsley and saute until tender, about 5 minutes. Add the stock and rice and stir to combine. Cover and bring to a boil. Once the mixture comes to a boil, turn off the heat and let sit for 5 minutes.
  • Fluff the rice with a fork and stir in herbs. Transfer to a serving bowl and serve hot.

NUTTY HERBED RICE

2 (8.8-ounce) packages whole grain brown ready rice (recommended: Uncle Ben's)
2 tablespoons butter
1/3 cup chopped nut topping
1/4 cup chopped fresh herbs (parsley, thyme, marjoram, etc.)

Steps:

  • Heat ready rice in microwave per package directions; set aside.
  • In a medium skillet, over medium heat, melt butter. Add nuts and toast for 1 to 2 minutes. Stir in rice and herbs. Serve immediately.

  • TO PREPARE RICE MIX: YOU WILL NEED FOR EACH SERVING; 1/4 CUP RICE MIX, 2/3 CUP WATER, AND 1 TEASPOON BUTTER. BRING WATER AND BUTTER TO BOIL, ADD RICE MIX AND REDUCE HEAT. SIMMER 20 MINUTES. REMOVE FROM HEAT AND LET STAND 5 MINUTES. FLUFF WITH A FORK.

1 cup long-grain white rice
1 small onion, chopped
3 sprigs fresh thyme
Kosher salt and freshly ground black pepper
2 cups chicken stock
2 tablespoons fresh flat-leaf parsley, chopped

Steps:

  • Melt the butter in a medium saucepot over medium heat. Add the rice, onion and thyme and saute until the onion is softened, 4 to 5 minutes. Season with salt and pepper. Pour the chicken stock over the rice, cover and cook over medium-low until tender and fluffy, about 15 minutes. Fluff with a fork, fold in the parsley and let stand 5 minutes before serving.

2 cups long grain rice, washed and drained
1 tablespoon butter or 1 tablespoon margarine
1 tablespoon oil
1 big onion, sliced
2 cloves garlic, chopped
3 cups water
1 lemongrass, smashed
2 pandan leaves, shredded and knotted
50 g celery, chopped
1/2 cup raisins
5 kaffir lime leaves, finely shredded (limau purut)
1/2 teaspoon salt, to taste
1 teaspoon instant chicken bouillon granules
1 teaspoon sugar, to taste
2 teaspoons fish sauce (Nampla)
1 dash pepper
chopped spring onion
chopped coriander
toasted peanuts

Steps:

  • Heat butter or margarine and oil in a wok.
  • Fry garlic and onions.
  • Add lemon grass and pandan leaves.
  • Stir in rice, celery and seasoning.
  • Mix well to combine.
  • Dish rice into an electric rice cooker.
  • Cook rice as usual.
  • When rice is almost cooked and dry, add all the raisins.
  • Stir well to mix.
  • Stand rice in cooker for 10 to 15 minutes.
  • Dish up rice and mix in kaffir lime leaves.
  • Divide rice into equal portions and serve on plates.

1/2 cup parmesan cheese
1/3 cup dry breadcrumbs

  • Beat egg and stir in rice, seasonings and cheese.
  • Chill for an hour.
  • Shape into balls and roll in bread crumbs.
  • Deep fry until golden.
  • You can make ahead and store in fridge for 12 hours. Just reheat in a 350 oven.
