2 tablespoons ground duck meat
1 cup diced duck meat
2 tablespoons ground duck fat, plus more for cooking sausage
1/4 cup flour (add enough hot water to make a small pastry dough, about 2 tablespoons)
2 tablespoons port wine
1 teaspoon fennel seeds
Salt and pepper
Sugar
1 egg white
1 pound foie gras
Duck skin
8 pounds duck fat

Steps:

  • Add all ingredients except for the foie gras into a large bowl. Mix well. Roll out and add the foie gras to the center. Roll into a sausage. Cover using the duck skin for casing. Tie with butcher?s string to secure. Confit the duck sausage by cooking in duck fat in a very slow heat until cooked (about 25 minutes). Take out and roast in a roasting pan, in a preheated 350 degree oven, until golden brown and crispy.

2 bell peppers, any color, quartered and seeds removed
1 large onion, cut into 1/4-inch-thick slices
Olive oil
Salt and pepper
1/2 cup mayonnaise
1/2 cup spicy mustard
Lettuce leaves
Tomato, sliced
4 6-inch sandwich rolls

Steps:

  • Making sausage at home requires no special equipment and minimal culinary skills. The only gadget required is a food processor. If you don't have one, however, you can simply use a sharp chef's knife to turn whole waterfowl breast fillets into minced meat for sausage making.

1 ½ cups peeled and grated Granny Smith apple
⅔ cup grated onion
1 pound ground goose breast
1 cup fresh bread crumbs
2 egg whites
1 tablespoon dried parsley
2 teaspoons poultry seasoning
½ teaspoon salt
½ teaspoon dried sage
½ teaspoon freshly ground black pepper
¼ teaspoon crushed red pepper flakes

Steps:

  • Heat oil in a skillet over medium heat. Cook apple and onion in the hot oil until soft, 10 to 15 minutes. Remove from heat and place into a mixing bowl. Let cool completely, 10 to 15 minutes.
  • Combine cooled apple mixture, goose, bread crumbs, egg whites, parsley, poultry seasoning, salt, sage, black pepper, and red pepper flakes in the mixing bowl, stirring until evenly combined.
  • Form sausage mixture into patties.
  • Heat a large skillet over medium-high heat. Cook sausage patties in the hot skillet until browned and no longer pink, 5 to 7 minutes.

  • Dice meat and fat into about 1 inch chunks. Toss in salt, pepper, rosemary, garlic and marjoram. Mix well.
  • Make sure all meat and fat is cold. You can even keep it in the freezer until it get a little bit frosty. When it is 40°F or colder (but not a sold rock), grind through the small die of your grinder. If it is hot out, or really if your kitchen is warmer that 68°F or so, grind into a bowl that is set in another bowl full of ice. The cold is critical to bind the meat and fat nicely. If it gets too warm, it will break and feel crumbly when you eat it, which isn’t very nice.
  • Put the meat mixture into the bowl of a stand mixer. Add the wine and mix on the lowest setting of your mixer for 1 minute to 90 seconds. You can do it by hand with a wooden spoon, too. You want it to look like a paste.

  • Get out about 15 feet of hog casings and soak them in warm water. If you don’t trust your source, run water through them to check for punctures or weak spots.
  • Make sure all your equipment is cold; freeze your grinder’s grinding plate and blades, and the bowl you will put the meat into for 30 minutes to an hour. Do the same for the meat and fat. When everything’s nice and cold, mix the meat and fat with the salt and all the dry spices.
  • Grind it all through a very coarse plate; I use a 10 mm plate. Test the temperature of the mixture, and if it’s 35°F or colder, go ahead and grind it all again through a coarser die, like a 6 mm or thereabouts. If it’s warmer, put the mix back in the freezer to chill until it hits 35°F or cooler. (if you don't have a very coarse plate, grind half the mixture a second time through the finer, typically 4.5 mm plate. It's important to grind the meat twice.)
  • Once the sausage has been ground twice, test the temperature again to make sure it’s cold. I prefer to chill the mix down to 28°F to 32°F for this next stage. Chill the mix and when it’s cold enough, take it out and add the beer and water. Now, mix and knead the mixture in a big bin or bowl with your hands for a solid 2 minutes — your hands will ache with cold, which is good. You want everything to almost emulsify.
