Steps:
- On plate, combine flour, salt and pepper; set aside.
- Cut meat into bite-size cubes, then roll in flour mixture to coat. Reserve flour mixture. Heat vegetable oil in saucepan set on stove top over medium-low heat.
- Add meat and brown, stirring occasionally with mixing spoon, then sprinkle in remaining flour mixture.
- Add onion; cook until limp.
- Add water, garlic powder, thyme and coriander; bring to boil.
- Cover and cook over low heat for about an hour.
- After the hour is up, add the potatoes, carrots and additional water as needed.
- Cover and cook 10 minutes.
- dd peas and continue to cook about 5 minutes or until vegetables are tender.
- Stir in evaporated milk. Heat through, but do not boil.
- To serve, pour into hollowed-out pumpkin shell which has been decorated to look like a spooky jack-o'-lantern by using a black marker pen.

ONE POT COWBOY TRAIL STEW
This recipe is used in Branson, MO at the Christmas on the Trail show at Shepherd of the Hills. To me it's kind of a cross between chili and stew. And, although I'm not usually a big fan of chili I love this! (I've guessed on servings.) I'll admit... I don't always wait 4 hours. It's good right away, too!

- Brown meat, then add bacon.
- Add onion and cook until soft. Drain.
- Put mixture into a crockpot or large stewpot.
- Add the rest of the ingredients.Stir well.
- Simmer four hours or more. The longer the better.

Steps:
- Cut meat into 1-in cubes and brown in butter and oil over medium heat using a large pot. Remove.
- Sauté mushrooms for 3-4 minutes. Remove. Sauté onion and garlic 3-4 minutes. Add tomatoes, parsley and seasonings. Simmer 5-19 minutes.
- Add wine, broth, and cheese. Simmer 5 minutes longer. Stir in meat and mushrooms.
- Cover and cook for 1 hour. Add a little water or broth if needed.
- Good served with either rice cooked in broth or oven-roasted potatoes, broccoli and crisp rolls.

Steps:
- Combine the beef, spinach (very well drained), bread crumbs, egg, salt and pepper.
- Shape into 1-inch balls.
- Heat oil in Dutch oven; add meatballs.
- Brown on all sides, rolling them around.
- Remove and reserve.
- Add the onion to the pot.
- Cook, stirring until soft.
- Stir in the broth, tomatoes, with their liquid (break up with spoon), beans, oregano and basil.
- Cover, simmer for 10 minutes.
- Add carrots and celery, simmer for 10 minutes or until vegetables are tender.
- Add tortellini. and simmer for 5 minutes.
- Return meatballs to the stew and simmer for 10 minutes.
- Serve steaming hot with Parmesan cheese on top.
