HERBED CRANBERRY CHICKEN SAUTE



Herbed Cranberry Chicken Saute image

Put the leftover cranberry sauce from the holiday dinner to yummy use in this speedy saute. And by sprinkling "stuffing" seasonings over the chicken, you've added yet another holiday taste. Please don't forget that cranberries are loaded with antioxidants.

Number Of Ingredients 20

2 tsp butter
or
2 tsp canola oil
4 boneless, skinless chicken breast(s)
or
8 boneless, skinless chicken thighs
½ cup chicken broth
or
½ cup red wine
or
½ cup orange juice
½ cup cranberry sauce, whole berry
1 tsp sage, dried
or
1 tsp poultry seasoning
½ tsp thyme, dried
½ tsp hot sauce, (optional garnish)
parsley, fresh, chopped, for garnish
or
green onion(s), fresh, chopped, for garnish

Steps:

  • Melt butter in a large wide frying pan set over medium-high heat. Add the chicken and cook until golden, from 3 to 4 minutes a side. Reduce temperature if it is turning dark brown.
  • Pour the broth over the chicken and reduce the heat to medium-low. Cover and cook 4 minutes for breasts and 3 minutes for thighs. Add the cranberry sauce to the broth. Evenly sprinkle chicken and sauce with sage and thyme. If using hot sauce, add to the sauce. Stir sauce as best you can. Then turn the chicken.
  • Continue cooking, adjusting heat so mixture barely simmers and cook until chicken feels springy when pressed and meat thermometer reaches 165°F (74°C), about 4 to 5 minutes. Remove chicken to a plate and increase the heat to medium-high. Boil sauce gently, stirring constantly, until as thick as you like. Pour over chicken and sprinkle with parsley or green onions.

1 broiler/fryer chicken (3 to 4 pounds), cut up
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons butter
1/2 cup diced onion
1/2 cup diced celery
1 can (14 ounces) whole-berry cranberry sauce
1 cup bottled barbecue sauce

Steps:

  • Sprinkle chicken with salt and pepper; brown in a skillet in butter. Remove the chicken to a greased 13-in. x 9-in. baking pan. In the drippings, saute onion and celery until tender. Add cranberry sauce and barbecue sauce; mix well. Pour over chicken. Bake, uncovered, at 350° for 1-1/2 hours, basting every 15 minutes.

  • Combine the thyme, pepper, salt, and minced garlic together. Toss your chicken thighs in this mixture.
  • Preheat your oven to 400 degrees Fahrenheit. In a large skillet, heat the butter over medium-high heat. Once melted and very hot, carefully place the chicken thighs in the pan, one at a time, skin side down. After adding each thigh, wait 10 seconds or so before adding the next thigh - this will make sure the butter stays hot enough to sear the thighs. In order to get super crispy skin, it’s very important to not move the thighs around after you place them in the pan.
  • Allow the thighs to sear skin side down for 7-10 minutes (you can reduce the heat down to medium if the butter starts to burn). Carefully attempt to flip one of the thighs over using a pair of tongs. If the chicken flips over easily, the skin is crispy enough and you can flip them over. If the skin is sticking to the pan, wait an additional minute and try again. Repeat with the remaining thighs until they are all skin side up.
  • Scatter the chopped garlic and half of the chopped rosemary all over the chicken in the pan. Continue searing on the other side for an additional 2-3 minutes. Sprinkle the cranberries around the chicken. Combine the chicken broth, coconut aminos, balsamic vinegar, honey and lemon juice and pour the mixture into the pan around the thighs. Top the chicken with the remaining chopped rosemary and place the rosemary sprigs in the pan.
